1 ½ teaspoons superfine sugar
1 fluid ounce 151-proof rum
¾ fluid ounce triple sec (such as Bols®)
2 ½ fluid ounces coffee-flavored liqueur (such as Kahlua®)
½ cup freshly brewed coffee

Steps:

  • Pour sugar into a shallow dish. Wet the rim of the glass and dip in sugar to coat. Add rum and triple sec. Use a long match or lighter to carefully ignite the mixture. Turn glass slowly until sugar begins to caramelize. Pour in coffee liqueur to put out the flame. Top with hot coffee.

Vanilla bean
2 cups sugar
Wedge of lime
1 1/2 ounces orange liqueur (recommended: Cointreau)
1/2 ounce almond liqueur (recommended: Amaretto)
1 ounce coffee liqueur
1 ounce cognac
1 1/2 cups coffee
Whipped cream
Chocolate shavings

Steps:

  • A few days before you make the coffee, split the vanilla bean in half the long way, and place it with the sugar in a closed container. To make the coffee, warm 2 brandy snifters. Take the wedge of lime and run it around the edge of the glass to wet the rim. Dip it in the vanilla sugar. Pour the orange liqueur into the glasses and, one at a time, light it on fire and tilt the glass to caramelize the vanilla sugared rim. Douse the flame with a little coffee. In a copper saucepan place the almond liqueur, cognac and coffee liqueur and warm them. Divide them between the 2 snifters then top them off with more coffee. Garnish with whipped cream, chocolate shavings and a straw.

  • Rub lemon around the rim of the glass, then dip into a dish of raw sugar.
  • Warm brandy in a pan or a chafing dish. Pour into glass and ignite. Add jigger of Kahlua and ignite. Pour in hot coffee, leaving about 1 1/2". Add whipped cream, level to the top of the glass.

4 brownies or pound cake slices
1 pint coffee ice cream
1 cup prepared hot fudge sauce
2 tablespoons dark roast coffee beans
1/4 cup strong coffee
1/2 cup salted Spanish peanuts (the small peanuts with skins)

Steps:

  • Line dessert bowls with brownie squares or pound cake. Set coffee ice cream out to soften a bit. Heat hot fudge sauce over low heat or in the microwave. Place dark-roast coffee beans in a heavy duty plastic food storage bag and crush them with a small heavy skillet or mallet. If you have a coffee grinder, grind the beans on coarsest setting. Add beans to sauce with 1/4 cup (2 ounces), strong coffee. Scoop coffee ice cream on cake or brownies. Top with coffee fudge sauce and salted nuts and serve. WOW!

1 lemon wedge
granulated sugar, for the rim as needed
1 oz cognac or brandy, or to taste
1 1/2 oz tia maria, or to taste (substitute kahlúa)
6 oz hot coffee
whipped cream, as needed
1 large maraschino cherry
1 pinch ground cinnamon (substitute ground nutmeg or baharat)

Steps:

  • 1. Cut a small slit in the lemon wedge and slide it around the rim of the glass. Dip the rim in granulated sugar and turn back and forth to coat well.
  • 2. Add Cognac, Tia Maria and pour in hot coffee. Top generously with whipped cream, sprinkle on some cinnamon and garnish with a cherry. Carefully wrap a serviette around the glass and enjoy! Makes 1 coffee

2 1/2 C flour
1/2 C sugar
3/4 C brown sugar
1 tsp nutmeg
1 tsp salt
3/4 C salad oil
1 C sour milk (add 1 tsp lemon juice to sour)
1 tsp soda
1 egg beaten
2 tsp cinnamon
1 1/2 C nuts chopped (I like walnuts but you choose)

Steps:

  • Preheat oven to 350F Combine flour, sugar, brown sugar, nutmeg, salt and oil then mix till crumbly. Reserve 3/4 C of mixture for top of cake, add cinnamon and nuts and mix well. To first mixture add sour milk, soda, and egg and mix well. Pour into shallow pan and cover with cake top mixture. Bake at 350 for about 30 minutes or until toothpick comes out clean.

1 oz 151 Rum
Nutmeg
1 ds Triple Sec
Whipped Cream; To Garnish
Lime juice
Granulated sugar

Steps:

  • Dip the rim of an 8- to 10-ounce glass in lime juice and then in sugar.
  • Add the rum and Triple Sec.
  • Pour in the Kahlua and then add the coffee. Top with whipped cream and sprinkle with nutmeg. Serve immediately. I don't ever do the flame.
