SPICY CORNBREAD MUFFINS



Spicy Cornbread Muffins image

Number Of Ingredients 6

2 (8 1/2-ounce) boxes corn muffin mix
1 cup milk
2 eggs, beaten
1 (8 3/4-ounce) can corn kernels, drained
1 canned chipotle pepper in adobo sauce, minced
1/2 cup grated Monterey jack

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, mix together all of the ingredients until just combined. Do not overmix. Divide the batter evenly in a 12-portion nonstick muffin tin. (If using a tin that isn't nonstick, spray with cooking spray).
  • Bake in the center of the oven until just golden and muffin springs back when gently pressed, about 20 minutes.
  • Cool for 10 minutes in the pan, then remove and serve warm.

STRAWBERRIES TWO WAYS

1 pound strawberries, washed, dried, hulled, and sliced lengthwise thinly
1 small lemon, juiced
3 tablespoons superfine sugar, divided
1 tablespoon balsamic vinegar
About 10 fresh basil leaves, cut into chiffonade
Vanilla ice cream, for serving, optional

Steps:

  • Divide the strawberries between 2 bowls.
  • To 1 bowl, add the lemon juice and 2 tablespoons sugar and stir well. Let stand for at least 15 minutes before serving.
  • To the other bowl, add balsamic vinegar, 1 tablespoon sugar, and the basil. Toss to combine. Let stand for at least 15 minutes before serving.
  • Serve over vanilla ice cream, if desired.

APPLESAUCE WITH STRAWBERRIES

3 pounds McIntosh or other apple of choice (about 9 apples)
10 large frozen strawberries
1/3 cup sugar
1 lemon, juiced
1/4 cup water
1/8 teaspoon allspice

Steps:

  • Peel, core and slice apples 1/4-inch thick. Place apple slices in a large saucepan. Add remaining ingredients and simmer until a sauce consistency, about 45 minutes. Use a potato masher, if necessary, to break up any lumps, but leave slightly chunky.

2 bananas
2 mangos

1/2 cup Greek yogurt

  • Place the fruit, honey and 12 to 14 coconut water flavored ice cubes into a blender and blend until smooth. Serve immediately.
