SPICED PORK TENDERLOIN WITH CHERRY-THYME PAN SAUCE
Frozen cherries are the star in a vibrant, herby pan sauce that is made while the lightly spiced pork tenderloin rests.

- Combine coriander, 1 tsp. salt, and 1/4 tsp. pepper in a small bowl. Rub pork with spice mixture.
- Heat oil in a 12" heavy skillet over medium-high until hot but not smoking. Reduce heat to medium and cook pork, turning occasionally, until meat is browned on all sides and an instant-read thermometer inserted diagonally into the center of each tenderloin registers 145°F, 20-25 minutes. Transfer pork with tongs to a cutting board (do not wipe out skillet) and let stand 10 minutes.
- Meanwhile, cook shallot and thyme in skillet, stirring, until softened and lightly golden, about 2 minutes. Add wine, vinegar, and sugar. Bring to simmer and cook, scraping up any browned bits and stirring frequently, until liquid is reduced by about half and shallots are tender, about 4 minutes. Stir in cherries, any accumulated juices, and 3/4 tsp. salt and cook 1 minute. Remove from heat, add butter, and swirl skillet to combine. Pluck out thyme sprigs, then season with salt and pepper. Slice pork and serve with sauce.

- Rub roast with salt, pepper and sage; place in an ungreased shallow baking pan. Bake, uncovered, at 325° for 1-1/2 to 2 hours or until a thermometer reads 160°-170°. - In a small bowl, combine cherries and wine; set aside. In a shallow dish, combine pepper, brown sugar, garlic powder, paprika, coffee, salt, cinnamon, cumin and mustard. - For the ice cream: In a small, heavy-bottomed saucepot, bring the goat's milk and cream to a boil. Remove from the heat and whisk in the cheese, granulated sugar and salt. Blend the cheese mixture in a blender until smooth. Transfer to a bowl. Freeze the cheese mixture in an ice cream maker according to the manufacturer's instructions. Transfer to an airtight container and put in the freezer to harden, at least 2 hours. Let the ice cream soften 5 minutes before serving.
- For the cherry vanilla sauce: Combine the cherries, orange juice, granulated sugar and cinnamon stick in a medium saucepan. Scrape in the seeds from the vanilla bean and add the bean. Bring to a boil over high heat, stirring until the sugar dissolves. Boil 1 minute. Strain into a bowl. Reserve the cherries. Return the juices from the bowl, cinnamon stick and vanilla bean to the same pan. Mix the cornstarch and 1 tablespoon water in a small bowl; stir into the juices in the pan. Stir over medium heat until the juices boil and thicken, about 1 minute. Mix in the reserved cherries. Chill the compote 2 hours.
- For the walnuts: Preheat the oven to 250 degrees F. Lightly butter a large shallow pan.
- Whisk together the egg white and 1 teaspoon water in a large bowl until frothy. Stir in the nuts. Stir together the brown sugar, cinnamon, nutmeg, allspice, pepper and cloves, and then stir into the nuts, coating well. Spread the nuts in the prepared pan and bake in the middle of the oven until dry, about 50 minutes. Cool and break into bite-size chunks.
- For the whipped cream: Beat the cream, granulated sugar and vanilla in a medium bowl until peaks form. Stir in the thyme leaves.
- To serve, scoop the ice cream into sundae bowls, top with cherry vanilla sauce, thyme whipped cream and chopped spiced walnuts.
PAN SEARED CHICKEN BREASTS WITH SPICED CHERRY SAUCE

- Season chicken with salt. lightly coat a large skillet with nonstick spray and set it over medium heat for a few minutes to warm up.
- Add chicken and cook, turning once, 8 minutes, or until cooked through. Transfer to serving plates or a platter.
- Melt butter in skillet. Add shallot and celery. Cook, stirring often, 3 minutes, or until softened. Add ginger, garlic, mustard seeds, and red pepper flake. Cook a few seconds, until aromatic.
- Stir in cherries. Cook, stirring often, until softened, about 2 minutes. Stir in vinegar and brown sugar, bring to a full boil. Cook for 1 minute, stirring constantly, until thickened. Spoon over the chicken breasts to serve.
