TRADITIONAL SPäTZLE



Traditional Spätzle image

Spätzle (pronounced "shpetz-luh") is a German-Austrian version of fresh pasta. Austrian chef Wolfgang Ban uses plenty of eggs, which makes the noodles very fluffy, and adds a pinch of nutmeg. This recipe makes 4 cups, which you can serve immediately with Ban's silky crème fraîche sauce, or toss with a bit of oil before freezing.

4 large egg yolks
4 large eggs
Kosher salt
1 whole nutmeg, may substitute ground nutmeg
2 cups all-purpose flour
3/4 cup water, divided, plus more as needed
Ice
2 tablespoons grapeseed oil, divided, or another neutral oil, such as vegetable or canola
2 cups water, divided
1 cup crème fraîche, divided
Freshly ground black pepper
1 bunch chives, for garnish, about ½ cup minced

Steps:

  • Spätzle: Bring a large pot of water to a boil. Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, add 4 egg yolks, 4 whole eggs, and a pinch of salt. Mix on medium-high until combined, 10 seconds. Turn off mixer and grate a bit of nutmeg into the eggs (just a hint will go a long way!); add the flour. Start mixing on low, then on medium-high until combined, 20 seconds. Check the consistency: the mixture should have the viscosity of thick pancake batter. To achieve this, add ½ cup water, and use the whisk attachment to beat the batter on high; with the mixer on, add more water as needed, 1 tablespoon at a time, until batter reaches proper consistency, another 1-2 minutes. (Makes 2½ cups batter.)
  • Prepare an ice bath in a large bowl and set aside. To the boiling water, add 2 large pinches salt and 1 tablespoon of grapeseed oil. Working in batches, cook the spätzle: Set the spätzle-maker over the pot. Add two ladles of batter to the sliding box; move the box back and forth over the grate and allow the batter to fall into the boiling water. Once the water comes to a boil again, stir the spätzle a few times to prevent clumping and to finish cooking, 1 more minute.
  • When all the spätzle are fluffy and floating on the surface of the water, use a strainer to transfer them to the ice bath to stop the cooking, about 1 minute. Next, strain them from the ice bath, place in a bowl, and stir in ½ tablespoon oil to prevent sticking. Set aside. Repeat with remaining batter. (At this point, you can freeze the fully cooked spätzle in an airtight container. Bring to room temperature before using. Makes about 4 cups.)
  • Cream Sauce: Heat a medium skillet over medium heat. Add ½ cup water, followed by ¼ cup crème fraîche, two pinches of salt, and a few gratings of nutmeg; stir to combine. Add 1 cup of spätzle in an even layer (note: sauce and spätzle can be doubled in a larger skillet). Add a few grinds of black pepper, and gently simmer to reduce the sauce, stirring occasionally, 8-10 minutes. As the water evaporates, the spätzle will become evenly coated with sauce and plump up. Meanwhile, finely mince the chives. Set aside.
  • When almost all the liquid is gone and the sauce has thickened up, taste and adjust seasoning. Add two tablespoons of minced chives and toss or stir to combine. Repeat with remaining servings of spätzle. Plate and serve immediately.

GOULASH AND SPATZLE

1 tablespoon sweet Hungarian paprika
1/2 teaspoon fresh ground pepper, plus more, to taste
1/8 teaspoon garlic salt
2 pounds beef chuck, cut into 1-inch cubes
1/2 cup lard or chicken fat
2 large onions, peeled and chopped fine
1 1/2 to 2 tablespoons flour
3 cups beef broth or water
2 tablespoons tomato paste
1 teaspoon caraway seeds
4 large eggs, lightly beaten
1 cup milk
3 cups flour
2 teaspoons salt
6 tablespoons butter, cut into small pieces
1 cup minced parsley

Steps:

  • To make the goulash, combine the salt, 1 teaspoon of the paprika, pepper and garlic salt in a small bowl. Season the meat with the spice mixture. Set aside.
  • In a large casserole, heat the lard or chicken fat over high heat until it begins to smoke. Add the pieces of meat in one layer and, while stirring constantly, quickly fry the meat until evenly browned, about 2 to 3 minutes.
  • Add the onions and cook until wilted, about 3 minutes. Sprinkle the flour over the meat and stir until blended. Add the remaining paprika, reduce the heat to medium low, and stir for an additional 2 minutes.
  • Add the broth or water, tomato paste and caraway seeds. Cover, and simmer over low heat until meat is tender, about 1 to 1 1/2 hours. Set aside to cool, cover and refrigerate overnight.
  • Reheat the goulash over low heat and season with salt and pepper to taste.
  • To make the spatzle, combine the eggs and milk in a large glass or ceramic bowl. Set aside. Combine the flour and 1 teaspoon of the salt in a separate bowl. Slowly add the flour mixture to the eggs and beat until smooth. Set aside at room temperature for 30 minutes.
  • Preheat oven to 200 degrees. Bring a large pot of water to a boil, and add the remaining salt. Reduce the heat to a simmer, drop 1/2 teaspoons of the dough into the water and simmer until cooked through, about 2 to 3 minutes after they rise to the surface. Drain, rinse under cold running water, drain again and transfer the spatzle to an ovenproof baking dish. Add the butter, stir, and keep warm in the oven until ready to serve.
  • Divide the spatzle into individual bowls, spoon the goulash over, and garnish with parsley.

1 lb sliced onion
2 tablespoons oil or 2 tablespoons butter
3 tablespoons instantized flour
1 tablespoon paprika

1/2 teaspoon caraway seed
3 tablespoons tomato paste
2 cups beef stock or 2 cups beef broth
salt and pepper
grated lemon, zest of (to garnish)
3 1/4 cups flour
1 teaspoon salt
1/4-1/2 teaspoon nutmeg
4 eggs, beaten
1 cup milk

Steps:

  • Cut meat into 1-inch cubes.
  • Brown onions in oil in a large heavy flameproof casserole or saucepan.
  • Add meat cubes and brown.
  • Sprinkle with flour.
  • Add paprika, marjoram, caraway seed and tomato paste.
  • Add stock or enough water just to cover meat.
  • Bring to a boil, reduce heat; cover and simmer 1 1/2 hours or until meat is tender.
  • Add additional flour to adjust the consistency, if desired.
  • SPATZLE: Sift dry ingredients.
  • Beat in eggs.
  • Add enough milk to make a heavy dough or batter.
  • Force through large-hole colander into a pot of rapidly boing salted water.
  • Boil for 6-8 minutes.
  • Remove with slotted spoon.

Quark Spätzle
1 cup quark cheese (see tips, below)
4 extra-large eggs
3 large egg yolks
2 cups all-purpose flour
1 teaspoon fine sea salt
1/4 teaspoon freshly grated nutmeg
Freshly ground white pepper
6 tablespoons unsalted butter
1 cup chopped onion
Fine sea salt and freshly ground black pepper
2 garlic cloves, chopped
1/2 nutmeg, freshly grated
Sea salt and freshly ground white pepper
1/2 pound Alpine Gruyère-style cheese, such as Hoch Ybrig or Gruyère (see Note), grated
1 cup beef stock or low-sodium canned beef broth
3 shallots, thinly sliced, for garnish
2 tablespoons chopped fresh chives, for garnish

Steps:

  • 1. Prepare the spätzle: Bring a large pot of water to a boil and salt it until it tastes like sea water (about 2 teaspoons per quart). Whisk the quark, eggs, and yolks together in a large bowl. Use a rubber spatula to stir in the flour until smooth. Season with the salt, nutmeg, and white pepper.
  • 2. Using half of the spätzle dough at a time and working quickly, push the dough through the holes of a colander (or spätzle maker) into the boiling water. Stir the spätzle and cook until the water returns to a simmer, about 1 minute. Then, using a skimmer or a large slotted spoon, transfer the spätzle to another colander. Run cold water over the spätzle to stop them from cooking further. Set that batch of spätzle aside. When the water returns to a boil, make the rest of the spätzle, repeating the procedure.
  • 3. Heat a large cast-iron skillet over medium heat. Add 3 tablespoons of the butter and then the onions. Season with salt and pepper, and cook, stirring occasionally, until soft and light brown, about 15 minutes. Add the garlic and cook until tender, another 2 minutes. Raise the heat to high and add the spätzle. Fry, stirring frequently, until the spätzle begin to turn golden, about 10 minutes. Season with the nutmeg, salt, and pepper.
  • 4. Add the cheese and fry, stirring, until it begins to brown, about 10 minutes. Add 1/2 cup of the beef stock and cook, stirring often, until it is absorbed. Add more stock until a thick, soupy consistency is achieved.
  • 5. Meanwhile, melt the remaining 3 tablespoons butter in a small saucepan over medium-high heat. Add the shallots, season with salt and pepper, and fry until they are brown and slightly crisp.
  • 6. Serve immediately, garnished with the fried shallots and chives.
  • Note: Hoch Ybrig is made in Zurich from cow's milk. It is a buttery, nutty, pungent cheese, similar in flavor to Gruyère. It is available at specialty cheese stores.

CHEESY SPäTZLE WITH MUSHROOMS AND PEAS

Spätzle is a German-Austrian version of fresh pasta and something Austrian chef Wolfgang Ban grew up eating with his grandmother. This delicious version, with spring vegetables, Gruyère, and crème fraîche, comes together in just 30 minutes.

4 large egg yolks
4 large eggs
kosher salt
1 pinch nutmeg, freshly ground, if possible
2 cups all-purpose flour
1/2 cup Water
2 tablespoons grapeseed oil, divided, or another neutral oil, such as vegetable or canola
1/2 shallot
1/2 cup fresh peas, blanched, place peas in salted, boiling water for 1 minute, then an ice bath for 1 minute; drain
4 morel mushrooms, about ½-¾ cup sliced, depending on size
Freshly ground black pepper
1 pinch nutmeg, freshly ground, if possible
Juice from ½ lemon, about 1 tablespoon
1/4 cup Water
1/4 cup crème fraîche
1 cup grated Gruyère cheese, may substitute Swiss cheese
chives, small handful; about 2 tablespoons finely chopped

Steps:

  • Spätzle: Bring a large pot of water to a boil. Meanwhile, in the bowl of a stand mixer fitted with the paddle attachment, add 4 egg yolks and 4 whole eggs, along with a pinch of salt. Mix on medium-high until combined, 10 seconds. Turn off mixer and add nutmeg to the eggs, then flour. Start mixing on slow, then on medium-high until combined, 20 seconds. Check the consistency and add water to thin, a tablespoon at a time; continue mixing until the dough is smooth and thick. Switch to a whisk attachment, then turn to high to continue to smooth out the lumps while creating viscosity in the dough, 1 more minute. When you're done, the dough should be the consistency of thick pancake batter.
  • Prepare an ice bath in a large bowl. Set aside. To the boiling water, add a large pinch salt and a tablespoon of grapeseed oil. Set the spätzle-maker on top of the pot and add two ladles of batter; push the batter through into the water. Once the water begins boiling again, stir the spätzle a few times to prevent clumping and to finish cooking, 1 more minute. When the spätzle is floating on the water and fluffy, remove to the ice bath to stop the cooking. Once cool (about a minute), use a spider strainer to remove from the ice bath. Place in a bowl and stir in a ½ tablespoon oil to prevent sticking. Set aside. Repeat with remaining batter. (At this point, you can freeze the fully cooked spätzle in an airtight container. Bring to room temperature before using. Makes about 3 cups.)
  • Assemble dish: Heat a medium skillet over high heat. Add ½ tablespoon oil. Mince the shallot and add to the pan. Trim mushroom stems, slice mushrooms in half and add to the shallots, followed by peas, a pinch of salt, a few grinds of pepper, and another pinch of nutmeg. Stir and saute 30 seconds. Add lemon juice, water, crème fraîche, and 2 cups spätzle. Bring to a simmer so the water evaporates and the crème fraîche coats the spätzle and vegetables, 30 seconds. Add cheese; stir to melt and incorporate into the dish, 1 minute more. Meanwhile, finely chop the chives and add to the dish. Stir or toss to combine. Taste to adjust seasoning, and add more salt and pepper if necessary. Remove from heat and serve immediately.

1 large egg
1 3/4 cups whole milk
1 pound (about 3 cups) all-purpose flour
1/4 teaspoon freshly grated nutmeg
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/2 cup peanut oil
1/2 cup (1/4 stick) unsalted butter, melted
1 tablespoon fresh parsley, minced

Steps:

  • In small bowl, beat together egg yolks, egg, and milk.
  • In medium bowl, whisk together flour, nutmeg, salt, and pepper. Add egg mixture to flour mixture and mix with wooden spoon just until well blended. (Do not overmix.) Refrigerate, covered, at least 1 hour or overnight.
  • Bring large pot salted water to boil. Fill large bowl with ice water. Place spätzlemaker, perforated sheet pan, or large-holed colander on top of pot. Force one-third of batter through holes into water. Cook until spätzle float to surface, 4 to 5 minutes, then transfer immediately with slotted spoon to bowl of ice water. Make 2 more batches in same manner.
  • When spätzle are cool to touch, drain well and toss with 1/4 cup oil. (Spätzle can be prepared up to this point and refrigerated, covered, up to 2 days.)
  • In large sauté pan over high heat, heat remaining 1/4 cup oil. Add spätzle and cook, without moving pan, until undersides are brown, about 2 minutes. Add butter and sauté until golden brown, about 2 minutes more. Season to taste with salt and pepper. Sprinkle with parsley and serve.

Steps:

  • Fill large kettle half-full of water and bring to a boil. Combine flour, salt and eggs in a medium-sized mixing bowl, stirring with a fork. HELEN'S BAKED SPATZLE CASSEROLE (SPAETZLE)



Helen's Baked Spatzle Casserole (Spaetzle) image

I've been making spatzle since I met my husband 10 years ago. After many tries I came up with this recipe. It's best to use a spatzle press (found at German markets) but you can use a colander. It's a pretty heavy side dish or you can make it a meal and serve it with a salad. All our German relatives and friends love it. I hope you will too!

5 eggs
2 1/2 cups flour
1/4 cup water
1 teaspoon salt
1 dash nutmeg
2 tablespoons butter
1 lb bacon
1 medium onion, chopped
3 garlic cloves, crushed
8 ounces havarti cheese, shredded
salt and pepper

Steps:

  • For the spatzle, mix eggs, water, salt and nutmeg well. While mixing slowly add flour until it is mixed and smooth.
  • Using a spatzle press or colander press small batches of dough into boiling water when it floats to top mix it once and continue to boil about 5 minutes(or once it floats,keep in very hot but not simmering water in separate pot, while cooking the rest). Remove it from water with long tongs and put it in casserole. Cook the rest of the dough adding to the casserole or hot water. Use butter to keep them from sticking together.
  • Now for the casserole, Preheat oven to 350°F.
  • Cut bacon into small strips and saute with onion, add garlic for the last few minutes.
  • Drain off fat.
  • In big mixing bowl add cooled spatzle, bacon mixture, shredded Havarti add salt and pepper to your taste.
  • Spray 9x13 casserole with cooking spray and pour spatzle mixture in it.
  • Cook about 30 minutes Just until it begins to brown.

SPäTZLE (AKA SPAETZLE)

Apparently spätzle translates to little swallows in German, which makes a lot of sense when you consider their shape. These micro-dumplings cook in a just a few minutes, and are great plain with browned butter or topped with slowly braised meat.

½ cup all-purpose flour, plus more as needed
1 large egg
½ teaspoon kosher salt
1 pinch cayenne pepper
1 tablespoon creme fraiche, sour cream, or plain yogurt
3 tablespoons milk, or as needed

Steps:

  • Place flour, egg, salt, cayenne, cream fraiche, and milk in a mixing bowl. Whisk together until batter drips slowly off the whisk. If batter seems too thin, add a bit more flour; if too thick, add a bit more milk. You can test the thickness using the smooth side of a cheese grater with fairly large holes. If a dollop of the batter does not drip through the grating holes, it's the right consistency.
  • Bring a pot of salted water to a simmer over medium-high heat. Use a spatula to push a spoonful of batter through the holes of the smooth side of the grater into the simmering water.
  • When dumplings rise to the surface of the water, they are done. This will take just a few minutes. Remove dumplings with a slotted spoon, and repeat in batches with remaining batter.

Hungarian Mushrooms With Spaetzle (Spätzle) image

Not healthy and low fat! I first tried this in the middle of a bitter winter and was hooked. I have never seen dumplings made this way anywhere else but they are great for soaking up the lovely sauce!

25 g butter
1 medium onion, chopped
475 g mixed mushrooms, cleaned, chopped chunky
sea salt
fresh ground black pepper
1 tablespoon paprika, ideally Hungarian
1/2 teaspoon cayenne pepper
1 cup sour cream
3 tablespoons chopped fresh dill
250 g plain flour
1/2 teaspoon salt
1 large egg, beaten
200 -250 ml milk

Steps:

  • Mushrooms:.
  • Heat a wide pan over a low flame and add butter. Add onions and cook until soft and translucent.
  • Add the mushrooms, salt and pepper, raise the heat and stir. When the moisture from the mushrooms has been released, allow it to evaporate, concentrating the flavour. This might happen quickly or slowly, depending entirely on the type of mushrooms used.
  • Add the paprika and cayenne then fry for a few moments more, until the paprika turns a shade darker. Finally, add the sour cream or crème fraiche and dill, and allow it bubble gently for about 5 minutes more.
  • Spatzle:.
  • Choose a large boiling pot and a large-hole colander which will rest on top of the pot. Fill the pot with water and rest the colander on top, so that the base of the colander is at least 5cm / 2 inches above the surface. Bring to the boil, salt it well, and reduce to a simmer.
  • Meanwhile, mix the salt into the flour. Add the egg and gradually work in the milk. You may need more or less milk, but you want to achieve a consistency somewhere between a dough and a batter, though leaning towards batter - you should be able to push it through the holes of the colander quite easily.
  • Using a large metal spoon, scoop part of the batter into the colander and push it through into the simmering water. The spatzle will sink to the bottom, then rise when cooked. Remove cooked spatzle with a slotted spoon and keep warm while you cook the remaining batches.

3/4 cup water
1/8 teaspoon freshly grated nutmeg
Salt and freshly ground pepper to taste
1 1/2 cups all-purpose flour
2 tablespoons butter
1/2 teaspoon finely chopped garlic
4 tablespoons finely chopped parsley

Steps:

  • Place the eggs in a mixing bowl. Add the water, nutmeg, salt and pepper. Blend well with a wire whisk. Add the flour with a rubber spatula. Mix well.
  • Put a large quantity of water in a saucepan, bring to a boil and add salt. Pour the spatzle mixture into a colander over the boiling water. Press the mixture through the holes of the colander with a rubber spatula or a large spoon. Cook briefly or until the noodles rise to the surface. Drain well. The spatzle could be made in advance.

Caramelized Salsify, Spatzle and Roasted Vegetable Broth image

3 medium onions
2 carrots
1 rutabaga
2 parsnips
1 fennel bulb
2 tablespoons canola oil
1/2 teaspoon kosher salt
Freshly ground pepper to taste
3 sprigs fresh thyme
4 stalks salsify, peeled and halved crosswise
1 quart milk
1 tablespoon unsalted butter
Salt and freshly ground pepper to taste
1/2 cup milk
3 eggs, lightly beaten
2 tablespoons coarse Dijon mustard
2 teaspoons kosher salt
1 teaspoon freshly ground pepper
2 cups plus 2 tablespoons flour
2 teaspoons unsalted butter

Steps:

  • For broth, preheat oven to 450 degrees. Peel and dice vegetables and place in a large roasting pan or 2 pans to avoid overcrowding. Toss with the oil. Roast until browned, stirring occasionally, about 45 minutes. Transfer to a large pot and add 4 cups of water. Place over medium heat and simmer until broth is reduced to 2 cups, about 30 minutes. Strain and stir in 1/2 teaspoon of salt, pepper and thyme. Set aside.
  • Place salsify and milk in a large pot over medium heat. Simmer until tender, about 30 minutes. Drain and rinse under cold water. Cut in half lengthwise and then across into 2-inch pieces. Melt 1 tablespoon of butter in a large skillet over medium heat. Add the salsify and cook until it turns light brown, about 5 minutes. Season with salt and pepper.
  • For spatzle, whisk together the milk, eggs, mustard, salt and pepper. Add flour and stir until smooth. Bring a large pot of water to a boil. Place a one-sided grater with large holes over the pot and press the spatzle mixture through the holes, letting it drop into the pot. Cook until spatzle rises to the top, about 1 to 2 minutes. Drain.
  • To serve, reheat broth and salsify. Melt 2 teaspoons of butter in a nonstick skillet over medium heat. Add spatzle and toss until heated through. Divide salsify among 4 bowls and top with spatzle. Remove thyme from broth and ladle into the bowls. Serve immediately.

GERMAN SPäTZLE



German Spätzle image

With a nice texture and buttery flavor, this is a great side dish to serve! Quick and easy, it's a delicious comfort food to enjoy!

2 c unbleached all-purpose flour
1 tsp ground himalayan sea salt
4 lg free-run eggs, beaten
2/3 c milk, or as needed
1 Tbsp coarse sea salt
3 Tbsp butter
1 tsp freshly ground black pepper, or to taste (i always use mixed peppercorns)
1/2 Tbsp fresh chopped parsley, for garnish

Steps:

  • 1. In a mixing bowl, add flour and ground sea salt; whisk to combine. Transfer the flour mixture to the bowl of a food processor and form a well in the center.
  • 2. In another bowl, beat the eggs before pouring in ½ cup of milk; whisk until well blended. Add the egg mixture to the well and, using the paddle attachment, process for 1 minute on low speed. Increase to speed 4 and process for 5 minutes, stopping halfway through to clean the sides of the bowl.
  • 3. When time is up, add a little bit of milk, ½ a tablespoon at a time, and process for 30 seconds between each addition until the batter is smooth but not too runny. When the desired consistency is reached, let it rest for 10 minutes.
  • 4. Add 1 tbsp. coarse sea salt to a large pot of water and bring to a boil. Working in batches, scoop batter into a spätzle press and push it through into the water. Cook the noodles for 2 to 3 minutes or until they rise to the top which is an indication they're done.
  • 5. Scoop them up into a bowl and transfer to a colander. Rinse the noodles immediately with cold water to stop the cooking process and drain them well; set aside while cooking the remaining batter.
  • 6. In a skillet over medium-high heat, add butter and when it starts sizzling, add the cooked noodles. Sauté for about 4 to 6 minutes or until the edges start to brown a little bit. If desired, add seasoning and herbs like paprika, freshly ground black pepper, garlic powder, chives, dill, cheese, etc.
  • 7. When the noodles start to change to a nice golden color, remove from the heat, sprinkle some fresh chopped parsley and serve immediately.

1 1/2 cups all-purpose flour
1/4 teaspoon nutmeg
Kosher salt and freshly ground black pepper
1/2 cup whole milk
2 large eggs
Neutral oil, for the bowl and spatzle maker
2 tablespoons unsalted butter

Steps:

  • Whisk together the flour, nutmeg, 1/2 teaspoon salt and a few turns of black pepper in a medium bowl. Whisk together the milk and eggs in a separate bowl. Whisk the egg mixture into the dry ingredients and stir to combine. Cover and refrigerate for 30 minutes.
  • Bring a large pot of salted water to a boil. Working in batches, press the spatzle dough through a greased spatzle maker or slotted spoon (the slots should be on the larger side, about 1/4- to 1/2-inch), using a rubber spatula, into the boiling water. Cook for 2 to 3 minutes. When the spatzle float to the top, remove with a slotted spoon and transfer to a medium oiled bowl.
  • Heat a large skillet over medium heat and add the butter. Heat until the butter melts and begins to brown. Add the spatzle and saute until they begin to brown slightly. Season with salt. Transfer to a plate and serve!

  • Grind carrots in a blender or food processor until fine.
  • Add milk an blend for 30 seconds.
  • Add all other ingredients and blend well, use spatula if needed.
  • Cover and let rise in a warm place for 10 minutes.
  • In the meantime bring water to a boil, than add salt.
  • (If you add salt before boiling it will take longer.) Mix batter again for some seconds.
  • Put colander or spaetzle press over boiling water and press the batter through it.
  • Stir from time to time.
  • When Spatzle rise to the surface after some minutes they are ready to eat.
  • Drain and fry in a pan with hot butter and salt.
  • Eat them in a soup, as Kasespaetzle with melted cheese or just like other noodles- just as you like!

2 whole eggs
2/3 cup milk
Salt to taste
1/2 teaspoon freshly grated nutmeg
2 tablespoons butter
Freshly ground pepper to taste
2 tablespoons finely chopped parsley

Steps:

  • Place the flour in a mixing bowl. Beat the eggs separately and add them to the flour, stirring with a wire whisk or electric beater. Gradually add the milk, salt and nutmeg, beating until smooth.
  • Bring a large quantity of water with salt to a boil. Holding a colander over the boiling water, pour the batter into the colander. Press the batter through the holes of the colander into the boiling water with a rubber spatula or large spoon. Stir gently. The spatzle are done when they float on top of the water, in about one minute. Drain and transfer them to a clean towel to dry briefly.
  • Heat the butter in a nonstick skillet and when bubbling add the spatzle with salt and pepper, tossing and stirring a few minutes. Add the parsley and serve immediately.
