Spiced Peach Bread image

My Spiced Peach Bread straddles the best of summer and fall, it's got chunks of juicy ripe peach warmed up with cinnamon, allspice, and nutmeg. This easy quick bread became an instant family favorite at our house so I'm pretty sure your gang will love it too.

Number Of Ingredients 13

1 cup dark brown sugar, packed
1 cup (2 sticks) unsalted butter, at room temperature
3 large eggs, at room temperature (you can also use extra large eggs)
1 3/4 cups cake flour (you can also use all purpose flour)
1 1/2 tsp baking powder
1/2 tsp salt
1 tsp cinnamon
1/2 tsp allspice
1/2 tsp freshly grated nutmeg
1/4 tsp ground cloves
1/2 cup cultured buttermilk
2 cups diced peaches, skin on. For me this was 3 smallish peaches.
1 tsp coarse sparkling sugar

Steps:

  • Preheat oven to 350F Lightly butter a 9x5 loaf pan and line it with parchment paper with long ends so you can lift the bread out later for glazing and slicing.
  • Put the brown sugar and butter into a stand mixer and cream until light and fluffy ~ a full 5 minutes. Make sure to get all the lumps out of the sugar.
  • Beat in each of the eggs, one by one, making sure each egg is fully incorporated before adding the next one. Continue beating for another 2-3 minutes. The batter will be light and fluffy.
  • Whisk together the flour, baking powder, salt and spices and add to the mixer, alternately with the buttermilk, beginning and ending with dry ingredients. Finish mixing by hand, to make sure everything is thoroughly mixed, but don't over beat. Fold in the peaches.
  • Turn the batter into your prepared pan. Spread out evenly, and sprinkle the top lightly with sparkling sugar. You can use regular granulated or raw sugar if you like.
  • Bake on the center rack for 50-55 minutes, or until fully risen and a toothpick inserted near the center comes out without wet batter clinging to it (moist crumbs are fine.)
  • Let the bread cool in the pan for 10 minutes, then remove, using the parchment paper handles. You can slice while it's still warm, or wait for it to cool.

3/4 cup cold butter, cubed
1 package yellow cake mix (regular size)
2 large egg yolks
2 cups sour cream
1 can (29 ounces) sliced peaches, drained
1/2 teaspoon ground cinnamon
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

  • In a large bowl, cut butter into cake mix until the mixture resembles coarse crumbs. Pat into a greased 13x9-in. baking pan. , In another bowl, beat egg yolks; add sour cream until smooth. Set aside 6-8 peach slices for garnish. Cut remaining peaches into 1-in. pieces; stir into the sour cream mixture. Spread over crust; sprinkle with cinnamon. , Bake at 350° for 25-30 minutes or until the edges begin to brown and a toothpick inserted in the center comes out clean. Cool on a wire rack. Spread with whipped topping; top with reserved peaches. Store in the refrigerator.

This is an old, old recipe from relatives in Georgia.

19 pounds firm ripe peaches
7 pounds white sugar
2 cups distilled white vinegar
1 quart water
24 whole cloves
3 tablespoons crushed cinnamon stick

Steps:

  • Peel peaches and set aside. In a large pot over medium high heat, boil sugar, vinegar and water until the syrup is moderately thick.
  • Add cloves, cinnamon and peaches. Bring to boil stirring occasionally until the peaches can be pierced to the pit with a fork.
  • Fill sterilized canning jars with peaches. Continue boiling syrup until heavy and add to peaches to cover.
  • In a large stock pot, pour water half way to top with boiling water. Using a holder, carefully lower jars into pot. Leave a 2-inch space between jars. Add more boiling water to cover them, about 2 inches above the tops. Bring to a boil and cover, processing for 35 minutes. Remove jars from pot. Put jars on a wood or cloth surface, several inches apart and allow to cool. Jars will be sealed.

2 cups sugar
6 large eggs, room temperature
1 teaspoon almond extract
1 teaspoon vanilla extract
3 cups all-purpose flour

1/4 teaspoon salt
1/2 cup sour cream
2 cups diced fresh or frozen peaches
Confectioners' sugar

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking soda and salt; add to the batter alternately with sour cream, beating well after each addition. Fold in the peaches., Pour into a greased and floured 10-in. fluted tube pan. Bake until a toothpick inserted in the center comes out clean, 60-70 minutes. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Dust with confectioners' sugar if desired.

1/2 cup sugar
1/2 cup water
1/4 cup vinegar
8 to 10 whole cloves
1 cinnamon stick
6 fresh peaches, peeled and halved
1/2 cup sour cream
2 tablespoons brown sugar

Steps:

  • In a large saucepan, bring the first five ingredients to a boil. Reduce heat; simmer 10 minutes. Add peaches; simmer until heated through, about 10 minutes. , Pour into a shallow dish. Cover and chill 8 hours or overnight. Drain. Spoon peaches into serving dishes; garnish with a dollop of sour cream and sprinkle with brown sugar.

1/2 cup butter, melted
1 cup brown sugar
2 (9 ounce) cans peaches, drained
1 pillsbury plus spice cake mix
1 cup water
1/3 cup oil
3 eggs
1 quart heavy cream
powdered sugar
vanilla

Steps:

  • Preheat oven to 350 degrees.
  • Grease & flour 2-9" round pans. Mix melted butter and brown sugar and spread on the bottom of the round pans. Place peaches in a spiral design on top of sugar and butter mixture.
  • Blend cake mix w/water, oil and eggs. Beat for 2 minutes and pour into pans.
  • Bake 35-45 minutes until sides of cake come away from pan.
  • While cake is baking make whipped cream and refrigerate until ready to frost cake.
  • Immediately invert on cooling rack. Cool completely and frost bottom layer peach side up with 1/3 of whipped cream, top with 2nd layer and frost top and sides of cake with remaining whipped cream.
  • Enjoy.

SPICY PEACH CAKE

The cake reminded me of the spice cakes I loved as a kid. My kitchen smelled amazing as this baked. The peaches, which end up on top, are so tasty thanks to the spices they're tossed in. I'd recommend placing your springform pan on a sheet pan to avoid any messes in your oven.

PEACHES
1 bag frozen peaches
1/4 c each honey and white sugar
1 tsp nutmeg
2 tsp cinnamon
1 dash(es) cloves
1/4 c unsalted butter, cut into little cubes
CAKE
1 box duncan hines classic white cake mix
1 1/3 c water
3 eggs
2 tsp each, cinnamon, ground ginger, nutmeg
butter for the pan

Steps:

  • 1. Preheat oven to 350*. Butter bottom and sides of a 8"x3" springform pan.
  • 2. Place peaches in a bowl, and sprinkle sugar and drizzle honey over the top. Sprinkle the nutmeg, cinnamon and cloves over the top, and stir to coat.
  • 3. Pour peach mixture into the pan, and dot with the butter cubes.
  • 4. In another bowl, mix the cake mix, eggs, water, cinnamon, ginger and nutmeg, until smooth. Pour over peaches.
  • 5. Bake in middle rack for 1 hour. Let cool 15 minutes, then run a small knife around the edges. Unmold the cake onto a platter, peaches side up.
