Slow-cooked in the oven, this mouthwatering venison roast with carrots, onion, potatoes is topped with homemade flavorful gravy. The whole family will love it!

Number Of Ingredients 15

4 pounds venison shoulder (or butt roast)
1/8 teaspoon kosher salt
1/8 teaspoon cracked black pepper
5-6 large carrots
1 medium yellow onion
4 garlic cloves
1/4 cup olive oil
1/3 + 1 1/2 cups quality beef stock
1 Tablespoon onion soup mix
1 fresh rosemary sprig
2 Tablespoons fresh parsley (chopped)
6 medium potatoes (peeled or unpeeled)
2 Tablespoons unsalted butter
3 Tablespoons flour
2 Cups Roast drippings and broth

Steps:

  • Generously season both sides of your thawed roast with kosher salt and cracked black pepper. Set it aside and turn on your oven to 250˚ F.
  • Peel and chop the carrots, slice the onion and peel the garlic cloves. In a large stockpot on the stove using medium-high heat, pour in 1/4 cup olive oil. When the oil is hot, lay down your onion rings and garlic cloves. Cook for 2 minutes on each side or until the onions are translucent and crispy brown edges are formed. Remove the onions and garlic and set aside in a large bowl.
  • Using the same method, sear your carrots for about two minutes per side. When the carrots start to show browning on both sides, pull them out and add them to your bowl of onions and garlic.
  • Make sure you still have some oil at the bottom of the pan before laying down one side of the seasoned meat into the pan. Place the roast in the stockpot to brown for one minute on each side before removing it to rest one more time.
  • Working quickly, whisk 1/3 cup of beef stock into the browned bits at the bottom of the stockpot and keep whisking until they are part of the stock. Turn off your heat.
  • Layer the bottom of the stockpot with the onions, carrots and garlic and top with the browned roast. Split the rosemary sprig in two and lay it on top of the meat followed by one tablespoon of onion soup mix per pound of meat. Also add the fresh chopped parsley and 1 ½ cups of quality beef stock.
  • Cover the pot and bake for 3 hours at 250˚ F.
  • At three hours, slide the pot out and carefully add the potatoes around the edge of the meat and on top of the carrots, onions and stock. Move the rosemary from the top of the meat and poke it down into the juices. Slide the covered pot back into the oven and bake for an additional 3 hours at 250˚ F.
  • When the six hours has ended, carefully remove the stockpot from the oven, take out the roast, and place it on a platter. Cover it with foil so it stays warm. Remove all of the vegetables and place them in a bowl and cover with foil. Strain the remaining stock using a fine mesh strainer or a gravy separator and pour it into a liquid measuring cup and set it aside.
  • To make gravy, add the butter to the same pot and allow it to melt. Whisk in the flour and form a paste. Allow it to cook for 1 minute and then whisk in your reserved stock and drippings. Whisk just until it is thickened and turn off the heat.
  • Shred the meat and serve with carrots, potatoes and gravy.

3 onions, chopped
5 carrots, cut into 2-inch pieces
1 cup chopped portobello mushrooms
3 pounds venison rump roast
2 garlic cloves, crushed
1 tablespoon ground black pepper
1 pinch salt to taste
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.5 ounce) can condensed beef broth
¼ cup water
1 (1.25 ounce) envelope dry onion gravy mix

Steps:

  • Arrange the onions, carrots, and mushrooms in the bottom of a slow cooker. Rub the venison rump roast with garlic, black pepper, and salt, then place on top of the vegetables. Mix the cream of mushroom soup, beef broth, water, and onion gravy mix in a bowl until gravy mix is dissolved; pour soup mixture over the roast.
  • Cook on High setting until roast is very tender, 8 to 10 hours. Slice roast before serving with gravy and vegetables.

2 lb venison roast
4 c beef broth
2 c merlot wine or any dry red wine
4 c crushed tomatoes
1 large onion diced
6 clove garlic minced
1 knorr homestyle beef bouillon
2 chipotle peppers in adobo sauce minced
1 1/2 c heavy cream
3 Tbsp cornstarch

Steps:

  • 1. Place all ingredients except heavy cream and cornstarch in pressure cooker. Bring to pressure and cook about 45 minutes.
  • 2. Remove roast to cutting board. Place pan drippings in heavy saucepan. Bring to a boil and let reduce for about 10 minutes
  • 3. Mix cornstarch and heavy cream together. Stir into sauce to thicken it.
  • 4. Serve over mashed potatoes, noodles or rice

1 venison roast (3 to 4 pounds)
10 whole garlic cloves, peeled
2 teaspoons dried rosemary, crushed
1-1/2 teaspoons onion powder, divided
1 teaspoon garlic powder
1 teaspoon dried thyme
7 medium carrots, quartered
5 small onions, quartered
1 tablespoon beef bouillon granules
1 teaspoon browning sauce, optional
2 tablespoons cornstarch
3 tablespoons cold water

Steps:

  • Cut 10 deep slits in roast; place a garlic clove in each slit. Combine the rosemary, 1 teaspoon onion powder, garlic powder and thyme; rub over entire roast. Cover; refrigerate for 2 hours., Add 1/2 in. of water to a roasting pan. Place the roast, carrots and onions in pan. Cover and bake at 325° for 2-1/2 to 3 hours or meat is tender. 2 egg yolks
1 tablespoon Korean chile paste (available in Japanese grocery stores)
1/2 teaspoon salt
1/2 cup bread crumbs
1 tablespoon sesame seeds
1/4 teaspoon ginger powder
1 teaspoon sugar
1/2 teaspoon Korean chile powder
1/2 teaspoon white pepper
1 teaspoon nori seaweed
3 tablespoons olive oil

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, combine the egg yolks, chile paste, and salt. Rub on the venison loin and marinate, refrigerated, for 2 hours.

2 tbsp vegetable oil
1 ½kg diced stewing venison
3 large carrots , roughly chopped
1 onion , roughly chopped
1 tbsp cumin seed
1 tsp ground coriander
large pinch of chilli powder
small cinnamon stick
1 red chilli , whole
1 heaped tbsp plain flour
500ml red wine
300ml beef stock
400g can chopped tomato
large thyme sprig
2 bay leaves
50g dark chocolate (more than 70% cocoa solids)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Heat the oil in a large flameproof casserole dish and brown the meat in batches. Add the vegetables in the dish and brown lightly, then stir in the spices, chilli and flour, and cook for a few mins. Pour in the wine, stock and tomatoes, then add the herbs. Bring to a simmer.
  • Cover with a lid and put in the oven for 1 hr 30 mins, then remove the lid and cook for a further 1 hr until the meat is really tender. Remove from the oven and leave to cool slightly, then stir in the chocolate and serve.
