1 teaspoon olive oil
2/3 cup diced onions
3 to 4 cups fresh baby spinach leaves
1 medium garlic clove, (minced)
3 large eggs
1/4 teaspoon freshly ground black pepper
1 teaspoon regular Spike seasoning ((or a similar seasoning))
1/2 tablespoon Worcestershire sauce
1 cup low fat ricotta cheese
2 ounces feta cheese crumbles
1/4 cup grated Swiss cheese
1/4 cup grated Parmesan cheese

Steps:

  • Preheat the oven to 350°F. Spray 9-inch glass or ceramic pie plate with cooking spray.
  • Heat oil in a large nonstick skillet. Add the onions to the hot oil and sauté for 3 minutes.
  • Add the spinach and garlic and sauté for another 2 minutes, or until the spinach is completely wilted. Remove from heat.
  • In a medium bowl, whisk the remaining ingredients together. Stir in the spinach mixture and then pour into the pie plate.
  • Bake on the center rack of your oven for 35 to 40 minutes. Let sit for about 5 minutes before slicing.

1 frozen deep-dish (defrosted) or boxed single pie crust
1 12 oz. can evaporated fat-free milk
1/3 c. low-fat cottage cheese
1/4 c. grated parmesean cheese
4 lg. eggs (or 2 lg. eggs and 3 lg. egg whites)
1/2 tsp. salt
1/4 tsp. pepper
1/2-1 tsp. onion powder
1 10 oz. frozen spinach defrosted and squeezed in a towel very dry
1 can mushrooms, optional

Steps:

  • 1. Preheat oven to 375 degrees. Prepare pie crust. If using frozen deep-dish pie crust, defrost first.
  • 2. Whisk together evaporated milk, cottage cheese, Parmesan, eggs, onion powder, salt and pepper until well combined.
  • 3. Spread spinach evenly over bottom of pie shell. Place pie pan on foil-lined cookie sheet.
  • 4. Carefully pour egg mixture into pie shell.
  • 5. Bake for 15 minutes at 375 degrees. Cover crust with tin foil. I cut a large hole in the center of a square of foil. Lower oven temp. to 350 degrees and bake for another 15-20 minutes or until a knife inserted in center comes out clean. Cut into 8 wedges. 250 calories each.

Let me start by saying that I devised this recipe myself, and I just sort of add 'this and that.' This recipe is VERY forgiving, so you can add or remove ingredients according to your taste!

½ cup butter
3 cloves garlic, chopped
1 small onion, chopped
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (4.5 ounce) can mushrooms, drained
1 (6 ounce) package herb and garlic feta, crumbled
1 (8 ounce) package shredded Cheddar cheese
salt and pepper to taste
1 (9 inch) unbaked deep dish pie crust
4 eggs, beaten
1 cup milk
salt and pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium skillet, melt butter over medium heat. Saute garlic and onion in butter until lightly browned, about 7 minutes. Stir in spinach, mushrooms, feta and 1/2 cup Cheddar cheese. Season with salt and pepper. Spoon mixture into pie crust.
  • In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell, allowing egg mixture to thoroughly combine with spinach mixture.
  • Bake in preheated oven for 15 minutes. Sprinkle top with remaining Cheddar cheese, and bake an additional 35 to 40 minutes, until set in center. Allow to stand 10 minutes before serving.

3 large eggs, lightly beaten
1 teaspoon Dijon mustard
1 teaspoon dried oregano

Steps:

  • Preheat oven to 375ºF. Coat a 9-inch nonstick pie pan with cooking spray.

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/4 teaspoon salt
1/4 cup butter or margarine
3 to 4 tablespoons cold water
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)
1 tablespoon all-purpose flour
4 eggs, slightly beaten
1 1/2 cups milk
1/2 teaspoon salt
1 cup firmly packed fresh spinach leaves, coarsely chopped
1 small red bell pepper, chopped (1/2 cup)

Steps:

  • Heat oven to 375°F. In medium bowl, mix 1/2 cup all-purpose flour, the whole wheat flour and 1/4 teaspoon salt. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture looks like small crumbs. Sprinkle with water, 1 tablespoon at a time, tossing with fork just until flour is moistened. Shape into ball; flatten slightly.
  • On floured surface, roll dough into 12-inch round. Fold dough into fourths; place in 9-inch glass pie plate. Unfold and ease into pie plate, pressing firmly against bottom and side; crimp edge. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute.
  • In large bowl, mix cheese and 1 tablespoon flour. Stir in eggs, milk and 1/2 teaspoon salt until well blended. Stir in spinach and bell pepper. Pour into pie crust.
  • Bake 15 minutes. Cover edge of crust with strip of foil to keep crust from overbrowning. Bake 15 to 20 minutes longer or until knife inserted in center comes out clean. Let stand 10 minutes before serving.
