2 tablespoons olive oil
1 teaspoon butter
3 large potatoes, sliced lengthwise into 1/2-inch circles and cut into 1/2-inch strips
¼ teaspoon coarse sea salt
¼ teaspoon cracked black pepper

Steps:

  • Heat olive oil and butter in a skillet over medium heat. Cook and stir potato strips in the hot oil-butter until browned on all sides, 20 to 25 minutes. Transfer fries to a paper towel-lined plate; season with salt and pepper.

3 medium russet potatoes, cubed
3 tablespoons butter or margarine
salt and pepper to taste

Steps:

  • Rinse potato cubes with cold water, and drain well. Melt butter or margarine in a large skillet over medium heat. Place potatoes in the skillet, and stir to coat with butter. Season with salt and pepper. Cover with a lid, and cook for 10 minutes. Remove the lid, and cook for another 10 minutes, turning frequently until brown and crisp on all sides..

I've tried many recipes to oven bake french fries. Most of have been good.......but to me there's just something special about fries that are actually fried. This is a simple and basic way to fry them on the stove top.

1 large russet potato (about 8 oz)
4 tablespoon(s) oil
salt, optional

Steps:

  • Cut the potato into 1/2-inch slices. (You can peel it or not. I don't usually peel mine). Cut each slice lengthwise into 1/2-inch strips.
  • Heat the oil in a large frying pan on medium-high heat. After 1 minute, carefully put 1 potato strip in the pan. If it immediately begins to sizzle, add the rest of the potatoes. If it doesn't sizzle, wait another 30 seconds and try a second strip. If the oil isn't hot enough, the potatoes will stick to the bottom of the pan.
  • Fry for 1 minute and turn them over with a spatula. Continue turning them every minute or so until they have become golden brown. If they start to burn, turn the heat down to medium.
  • Drain the fries on paper towels, sprinkle on some salt and serve.

These fries have savory, crisp, dry edges, and they're satisfying and somewhat addictive, just like regular fries. I use a mix of regular and sweet potatoes for this. Choose waxy potatoes, like new potatoes or red potatoes, which have a lower glycemic index than starchy russets.

1 pound waxy potatoes, such as red potatoes
1 pound sweet potatoes, cut in half crosswise
3 tablespoons extra virgin olive oil
Kosher salt or coarse sea salt

Steps:

  • Preheat the oven to 500 degrees. Line a sheet pan with aluminum foil, shiny side up. Place in the oven while you prepare the potatoes.
  • Cut the potatoes into wedges that are 1/4 inch to 1/2 inch thick at the thickest point and toss with the olive oil and salt.
  • Remove the hot pan from the oven, and add the potatoes to the pan in an even layer. They should sizzle. Return to the oven, and lower the heat to 450 degrees. Roast 25 minutes or until tender.
  • Remove the pan from the oven, and loosen the potatoes from the foil using an offset spatula. Return to the oven and cook for another five minutes. Serve at once, seasoned with more salt if desired.
