This recipe has been in our family for a long time, but I'm not sure where it originated. Though it has a Southwestern flair, we love it here in Missouri.

1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons butter
2 cans (15-1/2 ounces each) golden hominy, rinsed and drained
2 to 3 teaspoons chili powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a saucepan, saute onion and green pepper in butter until tender. Add the remaining ingredients. Cook, uncovered, over medium-low heat for 5-10 minutes or until heated through, stirring occasionally.

1 cup chopped onion
2 garlic cloves, minced
2 cans (15-1/2 ounces each) yellow hominy, drained
2 cups chopped tomatoes
1 can (4 ounces) chopped green chilies
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon pepper
1/2 cup shredded reduced-fat cheddar cheese

Steps:

  • In a large skillet that has been coated with cooking spray, saute onion and garlic until tender. Add the hominy, tomatoes, chilies, chili powder, cumin and pepper; mix gently. , Transfer to a 2-qt. baking dish that has been coated with cooking spray. Bake, uncovered, at 350° for 25 minutes. Sprinkle with cheese; bake 5 minutes longer or until the cheese is melted.

1/2 cup (or more) salsa verde

Like the rest of the northeast, it's been a hot summer here in Eastern Maine; however, most of us here don't have airconditioning, so I'm on the lookout for interesting whole-meal salads! Found this on epicurious. If you haven't tried hominy, it's about time: it's corn treated with cooking lye, so that it comes out with a texture and flavor somewhere between corn and garbanzo beans. Recipe calls for yellow hominy, but all we can find here is white; doesn't make any difference in the taste, from what I can tell. Give it a little time in the refrigerator before serving so it's nice and cold!

2 avocados, peeled, pitted, diced

1 cup salsa verde (or more)

I love hominy, but I rarely find recipes to use it. Recipe courtesy of Jim Fobel's Casseroles. He says to serve this with burgers, broiled salmon, or roasted/barbecued meat. Jim also says you can roast 8 ounces of poblano chilies for a fresher, bigger flavor (peel, seed, and chop. For more flavor serve sprinkled with chopped cilantro and sliced scallions. I enjoyed it with 8 ounces of chilies. Thank you Jim Fobel, you always have the best casserole recipes. YUMMY!

1 cup low-fat plain yogurt
1/2 cup sour cream
1/2 teaspoon hot pepper sauce
4 ounces mild green chilies, drained and chopped
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon dried oregano, crumbled
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
32 ounces yellow hominy (or a combination) or 32 ounces white hominy, rinsed and drained (or a combination)
16 ounces pink beans, rinsed and drained (or substitute kidney beans, black beans, or pinto beans)
1/2 cup sharp cheddar cheese, grated
1/2 cup monterey jack cheese, grated
1/2 teaspoon sweet paprika
cilantro, chopped
scallion, sliced

Steps:

  • Preheat the oven, and prepare the casserole or gratin dish by oiling.
  • In a large bowl, stir together the yogurt, sour cream, and hot pepper sauce.
  • Add the chilies, flour, salt, oregano, cumin, and pepper.
  • Stir to combine.
  • Stir in the hominy and beans.
  • Toss together both cheeses and stir half of it into the mixture.
  • Turn into the prepared casserole and sprinkle with the remaining cheese and the paprika.
  • Bake for 35 or 40 minutes, or until lightly browned and bubbly around the edges.
  • Serve hot. Top with cilantro and scallions if desired.
  • To reheat, cover the casserole with aluminum foil.
  • If at room temperature, reheat at 325 for about 30 minutes.
  • If cold, add 10 to 15 minutes.

I am one of those people who likes hominy, particularly in Southwestern soups and stews. Came across this side dish in a new Weight Watchers cookbook and decided that it would soon be making an appearance on my dinner table.

2 medium poblano chiles
1 tablespoon vegetable oil
1 small red onion, chopped
2 garlic cloves, finely chopped
1/2 teaspoon cumin
1/2 teaspoon epazote or 1/2 teaspoon oregano
1 (15 ounce) can hominy, drained
1 (10 ounce) bag frozen corn
salt
3 tablespoons chopped fresh cilantro
1 1/2 tablespoons lime juice, freshly squeezed
1 lime, cut into wedges

Steps:

  • Remove the frozen corn from the freezer to begin defrosting.
  • To prepare the Poblano chiles, place them directly over gas flame on your stove. Allow the skin to char and blister before turning using long tongs (or well padded fingers). Once all sides are charred, about five minutes, toss the peppers in a resealable bag and close. Set aside about ten minutes to allow the heat to steam the chiles. Once cooled, peel and seed the peppers, and give them rough chop.
  • Heat the vegetable oil in a non-stick skillet over medium heat. Add the onions and cook for two or three minutes until the onions are tender. Stir in the garlic, cumin and epazote/oregano and continue to cook another 30 seconds.
  • Add in the corn and hominy, stirring occasionally, and cook for two minutes. Stir in the Poblanos and salt to taste. Cook an additional two or three minutes until the everything is heated through.
  • Remove from heat and mix in the cilantro and lime juice.
  • Serve with lime wedges.

1-12.5 oz cans of yellow or white hominy, drained
2 cups chopped tomatoes
1-4oz can chopped green chilis
1 tsp chili powder
1/2 tsp cumin
1/4 tsp pepper
1/2 cup shredded cheddar or mexican cheese

Steps:

  • In a large skillet, saute onions and garlic until tender. Add hominy, tomatoes, chilis, chili powder, cumin and pepper. Mix gently. Transfer into a 2 quart baking dish coated with cooking spray. Bake uncovered for 25 minutes at 350 degrees. Sprinkle with cheese and bake 5 more minutes or until cheese is melted. Serves 10-12 people
