3 tablespoons all-purpose flour
1 teaspoon salt-free seasoning blend
1/2 teaspoon pepper
2 pounds boneless round steak, cut into 1/2-inch cubes
2 tablespoons vegetable oil
1 cup water
1/2 cup low-sodium beef broth
1 garlic clove, minced
1 tablespoon dried minced onion
1/2 teaspoon dried thyme
1/4 teaspoon dried rosemary, crushed
2 cups sliced fresh mushrooms
2 cups frozen peas, thawed
3 cups mashed potatoes (with added milk)
1 tablespoon butter, melted

Steps:

  • Preheat oven to 350°. In a large resealable plastic bag, combine flour, seasoning blend and pepper; add beef cubes and shake to coat. In a skillet over medium heat, brown beef in oil. Place beef and drippings in a greased shallow 2-1/2-qt. baking dish. , To skillet, add water, broth, garlic, onion, thyme and rosemary; bring to a boil. Simmer, uncovered, 5 minutes; stir in mushrooms. Pour over meat; mix well. , Cover and bake 1-1/2 to 1-3/4 hours or until beef is tender. Sprinkle peas over meat. Spread potatoes evenly over top. Brush with butter; sprinkle with paprika. Bake 15-20 minutes longer.

1 1/2 lbs lean ground beef
2 bell peppers
1/2 yellow onion
1 garlic clove
1 teaspoon seasoning salt
4 slices provolone cheese
4 large eggs
1/4 cup heavy cream
1 teaspoon hot sauce
1 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350 degrees. Spray a 9x9 baking dish with non-stick spray.
  • Dice the peppers and onions into bite-sized pieces. Mince the garlic.
  • Add the ground beef to a skillet and cook over medium heat, crumbling as it cooks.
  • When beef is broken apart, but still pink, add the peppers, onion, garlic, and seasoned salt. Continue cooking, stirring often, until beef is cooked through and vegetables have softened a bit.
  • Drain grease from the skillet and pour mixture into the prepared baking dish.
  • Tear the cheese into small pieces and place over the beef mixture.
  • Add the eggs, cream, hot sauce, and Worcestershire sauce to a mixing bowl and whisk well to combine.
  • Pour the egg mixture over the beef and place the dish in the oven. Bake for 35 minutes or until the eggs are set.
  • Let sit 5 minutes before slicing and serving.

¾ loaf Italian bread, cut into 1-inch cubes
5 tablespoons butter
¼ cup flour
1 (12 fluid ounce) can or bottle beer
2 teaspoons hot pepper sauce
1 ½ teaspoons ground black pepper

1 teaspoon dried parsley
1 teaspoon onion powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat 1 tablespoon olive oil in a skillet over medium-low heat; add the bell pepper and onion to the skillet; season with 1/2 teaspoon salt, 1/2 teaspoon garlic powder, and 1/4 teaspoon pepper and cook until soft, about 20 minutes; set aside.
  • Pour 1 tablespoon olive oil into the skillet and raise the heat to medium; add the sliced steak to the hot oil until; season with 1/2 teaspoon salt, 1/2 teaspoon garlic powder, and 1/4 teaspoon pepper and cook until no longer pink, about 5 minutes. Remove from heat immediately.
  • Arrange the bread cubes in the bottom of a 9x13 dish. Layer the steak on the bread and then layer the pepper and onion mixture atop the steak; set aside.
  • Melt the butter in a saucepan. Whisk in the flour to make a paste. Pour in the beer, whisking continually until there are no lumps. 1 teaspoon freshly ground black pepper
1 tablespoon mustard powder
2 lbs sirloin steaks
3 tablespoons vegetable oil
2 cups sliced mushrooms
1 onion, peeled and sliced
1 cup red wine
1/4 cup packed brown sugar
2 teaspoons Worcestershire sauce
1 teaspoon garlic powder
1 (19 ounce) can tomatoes, undrained

Steps:

  • Preheat oven to 325F degrees.
  • In a small dish, combine flour, salt, pepper and dry mustard; transfer to a plastic bag.
  • Cut steak into strips, larger than for stir fry, and place in a large bowl; pour just enough of the red wine onto meat to moisten; reserve remaining wine.
  • In a large skillet over medium-high heat, heat oil.
  • Shake steak strips in flour mixture, then brown floured meat in hot oil; place browned strips in a large casserole dish; you may need more oil to brown all your beef.
  • When done, pour any meat juice/red wine left in bowl steak was in onto browned meat.
  • Add remaining ingredients, including reserved red wine, to casserole and stir to combine.
  • Cover tightly and bake for 1-1/2 to 2 hours, or until steak is tender.

Without the green bean addition, this tastes very much like the famous cheesy hashbrown casserole everyone seems to like so well. If you add the green beans and onions, it tastes a lot like the holiday green bean casserole. The pork steak is a delicious blend of flavors either way! I have a VERY PICKY 13 year old son who hates mushrooms or mushroom soup, and won't even eat green bean casserole, but LOVED this dish because he didn't realize it had mushroom soup in it. He even asked for seconds, then wanted the left-overs the next day. Hubby said this was one of the BEST casseroles I had ever made. No leftovers for the son, as hubby had already eaten it for breakfast the next morning! If you have never cooked with pork steak before, as I hadn't till I tried this recipe, try this. You will be surprised how EASY and TASTY this is! FIVE STARS for my family! Quick to throw together after work... about 15 minutes.... then relax for a little over an hour, and supper is ready!!! My pork steak was even frozen when I first found this recipe, and so I defrosted the meat package a little bit in microwave and then sliced the meat up while still half frozen. Worked well. I will make this again as I can keep the ingredients on hand, and even if the meat is frozen, I can still make it quickly.

20 ounces frozen hash browns
16 ounces sour cream
10 3/4 ounces cream of mushroom soup

Steps:

  • Cut pork steak into bite-sized strips or larger as desired, and coat with flour, salt and pepper in a large bowl. Heat oil in large skillet or dutch oven and brown meat. Saute onions with meat half way through if you want onions added. (Don't have to cook meat throughly, as it will finish cooking in oven.) Combine in saucepan sour cream, mushroom soup, mushrooms, and half of cheese. Stir and heat mixture, do not boil. Place hash browns in bottom of Pam-sprayed casserole dish or 9 x 13 inch cake pan. Steps:

  • Heat oven to 350°F. In medium bowl, mix flour, salt, paprika and pepper. Add steak; toss to coat. In 12-inch skillet, heat 1 tablespoon of the oil over medium-high heat. Add steak, reserving remaining flour mixture; brown steak on all sides. Spoon into ungreased 2 1/2-quart casserole.

1 (10 ounce) package frozen cauliflower and broccoli

1 (10.75 ounce) can condensed cream of celery soup
1 cup sour cream
2 teaspoons prepared yellow mustard

¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Heat oil in a heavy oven-proof skillet over medium-high heat. Add ham and cook until browned all over, about 3 minutes per side. Remove from heat and cut ham into 4 serving pieces.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower and broccoli, cover, and steam until tender, 2 to 6 minutes.
  • Squeeze the pouch of wild rice mix to separate the rice. Combine rice and 2 tablespoons water in the skillet over medium heat. Cook and stir until rice is thoroughly heated, about 2 minutes. Spread rice evenly over the skillet. Cover with the cauliflower and broccoli. Layer the ham steak, Cheddar cheese, and mushrooms on top.
  • Blend celery soup, sour cream, mustard, and curry powder together in a bowl. Pour over the cheese and mushroom layers. Sprinkle with Parmesan cheese.

2 lbs beef cube steaks
cooking oil
2 (10 1/2 ounce) cans cream of mushroom soup
equal parts water
1 tablespoon kikkomans soy sauce
1 tablespoon Lea & Perrins Worcestershire Sauce
1 -2 onion, sliced in discs 1/2 inch thick
flour
salt
pepper
garlic powder

Steps:

  • Heat about 1/2 inch of cooking oil in cast iron skillet. Bring to about 350 degrees.
  • Preheat oven to 375 degrees
  • Cut large cube steak pieces into fist size pieces about 4x5". Season both sides with salt, pepper and garlic powder. Dredge all pieces in about 2 cups of white flour (all purpose or self rising). Take a large zip loc or paper bag and put flour in it. Put a few pieces of the steak in at a time and shake to thoroughly coat. Shake off excess.
  • Place a few pieces in the heated oil at a time, don't crowd. Fry for about 5 minutes each side until dark golden brown. Drain on paper towels. Repeat until all steak pieces are fried.
  • In large casserole empty both soup cans. Add two cans of water or to desired consistency and whisk together. Add soy and worcestireshire sauce and combine. Place all fried steak pieces in casserole submerging in the soup. On top, place all sliced onion pieces. Cover casserole and place in oven. Cook for about 1 to 2 hours until steak is tender, onions are cooked and gravy is bubbling.
  • Serve with white cooked rice.
  • Broccoli and corn on the cob is good with this dish. Reheated leftovers are even better.

PORK STEAK CASSEROLE

I recieved this reipe from my daughter several years ago and have made it often. It makes a good "gravy" to serve over rice or noodles. It is sooo tender. It can be cooked in the oven or is a good crockpot recipe.

1 1/2 lb pork steak, fat trimmed
2 Tbsp oil
14 oz can mushrooms, drained
8 oz can tomato sauce, rinse out can with water and use the water in the mixture
3 Tbsp brown sugar
1 1/2 Tbsp apple cider vinegar
2 Tbsp worcestershire sauce
salt and pepper to taste
rice or noodles
1 onion, chopped or sliced

Steps:

  • 1. Preheat oven to 350º. Place oil in skillet and heat. Brown pork steak. Mix tomato sauce, onion, mushrooms, brown sugar, vinegar, worcestershire, salt and pepper in small bowl. Transfer pork steak to baking dish with a lid. (I use a 3" deep cast iron pot with a lid.) Pour tomato sauce mixture over. During baking, if mixture becomes too thick, add some more water, about 1/2 cup or so. Bake about 1 1/2 hours or until meat is tender. Serve over rice or noodles.

4 -5 cube steaks
1 (8 ounce) can mushroom soup
1 (8 ounce) can milk
3 cups cooked rice
salt & pepper

Steps:

  • Heat oven to 350°.
  • Boil rice, drain, and rinse with cool water.
  • Fry cubed steak in frying pan, lay on paper towel or towel to absorb grease. when cooled cut into bite-size pieces.
  • Mix soup and milk in pot mix until smooth mixture.
  • Pour rice into bottom of casserole dish, Combine with 1/4 of mushroom soup mix, and mix together, spread evenly over bottom of dish.
  • Add cut cubed steak on top of rice mixture. Pour remaining soup over this and bake.

Super cheesy, stick to your ribs, definitely NOT a diet dish. Fairly quick to make...kids LOVE it. My b/f came up with this one night when all we had in the freezer were some minute/sandwich steaks. I have 30 minutes for prep time but I've seen him toss this together in half that time. The kids don't like chopped green peppers but I think they would be great in this dish. Also great for covered dish suppers.

1 lb frozen sandwich minute steaks, broken into pieces (approx 16 steaks)
1 (12 ounce) bag wide egg noodles
1 (8 ounce) bag shredded mild cheddar cheese
1 (12 ounce) bag shredded mozzarella cheese
1/2 medium onion, roughly chopped
1 envelope onion soup mix
1 (14 ounce) bottle ketchup (or approx 2 cups)
1 teaspoon dried basil
1 teaspoon garlic powder (not garlic salt)
6 tablespoons butter
1 teaspoon dried Italian seasoning

Steps:

  • Boil noodles& drain.
  • Set aside.
  • In large skillet brown steaks& onion together.
  • Drain off excess fat.
  • Add ketchup, onion soup mix, basil& garlic powder.
  • Simmer for 5 minutes, mixing occasionally.
  • Mix noodles& steak mixture together.
  • In 13x9 casserole dish (or any large casserole dish), layer 1/2 mixture in bottom.
  • Add cheddar cheese and dot this layer w/half the butter.
  • Add the rest of the mixture& top with the butter& mozzarella cheese.
  • Sprinkle w/Italian seasoning.
  • Bake uncovered@ 375 for 30 minutes.

1-2 lb round steak
4 large carrots, sliced and peeled
3 large potatoes, sliced thin and peeled
1 pkg dry onion soup mix
1-1/2 c water
1 Tbsp worcestershire sauce
1 Tbsp steak sauce
1/2 c red wine (if not using, use 2 cups water instead)
flour, cooking oil

Steps:

  • 1. Heat oven to 350 degrees.
  • 2. Pound round steak w/ meat mallet until tenderized & flattened. Salt & pepper. Coat w/ flour. Fry until browned on both sides in cooking oil in a Dutch Oven. (If there's excess grease in the Oven, get rid of that. If you don't use too much oil, it shouldn't be a problem.)
  • 3. Lay potatoes & carrots on top of steak.
  • 4. Whisk water, steak sauces, onion soup, wine, until well blended. Pour over the main ingredients. Cover and bake for 2 - 2.5 hours at 350 degrees. Or add to crockpot and cook on low for 6/7 hours or high on 3/4. When it's done, there will be a lovely sauce and the meat will flake with a fork. Enjoy!

1 lb ground sirloin
1 1/2 lbs pasta (any variation on macaroni, ziti, egg noodles, etc. will do)
2 blocks provolone cheese (can use cheddar if you don't like provolone)
1 pint light cream
1 yellow pepper
1 green pepper
1 large white onion
2 garlic cloves
1/4 cup butter

Steps:

  • Prep: chop onions, peppers, and garlic.
  • shred the cheese, set aside 1/4
  • Boil the pasta until just al dente.
  • In a separate pot, pour the cream and whisk in 3/4 of the cheese until smooth.
  • In a large skillet, brown the ground sirloin and add the onions, peppers, and garlic.
  • In an oven safe, large baking dish, combine the pasta, cheese sauce, and ground sirloin and vegetables.
  • Cover with the rest of the cheese and top with pieces of butter.
  • Let bake at 400 degrees until cheese is melted and light brown.
