SPICY CHEESE AND PEPPERONI BISCUITS image

Yield 12 Biscuits

Number Of Ingredients 6

2 Cups Bisquick
1/2 cup of milk
3 or 4 pepperoni sticks (maybe more if you like it meaty)
a bag of tex mex shredded cheese (or like 2 or 3 cups)
a little flour for the preparation space so it doesn't stick
butter/pam type stuff

Steps:

  • preheat oven to 450 degrees F 1. Mix up the bisquick mix, and milk in a bowl 2. Use a cheese grater to shred the pepperoni sticks 3. take a bit of the bisquit mix and flatten it out on the table/cutting board until its about 2-3 inches in diameter 4. put some shredded cheese and sausage on it, and fold in half 5. put some more cheese and sausage on and fold again and then pick it up and roll it onto a ball 6. lightly grease the pan and press the balls of bisquick sausage and cheese down into thick medallions (just flat enough to sprinkle with some more tex mex cheese 7. Bake for 7 minutes on middle rack 8. to brown the biscuits a bit broil for the last 30 to 60 seconds WATCH THEM VERY CLOSELY!!!!! let cool for 2 or 3 minutes and enjoy!

Yield Makes 9 Biscuits

Number Of Ingredients 9

3 1/2 cups all purpose flour
2 tablespoons baking powder
1 tablespoon sugar
2 teaspoons cayenne pepper
1/2 teaspoon salt
1 cup grated sharp cheddar cheese
1 cup grated sharp Romano cheese
2/3 cup chilled vegetable shortening cut into small pieces
1 1/4 cups chilled buttermilk

Steps:

  • Preheat oven to 450°F. Butter large baking sheet. Sift first 5 ingredients twice into medium bowl. Mix in cheeses. Add shortening; rub in with fingertips until mixture resembles coarse meal. Add buttermilk, stirring until dough begins to form clumps.
  • Turn dough out onto lightly floured surface; knead gently until smooth, about 8 turns. Roll out dough to 3/4-inch-thickness. Using 3-inch-diameter biscuit cutter, cut out biscuits. Gather dough scraps; roll out to 3/4-inch-thickness. Cut out additional biscuits. Transfer biscuits to prepared baking sheet. Bake until puffed and golden brown, about 15 minutes. Serve warm.
