1 lb extra-lean ground beef round
1/2 lb ground turkey
3/4 c salsa
3/4 c soft bread crumbs
1 c chopped onion
1/2 c whole kernel corn
2 large eggs, lightly beaten
2 clove garlic, minced
2 tsp chili powder
1 tsp ground cumin
1/4 tsp black pepper
1/8 tsp salt
1/4 c tomato sauce
1 Tbsp ketchup
1 tsp brown sugar

Steps:

  • 1. Preheat oven to 350°F. Lightly grease a loaf pan, or 3 or 4 mini loaf pans. You may pre-cook the chopped onions and corn kernels in the microwave for 1-2 minutes if you like; this is supposed to help the meatloaf retain its "slice-ability." I like the flavor of the precooked vegetables.
  • 2. In a large bowl, combine the beef, turkey, salsa, bread crumbs, onions, corn, eggs, garlic, chili powder, cumin, pepper, and salt. Mix well. Form into a loaf and place in the prepared loaf pan. May also be divided evenly into 3 or 4 mini loaf pans.
  • 3. In a small bowl, combine the tomato sauce, ketchup, and brown sugar. Spread over the top of the meat loaf. Cover with foil and bake for 1 hour, or until a meat thermometer reads at least 160°F. Uncover and bake for 5 minutes more, or until the top browns slightly. Let stand 10 minutes before slicing.
  • 4. If using mini loaf pans, they only take a total of 30 minutes.
  • 5. Recipe Notes To freeze, remove the cooled cooked loaf from the pan. Wrap with a double layer of freezer-quality foil. To use, thaw overnight in the refrigerator. Bake the foil-wrapped loaf at 350°F for 20 minutes, or until hot.

Meatloaf is always a treat, and better on subsequent days as a sandwich! This is one I put together last night.

1 pound(s) ground beef, i used 90% lean
1 pound(s) ground turkey, i used 93% lean
2 - eggs, beaten
1 can(s) diced tomatoes with chipotle, 10 ounce
1 1/2 teaspoon(s) ground cumin
1 tablespoon(s) dark chili powder
1/8 teaspoon(s) celery seed
2 clove(s) garlic, minced
- salt and ground pepper to taste
1/2 cup(s) rolled oats
1/2 cup(s) ketchup

Steps:

  • Preheat oven to 375 degrees and spray a large loaf shaped baking dish with cooking spray.
  • In a large mixing bowl, gently combine the ground beef and ground turkey. Add the eggs stirring to distribute. Mostly drain the can of diced tomatoes with chipotle and pour over the meat mixture.
  • Add the cumin, chili powder, chopped garlic, celery seed and salt/pepper as desired. Gently combine before adding the oats and ketchup before mixing all together. Do this gently and do not over mix, work together with your hand just until combined.
  • Mixture should be very juicy, but solid enough to pick up in your hands and toss about to form a "roll" to place in the prepared pan. Bake uncovered for about 45 minutes or until cooked through and brown on top.
  • I personally do not care for it, but you could easily add regular ketchup, or spiced-up ketchup and spread on top during the last half of baking. Allow to sit in the pan for about 10 minutes before removing to a serving plate. Cut in thick slices and enjoy.
