Shit On A Shingle is the ultimate comfort meal that's fast and inexpensive. Also called SOS, it's a classic American military dish made with creamed chipped beef, and served over toast. This is a healthier version with lighter creamy white sauce. This recipe makes enough for 1 person for lunch or light dinner.

8 oz dried beef *
4 tablespoons butter (unsalted)
1/4 cup all purpose flour
2 ½ cup milk
freshly ground black pepper (to taste)

Steps:

  • Chop the dried beef into bite size pieces.
  • Melt butter in a saucepan or skillet over medium-low heat.
  • Once melted, add in the flour. Whisk constantly for 2-3 minutes until completely combined and the flour is cooked.
  • Add ground pepper and milk. Cook until smooth and creamy.
  • Add the chopped beef pieces and simmer for 3-5 minutes. If your white sauce is getting too thick, you can add extra milk (1/4 cup at a time). Cook until it reaches your desired consistency.
  • Remove from the heat and serve over toast.

What can I say... It is what it is. I'm sure almost everyone has had this super easy, super delicious dish before. It really, truly is a favorite of mine. I just felt the urge to post my recipe after having this for lunch today. And who knows, there may be a newly independent person (college student) that would like to find such an easy (and cheap) recipe. I use my own white sauce recipe when I make it. I've included a link on how to make my Recipe #514038 as well, but you can use your own preferred bechamel, if you so choose. Enjoy! *Note: Prep and cook times do not reflect the making of the bechamel / white sauce

2 cups bechamel sauce (your favorite, mine is listed below)
4 slices bread, toasted

Also called "Shit on Shingles". We didn't have a lot of money when I was a kid and this was cheep and easy for mom to make! She adds sweet peas so we would get out veggies all in one. And the cheese gives jsut the right amount of salty to go witht he creamy milk!

Number Of Ingredients 7

4 cups milk (2% or whole work best)
2 (3 ounce) packages dried beef
1 (15 ounce) can sweet baby peas (sometimes called petite peas)
2 tablespoons cornstarch
1/2 cup milk
6 slices cheese (any kind, I prefer Velveeta)
6 slices toast (can use more, depends on how much sauce you use on each)

Steps:

  • Warm milk into a 3 qt (or larger) pot over low heat.
  • Chop beef into 1/2 inch pieces and add to milk.
  • Add can of peas to milk.
  • Mix remaining milk and cornstarch (DO NOT ADD YET)
  • Warm them until milk starts boiling then add milk and cornstarch mix to thicken.
  • Toast Slices of bread and top with a slice of cheese and sauce!
  • Enjoy!

My mom used to make this recipe. It can also be made with 3/4 pound browned, drained hamburger. We called it SOS: Same Ole Stuff. Great comfort food! Either recipe is easy to make and tastes great with a cold beer. Serve over toast.

2 tablespoons butter
2 tablespoons all-purpose flour
1 ½ cups warm milk
1 (8 ounce) jar dried beef
1 pinch cayenne pepper

Steps:

  • In a medium saucepan over low heat, melt butter. Whisk in flour all at once to form a roux. Whisk in milk, a little at a time, increase heat to medium-high, and cook, stirring, until thickened. Bring to a boil, stir in beef and cayenne, heat through and serve over toast.
