When a friend needs a night off from cooking, I throw together this one-pot meal. I deliver it with tortilla chips, shredded cheese and sour cream for garnish. - In a Dutch oven, saute chicken in oil until no longer pink. Remove with a slotted spoon and set aside. In the same pan, saute onion and jalapeno pepper until tender. Add garlic and saute; cook 1 minute longer., Stir in the broth, corn, beans, lime juice, salt, hot pepper sauce, pepper and reserved chicken; bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Stir in cilantro. Top each serving with crumbled tortilla chips and cheese.

SOUTHWESTERN BEAN SOUP WITH CORNMEAL DUMPLINGS
I altered this recipe from my Fix - It and Forget - It cookbook. Yummy bean soup with a southwestern twist that is made in your slow cooker. The cornmeal dumplings is a wonderful addition to this soup.

Steps:
- Combine 11 soup ingredients in slow cooker.
- Cover and cook on low 10 - 12 hours or high 4 - 5 hours.
- Make cumplings by mixing together flour, cornmeal, baking powder, salt and pepper.
- Combine egg white, milk and oil. Add to flour mixture. Stir with fork until just combined.
- At the end of the soup's cooking time, turn slow cooker to high. Drop dumplings by rounded teaspoonfuls to make 8 mounsd atop the soup.
- Cover and cook for 30 minutes (do not lift cover).
- Serve topped with your choice(s) of sour cream, shredded cheddar cheese and crushed tortilla chips.
SOUTHWESTERN CHICKEN AND BEAN SOUP (CROCK POT)
This soup has a good chili flavor and is simple to pull together even when the refrigerator is looking pretty bare. I do substitute fresh ingredients when I have them and the time to prepare them, but I list canned ones here for convenience (and they do taste pretty good anyhow!). I leave the seeds in my chili pepper, but take them out if you want a milder taste, and adjust the seasonings accordingly as well. This soup is very flexible - it's a good way to use up leftover chicken, beans and corn, and I believe you could use ground beef or turkey or TVP in this just as easily as chicken breast. I found a 6 can soup recipe on the web, but I altered it so much that it became something new, and this is the result.

- Drain and rinse the beans and place in a 6 quart crock pot.
- Add the chicken, corn, and tomatoes with their juices to the beans.
- Add the remainder of the ingredients and stir.
- Cover and cook on low for 6 hours or more.
- We like this better the second day, and really don't think it can be overcooked!
- Serve the soup in large bowls and top with cheese, sour cream, and/or chips, if desired.

- In a large saucepan, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving drippings. Crumble bacon and set aside. In the drippings, saute the onion, celery and garlic powder until vegetables are tender., Add the beans, picante sauce, broth, parsley and bacon; bring to a boil. A tasty, light bean soup. Inspired by Lorna Sass' recipe in "Great Vegetarian Cooking Under Pressure". I've eliminated oil and increased the zip. I love that it can be on the table in well under 30 minutes.

- Place 1 cup of vegetable broth in 4 quart (or larger pressure cooker). Bring to a full simmer.
- Add garlic to broth, simmer 1 minute.
- Add chopped onions and diced red bell pepper to garlic broth mix. Simmer 2 minutes.
- Drain and rinse pinto beans from overnight soak. Add to the mixture in the pressure cooker.
- Add oregano, cumin, chipotle peppers, corn and water to the pressure cooker.
- Bring to a full boil. Seal cooker with lid and bring to high pressure.
- Cook beans at high pressure for 10 minutes. Allow pressure to come down naturally (or you may use speed release if your pressure cooker supports this).
- Put tomato paste in blender. Add 1 cup of the bean mixture to the blender and puree.
- Return the pureed mixture to the cooker and season with salt and pepper to taste.
- Garnish with diced tomatoes, cilantro and avocado and green onions.
SOUTHWESTERN STYLE FIFTEEN BEAN SOUP
Tasty fifteen bean soup with a southwestern flair! I cook it in a slow cooker beginning the night before, and it is a hot meal when we get home from work the next day.

SOUTHWESTERN PINTO BEAN SOUP
Steps:
- In a bowl soak beans in water to cover by 2 inches overnight or quick-soak (procedure follows) and drain.
- In a heavy kettle sauté onions and garlic in oil over moderately high heat, stirring, until pale golden. Add bell peppers and cook over moderate heat, stirring, until softened. Add chili powder and cumin and cook, stirring, 30 seconds. Add drained beans and the 6 cups water and simmer, covered partially, until tender, about 1 to 1 1/4 hours.
- While soup is simmering, in a skillet brown chorizo, in batches if necessary, over moderately high heat and transfer to paper towels to drain. Add chorizo to soup with tomatoes, broth, enchilada sauce, and salt to taste and simmer, covered partially and stirring occasionally, 30 minutes. Soup may be made 4 days ahead (cool uncovered before chilling covered).
- Just before serving, stir in lime juice and coriander.
- To quick-soak dried beans:
- In a large saucepan combine dried beans, picked over and rinsed, with triple their volume of cold water. Bring the water to a boil and cook beans, uncovered, over moderate heat 2 minutes. Remove pan from heat and let beans soak 1 hour.

- Combine broth, beans, undrained tomatoes, corn, carrot, onion, chili peppers, chili powder, and garlic in a crock pot (3 1/2 to 4 qt size is best).
- Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours.
- Dumplings:.
- Stir together flour, cornmeal, baking powder, and pepper in a medium sized bowl.
- Mix together egg white, milk, and oil in a small bowl.
- Add to flour mixture and stir with a fork just until combined.
- Divide dumpling mixture into 6 mounds and drop on top of the bubbling soup.

It's so easy to do and when you walk through the door after work, you will have a wonderdul, delicious meal! - Cook on medium-high heat until onion is translucent.

SOUTHWESTERN BLACK BEAN SOUP WITH JALAPEñO CREAM
Steps:
- Soak the beans in enough cold water to cover them by 2" for 1 hour and drain.
- In a heavy kettle combine the beans with 8 cups water and the broth. Bring to a boil, stirring occasionally. Simmer uncovered for 1 hour.
- Stir in the tomatoes and cumin and simmer uncovered for 1.5 hours, or until the beans are soft.
- Let cool for 15 minutes and then purée in batches until smooth. Transfer to a clean kettle as it is pureed. For a completely smooth texture force through a sieve. Bring to a boil and season with salt and pepper.
- The soup may be made up to 4 days in advance, cooled completely and kept covered and chilled.
- In a small bowl whisk together the sour cream, minced cilantro and the peppers.
- Ladle the soup into heated bowls and garnish with the jalapeño cream, onion and whole cilantro leaves
