SPICY BLACK BEAN & CORN TORTILLA SOUP

Spicy Black Bean & Corn Tortilla Soup image

This recipe is a spicy & hearty soup with a tex-mex taste. I was looking for a filling, good-enough-to-be-a-meal soup that was big on taste and light on fat/dairy. It is best when served with all the garnishes so that each bite has a slightly different mix of the fresh flavor. It can be easily modified to be vegetarian/vegan by using vegetable broth (or base) and soy cheese.

TEXAS THICK & SPICY TORTILLA SOUP

Texas Thick & Spicy Tortilla Soup image

I came up with this after several attempts and still tweaking. Starting with a bland one I found in a cookbook and deleted and added until I got the taste and consistency I liked. Most of the ones I had tried were watery and bland. This is a hot soup. If you don't like hot and spicy, don't make it ,,, you won't like it. I'm from Texas where we like our women, chili and most everything else hot. To make it even hotter, add the whole can of Rotel and leave the Jalapeño seeds in. This will generously serve 6 people. Add garnish if you must or just pour it up and enjoy with a cool glass of iced tea or man beverage of your choice. You can use generic brands for the ingredients but if you are health conscious, check the labels for fat and cholesterol content. The generics I have looked at are usually higher in both compared to name brands.

This recipe is from 'Mexico- One plate at a time' by Rick Bayless. It is very different from the usual tortilla soups. The soup is quite thin but so flavorful & spicy. I added cumin although the actual recipe does not call for it.

1/2 cup chopped cilantro
5 -6 cups chicken stock
2 tablespoons Frank's red hot sauce
1 teaspoon kosher salt
1 teaspoon fresh ground black pepper
4 tablespoons sugar (optional)
1 cup queso fresco or 1 cup goat cheese, cut into cubes
2 avocados, cut into small chunks
3 -4 cups vegetable oil (for frying)
6 -8 corn tortillas, cut into thin long strips

Steps:

  • Preheat oven to 425 degrees.
  • Place tomatoes, onion, and garlic on a cookie sheet covered with aluminum foil and roast at 425 degrees for approximately 25 - 30 minutes or until softened and slightly charred.
  • To a large stock pot over medium high heat, add the 1 tablespoon of olive oil, the poblano pepper, and jalepeno pepper. Saute about 5 minutes or until softened.
  • Add the cumin, corriander, and cilantro and saute about one minute.
  • Add the roasted vegetables to the pot along with about 3 cups of chicken stock.
  • Using a hand held emulsifier puree (or transfer to a food processor to puree then place back into the pot) the vegetables with the stock.
  • Check consistency of the soup and depending on how thick or thin you would like your soup add in the rest or part of the leftover chicken stock.
  • Add in the hot sauce, salt, and pepper.
  • Bring the soup back up to a boil, turn down the burner to medium low, and then let the soup simmer for about 30 minutes.
  • Meanwhile, heat the vegetable oil over high heat in a large wok or deep pot.
  • When the oil is hot add the tortilla strips in small batches, so as not to overcrowd the pot. Flip the tortilla strips after about two minutes on one side and fry on the other side. (Timing for frying will depend on the temperature of your stove top).
  • Using a slotted spoon remove tortilla strips from the hot oil and drain on paper towels.
  • When soup is done simmering, taste for acidity and flavors. At this time I decide whether or not to add in the sugar. If it is very acidic from the tomatoes I add it if not then I leave it out. Also add in more salt and pepper at this time if needed.
  • Add in almost all of the tortilla strips to the soup and stir.
  • Immediately, ladle soup into large bowls for serving and top with tortilla strips, cheese, and avocado.
  • Enjoy!

SARAHKAYE'S SPICY CHICKEN TORTILLA SOUP

Sarahkaye's Spicy Chicken Tortilla Soup image

I have worked long and hard on perfecting this soup. This is by far is my favorite soup ever. If you love it the first day, it's even better the second day after it sits in the fridge for several hours and is reheated. I usually make a double or triple batch of this recipe and freeze it for quick & easy 10 minute meals throughout the month. Garnishing with the toasted tortilla strips completes this dish. It adds the perfect "crunch" to this soup and you just about can't get enough! So don't leave them out! Control the spice intensity by deciding whether or not to add the jalapeno seeds... I leave them in! Enjoy!
