ONE POT CREAMY CHICKEN AND ASPARAGUS CASSEROLE



One Pot Creamy Chicken and Asparagus Casserole image

Number Of Ingredients 15

1 pound boneless skinless chicken breasts, cut into bite sized pieces
Kosher salt and fresh ground black pepper to taste
1/8 teaspoon cayenne pepper
2 teaspoons olive oil
1/2 of a yellow onion, diced
1 clove of garlic, grated or minced
2 cups sliced cremini mushrooms
1 1/2 cups chopped asparagus, cut approximately 1 inch in length
2 tablespoons flour
3/4 cup low sodium chicken broth
3/4 cup unsweetened almond milk or milk of choice
1 ounce low fat cream cheese, softened
1/2 cup plain non-fat Greek yogurt
1/2 cup shredded gruyere cheese
1/3 cup shredded sharp cheddar cheese

Steps:

  • Preheat oven to broil. Season the cut chicken with salt, pepper and cayenne pepper.
  • Heat a large skillet over medium-high heat. Spray the skillet generously with with cooking spray or add enough oil to coat the bottom. Add the chicken to the skillet and sauté until nearly cooked, about 4 minutes. Remove the chicken onto a plate and set aside.
  • Coat the skillet with more cooking spray or oil and add in the onion and garlic and sauté for 1 minute. Add in the mushrooms and asparagus and season with salt and pepper.
  • Sauté the vegetables for another 2-3 minutes or until they start to soften. Sprinkle the flour over the top of the vegetables and stir together until the flour taste is cooked off, about 1 minute.
  • Add the chicken back in with the vegetables. Pour in the chicken broth and milk and stir together until smooth. Cook the mixture for 2-3 minutes or until the sauce has thickened. Add in the cream cheese and stir together until smooth.
  • Remove the skillet from the heat and stir in most of the gruyere and cheddar cheese until melted, reserve a little cheese for the top of the casserole. Stir in the Greek yogurt until smooth then top the casserole with the remaining cheese.
  • Place in the oven and broil until the cheese is melted and starts to turn golden brown. Serve the casserole as is or on top of rice or quinoa.

6 shallots, peeled and cut crosswise three times
1 2 1/2-pound chicken, cut up, backbone and wing tips reserved for broth
3/4 pound asparagus, trimmed, peeled and cut in 1 1/2 inch pieces, about 2 cups
1 cup chicken broth, canned or fresh
2 tablespoons cornstarch, dissolved in 1/4 cup cold water
2 tablespoons fresh lemon juice
2 tablespoons minced fresh dill
1 tablespoon kosher salt
Fresh ground black pepper

Steps:

  • Scatter shallots in bottom of a 2-quart souffle dish.
  • At the knobby, small end of each chicken leg, cut through skin and tendons.
  • Arrange legs and thighs along the inside rim of the souffle dish. Place breast halves, bone side up, in center of dish. Fit wings in between legs and thighs. Mound asparagus in center of dish. Pour broth over all. Cover tightly with microwave plastic wrap. Cook at 100 percent for 10 minutes.
  • With dish in oven, slit plastic. Stir in dissolved cornstarch by sticking wooden spoon through slit. Cover slit with a square of wrap as a patch. Cook at 100 percent for three minutes.
  • Uncover and stir in lemon juice, dill, salt and pepper to taste. Serve immediately

Make this comforting chicken stew with seasonal vegetables to feed the whole family

1 tbsp olive oil
8 skinless, boneless chicken thighs, halved
60g unsalted butter
1 onion, finely chopped
2 large carrots, chopped
60g plain flour
1.2 litres chicken stock
2 tbsp Dijon mustard
2 tbsp white wine vinegar
300g frozen peas
150ml double cream
200g self-raising flour
¼ tsp baking powder
100g suet or cold unsalted butter, grated
small bunch of chives, finely sliced (optional)

Steps:

  • Heat the oil in a large flameproof casserole over a high heat and fry the chicken for 5-7 mins until golden all over. Remove to a plate and set aside.
  • Melt the butter in the same pan, then reduce the heat to medium and fry the onion and carrots for 5 mins until just starting to soften. Sprinkle in the flour and cook for 2 mins more. Slowly add the stock, stirring as you go. Add the mustard and vinegar and cook over a low-medium heat for 30 mins, stirring regularly. Season to taste, then add the peas and cook for 5 mins more. Stir in the cream.
  • Make the dumplings by mixing the flour with the baking powder, suet or butter, chives (if using) and ½ tsp salt. Swiftly stir in 8-10 tbsp water using a cutlery knife, then bring the dough together using your hands - it should be firm and pliable. Divide into eight equal-sized pieces, weighing for accuracy if you like. Nestle the dumplings on top of the stew, then cover with the lid and cook for 15 mins over a gentle simmer. Remove the lid and slide the pan under a hot grill for 5-10 mins until the dumplings are puffed up and golden brown. Ladle into bowls to serve.

8 chicken pieces (thighs or drumsticks), bone-in, skin-on
2 small onions, cut into quarters
6 garlic cloves, unpeeled, bashed
1 lemon, sliced and pips removed
500g asparagus, woody ends trimmed
100g fresh or frozen peas
1 heaped tbsp dried oregano
2 tbsp olive oil
100ml chicken stock
25g butter
crusty bread, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Arrange the chicken pieces, onion wedges, garlic, lemon slices, asparagus and peas in a roasting tin in a single layer, then sprinkle over the oregano, drizzle with the olive oil and pour over the stock. Give everything a good stir to mix well, then dot the butter over the chicken pieces and season well. Cover the whole tin with foil and bake for 30 mins.
  • Remove the foil and bake for 20-30 mins more until the chicken is cooked through and the juices run clear, and the vegetables are tender.
  • Heat the grill to high. Put the tin under the grill for a few minutes to crisp up the chicken skin, if needed, being careful not to let the asparagus catch. Serve straight from the tin, or on a platter, with crusty bread to mop up the juices.

My co-workers and I like to exchange recipes and cook for each other at least once a month . This is one of Georgia's favorites and it is delicious. I like to make it in May when fresh asparagus is in the roadside stands in southwest Michigan - nothing sweeter. Georgia credits this recipe to Taste of Home and Donna Lohnes of Wooster, Ohio.

4 boneless skinless chicken breasts
20 asparagus spears, fresh (about 1 lb.)
4 1/2 teaspoons olive oil or 4 1/2 teaspoons canola oil
2 teaspoons lemon juice
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon black pepper, freshly ground
1/8 teaspoon salt
1/4 cup green onion, chopped
2 teaspoons cornstarch
1 cup chicken broth

Steps:

  • Soak 5-10 toothpicks in water to cover.
  • Flatten chicken breasts slightly - to about 1/4 inch thickness.
  • Wrap each breast around 5 asparagus spears; secure with toothpicks.
  • Place in a lightly greased 9x13x2 inch baking dish.
  • In a small bowl whisk together the oil, lemon juice, basil, thyme, pepper and salt; pour over chicken/asparagus bundles.
  • Cover asparagus tips with aluminum foil.
  • Cover entire pan with aluminum foil and bake at 350F for 15 minutes.
  • Remove top aluminum foil covering (leave the covers on the asparagus tips).
  • Sprinkle with green onions.
  • Bake 12-15 minutes longer or until the chicken juices run clear and asparagus is crisp-tender.
  • Remove bundles to a serving platter and keep warm.
  • In a saucepan, combine chicken broth and cornstarch until smooth; stir in pan juices.
  • Bring to a boil; cook and stir for 2 minutes until thickened, stirring constantly.
  • Remove toothpicks from bundles.
  • Serve one bundle per plate topped with sauce.

2 whole chicken breasts (1 3/4 pounds), bone in, split and skinned
Salt and freshly ground black pepper
2 teaspoons olive oil
1 3/4 cups Homemade Chicken Stock, or canned low-sodium chicken broth, skimmed of fat
4 canned plum tomatoes, seeded and quartered
12 baby carrots, peeled and trimmed
1/2 pound asparagus, trimmed and cut into 1 1/2-inch pieces
1 leek (about 6 ounces), cut into 1/4-inch rounds, well washed
1 cup shelled peas, preferably fresh
Fresh flat-leaf parsley, for garnish (optional)

Steps:

  • Season chicken breasts with salt and pepper. Heat olive oil in a large skillet, add chicken, and cook over medium-high heat until golden brown on both sides, about 7 minutes total.
  • Add stock and tomatoes, bring to a boil, and cover. Cook on medium-low heat for about 20 minutes; remove chicken, and set aside.
  • Add carrots to skillet, and cook, covered, until almost tender, about 5 minutes. Add asparagus, leeks, and peas, and cook until all the vegetables are tender, about 5 more minutes.
  • Meanwhile, pull chicken from bone, and shred into large bite-size pieces. Return chicken to skillet, and cook until heated through, about 2 minutes. Garnish with sprigs of parsley, if desired.
