There is nothing nicer than the flavor of fresh tomatoes. You can use canned, but the trouble you take to prepare this dish is worth it. You prepare the sauce while the pasta is cooking, no long hours of waiting. Great if you want meatless pasta.

1 (8 ounce) package angel hair pasta
2 pounds tomatoes
4 cloves crushed garlic
1 tablespoon olive oil
1 tablespoon chopped fresh basil
1 tablespoon tomato paste
salt to taste
ground black pepper to taste
¼ cup grated Parmesan cheese

Steps:

  • Place tomatoes in a kettle, and cover with cold water. Bring just to the boil. Pour off water, and cover again with cold water. Peel. Cut into small pieces.
  • Cook the pasta in a large pot of boiling salted water until al dente.
  • In a large skillet or saute pan, saute the garlic in enough olive oil to cover the bottom of the pan. The garlic should just become opaque, not brown. Stir in the tomato paste. Immediately stir in the tomatoes, and salt and pepper. Reduce heat, and simmer until the pasta is ready; add the basil.
  • Drain the pasta, but do not rinse in cold water. Toss with a couple of tablespoons of olive oil, and then mix into the sauce. Reduce the heat as low as possible. Keep warm, uncovered, for about 10 minutes when it is ready to serve. Garnish generously with fresh Parmesan cheese.
  • VARIATIONS: Saute fresh quartered mushrooms with the garlic, or add shoestring zucchini along with the tomato.

12 ounces spaghetti
3 tablespoons olive oil
6 garlic cloves, slivered
6 plum tomatoes, diced

Steps:

  • In a large pot of boiling salted water, cook spaghetti until al dente, according to package instructions;drain. Rinse with cool water.
  • Wipe pasta pot dry; heat remaining 2 tablespoons oil over medium-high heat. Add garlic;cook, stirring, until soft, about 1 minute. Add tomatoes, 2 teaspoons salt, and 1/4 teaspoon pepper; cook, stirring occasionally, until tomatoes are saucy, 2 to 3 minutes.
  • Return remaining pasta to pot; cook, tossing occasionally, until heated through, 1 to 2 minutes.

12 ounces spaghetti
1 pound lean ground beef
1 teaspoon salt
¾ teaspoon white sugar
1 teaspoon dried oregano
¼ teaspoon ground black pepper
⅛ teaspoon garlic powder
2 tablespoons dried minced onion
2 ½ cups chopped tomatoes
1 ⅓ (6 ounce) cans tomato paste
1 (4.5 ounce) can sliced mushrooms

Steps:

  • Brown beef over medium heat. Drain off fat.
  • In a large pot, combine beef, salt, sugar, oregano, pepper, garlic powder, onion flakes, diced tomatoes, tomato paste, and mushrooms. Simmer at a low heat setting for 2 hours, stirring occasionally.
  • Cook pasta according to package directions. Drain. Serve sauce over spaghetti.

This is a very common recipe that we make in Greece, during the Easter lent. The sauce has a very strong taste so there is no need for cheese on the top. Some people are adding cheese at the top but I never do.

500 g spaghetti
1 onion, large chopped into rings
3 garlic cloves, chopped
2 tomatoes, cubed
1 tablespoon tomato paste
3 tablespoons olive oil
1/2 teaspoon sugar
2 chili peppers
salt
1 dash ground cinnamon
1 dash ground nutmeg
1 dash ground cloves

Steps:

  • Heat the oil and sauté until onions turn translucent. Add the garlic and cook for 1-2 minutes.
  • Add the tomatoes, the tomato paste, the sugar and the chilies. Cook until it boils and then reduce the heat on low.
  • Add the spices 5-10 minutes before turning the heat off.
  • Meanwhile cook and drain the pasta.
  • Add the cooked pasta hot at the sauce and let them stand for 2-3 minutes.
  • Ready to serve.
  • I like to add some pepper on my plate!

8 local tomatoes
6 tablespoons olive oil
3 cloves garlic, chopped
Salt
1 pound spaghetti
2 tablespoons freshly grated Parmesan
Crushed red pepper flakes, for sprinkling
Olive oil, for drizzling

Steps:

  • For the sauce: Using a small knife, peel the skins off the tomatoes. Chop the tomatoes by hand and drain in a colander.
  • Combine the olive oil, garlic and some salt in a bowl. Mix together and let the mixture sit for 1 hour.
  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and plate the pasta. Heat the tomato mixture in a pan for just a couple of minutes until it becomes warm, not cooked.
  • To plate: Pour the tomato mixture over the pasta and garnish with the Parmesan, some crushed red pepper flakes and a drizzle of olive oil.

2 pounds ripe tomatoes
3 tablespoons extra-virgin olive oil
1 red onion, finely chopped
3 garlic cloves, thinly sliced
1 tablespoon fresh thyme leaves
1 oregano sprig
Pinch chili flakes
1 teaspoon sugar
1 pound dried angel hair pasta
1/4 cup grated Parmesan, plus more for garnish
1/4 cup chiffonade basil, plus whole sprigs for garnish

Steps:

  • Bring a large pot of water to a boil and prepare an ice water bath. Cut a small "x" on the bottom of each tomato. In batches, place the tomatoes in the boiling water and blanch them for about 30 seconds to 1 minute, or until the skins are easy to peel away. Remove and immediately plunge into the ice bath. Peel the tomatoes and halve horizontally. Squeeze out the seeds, using your fingers to get them all. Roughly chop the peeled and seeded tomatoes. Set aside. (You can also use whole peeled canned tomatoes. Simply drain them, seed, and roughly chop).
  • Heat a large saute pan over medium high heat. Add the olive oil and heat. When the oil is hot, add the onions and garlic and saute for 2 minutes. Add the thyme leaves, oregano sprig, and chili flakes and saute until the garlic begins to turn golden brown. Add the tomatoes and the sugar and stir well. Lower the heat and cook slowly until the mixture is fairly dry, about 15 minutes.
  • Cook the angel hair pasta in boiling, salted water until al dente. Drain the pasta and add it to the sauce. Add the Parmesan and basil and toss well. Place in a large pasta bowl and garnish with Parmesan and basil sprigs.

GARLIC SPAGHETTI SAUCE

I adopted this recipe from Zaar some time ago and finally got round to trying it myself. It's quick and simple and full of fresh flavours. I prefer using basil but the original recipe stated parsley so I left it here for you to choose. Try adding some sliced black olives, fried or marinated mushrooms or sun blush tomatoes at the end.

1/2 cup garlic (minced)
1/4 cup butter
1/4 cup extra virgin olive oil
1/2 cup chopped basil or 1/2 cup parsley
grated parmesan cheese

Steps:

  • To make spaghetti sauce, cook garlic in butter and olive oil over medium low heat just until the garlic is soft but not browned.
  • Stir in the parsley or basil and cook for 2 minutes (stirring constantly) until the herbs are limp but still green.
  • Pour sauce hot over cooked spaghetti, toss lightly to coat and top with parmesan cheese.
  • Serve with french bread and extra Parmasan cheese at the table.
  • This garlic sauce will cover 3/4-1 pound of spaghetti or other pasta.

1 medium spaghetti squash (about 4 pounds)
1 pound lean ground beef (90% lean)
2 cups sliced fresh mushrooms
4 garlic cloves, minced, divided
4 plum tomatoes, chopped
2 cups pasta sauce
1/2 teaspoon pepper, divided
1 tablespoon olive oil
1/4 teaspoon salt
Grated Parmesan cheese, optional

Steps:

  • Preheat oven to 375°. Cut squash lengthwise in half; remove and discard seeds. Place squash in a 13x9-in. baking pan, cut side down; add 1/2 in. of hot water. Bake, uncovered, 40 minutes. Drain water from pan; turn squash cut side up. Bake until squash is tender, 5-10 minutes longer., Meanwhile, in a large skillet, cook beef and mushrooms over medium heat until beef is no longer pink, 6-8 minutes, breaking up beef into crumbles; drain. Add half of the garlic; cook and stir 1 minute. Stir in tomatoes, pasta sauce and 1/4 teaspoon pepper; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes., When squash is cool enough to handle, use a fork to separate strands. In a large skillet, heat oil over medium heat. Add remaining garlic; cook and stir 1 minute. Stir in squash, salt and remaining pepper; heat through. Serve with meat sauce and, if desired, cheese.
