Salad:
3 medium ripe fresh red tomatoes
1/2 English cucumber, quartered lengthwise and finely sliced
1/2 cup tightly packed coarsely chopped purslane or arugula
2 scallions, including most of the green, thinly sliced
1 cup tightly packed coarsely chopped fresh flat-leaf parsley
3 tablespoons chopped fresh mint leaves
1 to 2 tablespoons chopped fresh thyme or savory
2 to 4 jalapeño chiles, seeded and finely diced
2 tablespoons capers, preferably salt-packed, rinsed well and drained (optional)
Dressing:
3 tablespoons fruity extra virgin olive oil
1 tablespoon fresh lemon juice
1 tablespoon balsamic vinegar
2 teaspoons grated lemon zest
Sea salt and freshly ground black pepper
Pinch of sumac (optional)

Steps:

  • Salad:
  • Cut the tomatoes in half crosswise and squeeze lightly to remove the seeds. With a serrated knife, dice the tomatoes and transfer to a strainer to drain. In a salad bowl, mix together the cucumber, greens, scallions, herbs, jalapeños, and capers. Add the tomatoes.
  • Dressing:
  • To make the dressing, whisk together the olive oil, lemon juice, vinegar, lemon zest,and salt and pepper to taste. Pour over the salad and toss. Taste and adjust the seasoning. Refrigerate for 20 to 30 minutes to give the flavors time to meld. Sprinkle with sumac before serving if you like.

1 small seedless watermelon
2 limes
1 container Simple Truth™ Organic Grape Tomatoes, thinly sliced crosswise
2 Simple Truth™ Organic Hass Avocados, peeled, pitted, and cut into 2 in (5 cm) half-moons
1 medium Simple Truth™ Cucumber, peeled and sliced into thin half moons
½ cup Simple Truth™ Rosemary Balsamic Salad Dressing
1 jalapeño, steemed and thinly sliced
½ tablespoon flaky sea salt
2 tablespoons Simple Truth Roasted and Salted No Shell Pistachios, chopped
2 tablespoons Simple Truth™ Organic Basil leaves
1 tablespoon Simple Truth Organic Chives, chopped

Steps:

  • Cut the watermelon in half crosswise, then cut off the rind. Slice the flesh into ½-inch-thick half-moons, then cut the half-moons into 2-inch triangles.
  • Transfer the watermelon to a large bowl and toss with the lime juice. Set aside for 5 minutes to soak.
  • Remove the watermelon from the bowl with the lime juice and arrange in a single layer on a serving platter. Top with the grape tomatoes, avocados, and cucumber, then drizzle with the Simple Truth™ Rosemary Balsamic Salad Dressing.

1 cup quinoa
3 cups water
Salt to taste
2 cups diced cucumber
1 small red onion, finely minced (optional)
2 cups finely diced tomatoes
1 to 2 jalapeño or serrano peppers (to taste), seeded if desired and finely chopped
1/2 cup chopped cilantro, plus several sprigs for garnish
2 tablespoons fresh lime juice
1 tablespoon red wine vinegar or sherry vinegar
3 tablespoons extra virgin olive oil
1 avocado, sliced, for garnish

Steps:

  • 1. Place the quinoa in a bowl, and cover with cold water. Let sit for five minutes. Drain through a strainer, and rinse until the water runs clear. Bring the 3 cups water to a boil in a medium saucepan. Add salt (1/2 to 3/4 teaspoon) and the quinoa. Bring back to a boil, and reduce the heat to low. Cover and simmer 15 minutes or until the quinoa is tender and translucent; each grain should have a little thread. Drain off the water in the pan through a strainer, and return the quinoa to the pan. Cover the pan with a clean dishtowel, replace the lid and allow to sit for 10 minutes. If making for the freezer, uncover and allow to cool, then place in plastic bags. Flatten the bags and seal. 2. Meanwhile, place the finely diced cucumber in a colander, and sprinkle with salt. Toss and allow to sit for 15 minutes. Rinse the cucumber with cold water, and drain on paper towels. If using the onion, place in a bowl and cover with cold water. Let sit for five minutes, then drain, rinse with cold water and drain on paper towels. 3. Combine the tomatoes, chiles, cilantro, vinegar, lime juice and olive oil in a bowl. Add the cucumber and onion, season to taste with salt, and add the quinoa and cilantro. Toss together, and taste and adjust seasonings. Serve garnished with sliced avocado and cilantro sprigs.

1 c ucumbers (2 medium), peeled and sliced
2 medium tomatoes (early girls are great), sliced and drained slightly
1 large sweet red onion, thinly sliced
3 anaheim chiles, seeded and thinly sliced (galapagos if you prefer)
1/4 c fresh parsley, finely chopped
1/4 c celery, sliced 1/8 inch thick
1/4 c whole grain prepared mustard
2 tsp sugar, salt to taste

Steps:

  • 1. Combine the cucumbers, tomatoes, onions, green chilies, parsley and celery n a bowl. Combine mustard and sugar and added to sliced vegetables. Salt to taste. Let sit for 20 minutes at room temperature.
