- In a small bowl, combine the brown sugar, onion powder, garlic powder, crushed red pepper, fennel seed, paprika, 1 teaspoon of salt, and 1/4 teaspoon pepper.
- Break the beef into chunks and add to a large bowl. Sprinkle the seasoning evenly over the top then with your hand gently mix the beef until the seasoning is evenly distributed. Divide the mixture into 8 even portions and roll gently into balls. Place back in the bowl and refrigerate for at least 1 hour.
- Remove the sausage from the refrigerator and one by one place each ball between 2 sheets of parchment paper. Using a meat pounder, flatten out the sausage balls into 1/8-inch thick patties.
- In a large saute pan or griddle over medium-high heat, add the olive oil and cook the sausage patties in batches. Sear on one side until caramelized and golden on the bottom, about 2 minutes, then flip to cook just a minute more on the other side.
SPICY MAPLE BREAKFAST SAUSAGE

- Cook the sausage until browned well, crumble; set aside.
- In the same pan, sauté the mushrooms, onion, garlic, and green chiles.
- Combine the sausage with the mushroom mixture; set aside and let cool.
- Grease a 9x13-inch glass baking dish and fill the bottom with the prepared bread cubes; top with sausage mixture then the cheese.
- Beat together the eggs, milk, sundried tomatoes, basil, sage, dry mustard, salt, pepper, and Tabasco; pour over sausage and cheese in the baking pan.
- (This dish can be prepared a day ahead- at this point you'd cover it with plastic wrap and put it in the refrigerator.) In the morning, remove the casserole from the refrigerator and set it out on the counter for 30 minutes.
- Preheat oven to 350 degrees F.
- Uncover and bake casserole until it's golden and puffy and the center is set, about 50 to 60 minutes.
- Cut into squares and serve.
- If you want it especially spicy, chop up a jalapeno and sauté it along with the onion and mushrooms; you can also substitute O'Brien potatoes for the bread; you can even substitute vegetarian sausage for the meat!

SPICY BREAKFAST SAUSAGE
This delicious sausage can be stuffed into casings or formed into patties. I use a wide-mouth canning jar ring and lid to make the patties. Place the ring, top down on the counter. Lay a piece of plastic rap on top of it. With an ice cream scoop, place the sausage into the ring. Lay another piece of plastic wrap on top and smash down with the lid. Perfect size for muffin, egg, cheese and sausage sandwich.

SPICY MAPLE SAUSAGE, EGG AND CHEESE BREAKFAST TAQUITOS

- Preheat oven to 425 degrees F.
- Add the frozen sausage links to a large skillet over medium heat. Cook, turning occasionally, until fully cooked. Remove from pan and drain.

- In large bowl, mix all ingredients thoroughly by hand or with wooden spoon. Care should be taken to insure uniform distribution of ingredients. For patties (immediate consumption), wet hands, form desired sizes and shapes and fry in veg. oil, shortening or lard over medium heat, turning frequently until golden brown, then drain/keep warm on paper towels in low oven until served. * If patties are to be prepared for storage, wet hands and form desired patties, or form mixture to approx. 2.5-3" roll, then wrap in (roll into) approx. 20" length of plastic wrap. Freeze roll approx. 30-45 min., or until firm enough to cut slices. With very sharp knife cut 1/3-1/2" patties. Carefully remove remnants of plastic wrap and devide into serving-size portions. Place in zip-close bags and freeze immediately until needed (max. freeze duration: 3 months for best taste). - Mix the pork, beef and veal thoroughly in a large mixing bowl.
- Add the garlic, scallions, green pepper, cumin, thyme, fennel,.
- nutmeg and red pepper flakes and salt to taste.
- Mix thoroughly with your hands.
- Fry a small amount in a skillet until no longer pink.
- Taste for seasonings and adjust in the meat mixture if necessary.
- Divide the meat mixture in half. Roll each half into a log 7 inches long and about 2 inches in diameter.
- Wrap the logs separately in plastic wrap and refrigerate at least 3 hours or up to 2 days.
- Cut the sausage logs into 1/2 inch slices.
- Fry the patties in a little bit of butter until well browned on both sides.
- Serve with eggs, pancakes or French toast.
