Vegetable Beef Soup image

No one in my house ever complains when I say, "I'm making vegetable beef soup tonight." We love this soup with a slice of fresh potato bread. This soup is hearty and ever so comforting especially on those cold winter nights.

Number Of Ingredients 10

1 1/2 lb beef stew meat or steak cut into small cubes
1 medium onion, finely chopped
1 c cabbage, finely chopped
8 c water
1 c celery, cut into small pieces
1 1/2 c carrots, cut into small pieces
2 c potatoes, cut into small pieces
1/2 c elbow or shell pasta
1 28 oz can of diced or stewed tomatoes (your preference)
salt and pepper to taste

Steps:

  • 1. Combine beef, onions, cabbage and water in large pot. Cook for 1 hour. Add celery, carrots, and potatoes and cook for 45 minutes. Add pasta and cook until tender (about 8 minutes). Add tomatoes. Salt and pepper to taste.
