SPICY PEPPER JACK MAC AND CHEESE
Spicy Pepper Jack Mac and Cheese. A fun twist on the original made in less than 15 minutes!

Steps:
- Boil pasta until al-dente.
- Meanwhile add butter to a small saucepan. Heat until melted.
- Stir in flour and whisk constantly for 1-2 minutes.
- Add milk and simmer whisking constantly for another 3-4 minutes until thick.
- Take off of the heat and whisk in cheese until fully melted.
- Stir in tomatoes, jalapeno, Tabasco, cayenne pepper, ground mustard, Worcestershire sauce and garlic powder. Season with salt and pepper to taste.
- Pour cheese sauce over the cooked noodles and toss to combine.
- Serve with a sprinkle of parsley for garnish and serve immediately!

- Cut cheese into 2-3/4x1/2-in. sticks. Place the flour, eggs and cornflakes in three separate shallow bowls. Coat cheese sticks with flour; dip in egg, then roll in cornflakes until well coated. Let stand for 5 minutes., In an electric skillet or deep-fat fryer, heat oil to 375°. Cook cheese sticks in batches for 30 seconds or until golden brown. Drain on paper towels. Let stand for 3-5 minutes. Serve with salsa and guacamole.

- 1. In a bowl, combine flour and cayenne pepper; whisk to blend and set aside.
- 2. Prep two shallow bowls; one with beaten eggs and the other one with bread crumbs. Add Italian seasoning to the bread crumbs and stir.
- 3. Working in batches of 6, place cheese sticks in the flour mixture, close bag and shake to coat. Taking one at a time, dip a cheese stick in eggs and then bread crumb mixture; repeat once again. Place breaded stick on a baking sheet lined with a silicone mat or wax paper. When sticks are all coated, transfer them to the freezer for 30 minutes.
- 4. In a frying pan, heat oil to 350-365ºF. Take sticks directly out of the freezer and fry them in batches making sure to not overcrowd the pan. Using a stainless steel strainer, gently move them around to fry evenly. When golden brown, transfer cheese sticks to a wire rack sitting over a baking sheet lined with paper towels; let them sit for 5 minutes before serving. Makes 18 sticks

ULTIMATE SPICY GRILLED CHEESE RECIPE BY TASTY
Here's what you need: sourdough bread, jalapeño, shredded Cabot Pepper Jack Cheese, jalapeño, habanero pepper, green onion, jalapeño-flavored potato chips

- Heat a large nonstick skillet over medium heat. Hold a slice of bread over the skillet to measure the space for the cheese crust. Place 2-4 jalapeño slices in the skillet where the bread will go, then top with ¼ cup Cabot Pepper Jack Cheese roughly the shape and size of the slice of bread. Place the bread on top of the cheese and press down lightly so the melting cheese sticks to the bread.
- Top the bread with ¾ cup Cabot Pepper Jack Cheese, the chopped jalapeño, habanero (if using), green onions, and potato chips. Cover with the other slice of bread. Cook for 2-3 minutes, or until the cheese on the bottom forms a browned crust.
- Using a spatula, lift the sandwich out of the pan and layer the remaining jalapeño slices and Cabot Pepper Jack Cheese in the skillet. Place the sandwich on top of the cheese in the pan, cheese-crust side up, and press down lightly to adhere. Cook for 3-5 minutes, or until the cheese crust is well browned and the cheese in the middle of the sandwich is completely melted. Let the sandwich rest for 1 minute before slicing.

SPICY CHEESE STICKS
Had this recipe for years. I have never made but they sound delicious. Prep time is estimated and does not include the chilling time. I would think the dough could be made and frozen also.

Steps:
- Sift together flour, baking powder, salt and cayenne pepper into a mixing bowl. Add shortening and cut in with a pastry blender until well incorporated. (I think you could do this with a few pulses in a food processor.) Stir in Cheddar cheese, onion, and Worcestershire and Tabasco sauces. Add buttermilk and stir to make a soft dough.
- Wrap in wax paper or plastic wrap and chill for 1 hour.
- Preheat oven to 475°F
- On a lightly floured board, roll out dough into an 8-x 12-inch rectangle. Wrap loosely around rolling pin and transfer to a cold lightly greased baking sheet. With a metal spatula, cut dough in half lengthwise, then cut across at 1-inch intervals to form the sticks. Brush sticks with melted butter, sprinkle with Parmesan and bake until lightly browned, about 10 minutes.
- Immediately remove from baking sheet and serve hot, or cool on wire racks before storing in airtight containers.
