1 1/3 cup whole wheat flour
1 cup all purpose flour
1/2 teaspoon sugar
1 teaspoon salt
2.5 teaspoons dry yeast
1 tablespoon butter
3/4 cup buttermilk, warm
1/3 cup honey
1/4 cup mixed grains (I use Bob Red Mill's 10 grain cereal)
Egg white
Water

Steps:

  • Mix 3/4 cup wheat flour, 3/4 cup all-purpose flour, sugar, salt, and yeast in a bowl.
  • Mix in butter and honey.
  • Gradually add the buttermilk to dry ingredients and beat with a mixer for about two minutes.
  • Add remaining flour until your dough is no longer sticky.
  • Knead in the mixed grains.
  • Knead for about 10 minutes until elastic and smooth.
  • Set dough in a warm spot for about about 60-90 minutes.
  • Divide dough in half and roll each half into a 7 inch x 5 inch rectangle.
  • Roll up tightly starting at the wide side and pinch the seam.
  • Let dough rise until doubled
  • Preheat oven to 375 degrees.
  • Make 3-4 slits in the top of each loaf of bread.
  • Bake for 25-35 minutes.
  • Remove bread and brush each loaf with egg white + water mixture.
  • Place back in the oven and bake for about 10-15 minutes.

2 lb. lean ground beef
1 onion, chopped
1 cup fresh bread crumbs
1/3 cup A.1. Original Sauce
2 eggs, beaten
1/2 tsp. ground black pepper

Steps:

  • Heat oven to 350°F.
  • Reserve half the tomato sauce. Mix remaining tomato sauce with remaining ingredients just until blended.
  • Press meat mixture into 9x5-inch loaf pan sprayed with cooking spray.
  • Bake 1 hour or until done (160ºF), draining fat and topping meatloaf with reserved sauce after 50 min.

1 large soft pretzel, cut into small pieces
2/3 cup wheat beer
1 tablespoon olive oil
1 large sweet onion, diced
1 small carrot, shredded
1 small parsnip, shredded
1 stalk celery, diced
3 garlic cloves, minced
1 cup baby spinach leaves, chopped
1 tablespoon fresh thyme leave
1 tablespoon tomato paste
2 lbs ground sirloin
1 egg, beaten
1 egg yolk, beaten
1 tablespoon Worcestershire sauce
1 teaspoon prepared horseradish (optional)
1/4 teaspoon smoked paprika
1/2 teaspoon salt
pepper
1/4 cup steak sauce

Steps:

  • Heat the oven to 350°F and line a cookie sheet with parchment paper or foil.
  • Combine the pretzel pieces and beer in a small bowl and soak 30 minutes, occasionally stirring until the mixture is pasty.
  • Meanwhile, heat the olive oil in a deep frying pan over medium heat.
  • Add the onions, carrots, parsnips and celery and cook until the onions soften, about 8 minutes.
  • Add the garlic, spinach, thyme and tomato paste, stirring until spinach is wilted and mixture is coated in the paste. Remove from heat and set aside.
  • In a large mixing bowl, combine the sirloin, egg, egg yolk, Worcestershire sauce, horseradish (if using), paprika, salt, pepper, pretzel mixture (along with any remaining liquid), and vegetable mixture.
  • Fold the ingredients together with your hand until just combined.
  • Transfer the meatloaf mixture to the baking sheet and shape into a loaf roughly 9 x 4 inches.
  • Brush evenly with steak sauce.
  • Bake the meatloaf for 1 hour, until the middle of the loaf registers at least 155°F on an instant-read thermometer.
  • Cool 15 minutes before serving.

2 eggs
1 cup breadcrumbs
1 cup grated cheddar cheese
1 cup very thinly cut steak (filet mignon or top round)
1 teaspoon jamaican jerk spice
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1 cup thinly sliced mushroom
1/2 cup chopped onion
2 cloves garlic
1 tablespoon butter
2 tablespoons A.1. Original Sauce

Steps:

  • In a mixing bowl combine beef, eggs, bread crumbs, cheese, steak, Jamaican Blend, Salt, Pepper, worcestershire sauce and ketchup and mix together thoroughly.
  • Refrigerate 1 hour.
  • Saute mushrooms, onions, and garlic together with butter about 10 minutes over medium high heat.
  • Add saute pan contents to previously prepared ingredients and mix together thoroughly.
  • Mold meatloaf into a bread pan, smoothing top.
  • Cover with a light coating of A1 sauce.
  • Bake at 375 degrees 30-45 minutes until done.
