Southwest Pinto Bean Burgers With Chipotle Mayonnaise image

In my search for something my vegetarian teenage daugher will eat, I ran across this recipe in the Jan/Feb 2005 Cooking Light. I sauteed the onions and jalapenos so they would be softer. Now, you might ask what to do with the leftover chiles and adobo sauce once you open the can. Try freezing them in an ice-cube tray. Remove frozen cubes from tray, cover in plastic wrap, and store in a zip-top bag in the freezer. Use cubes to flavor chili or next time you need it in a recipe.

1/2 cup diced onion
1/2 cup dried breadcrumbs
1/4 cup chopped cilantro
2 tablespoons minced & seeded jalapeno peppers
2 tablespoons reduced-fat sour cream
1 teaspoon hot pepper sauce
1/2 teaspoon ground cumin
1/4 teaspoon fresh ground black pepper
1/8 teaspoon salt
1 large egg
1 (15 ounce) can pinto beans, drained
1 (8 3/4 ounce) can no-salt-added corn, drained
1/4 cup low-fat mayonnaise
1 teaspoon canned minced chipotle chile in adobo
1 tablespoon canola oil
4 wheat hamburger buns, toased
4 romaine lettuce leaves

Steps:

  • To prepare burgers, combine the first 10 ingredients in a large bowl. Add pinto beans and corn; partially mash with a fork. Divide bean mixture into 4 equal portions, shaping each portion into a 3 1/2-inch patty, and refrigerate for 10 minutes. (I didn't like the idea of those whole corn kernels in the mixture, so I gave them a couple of pulses in the food processor. That made the mixture a bit softer, so I ended up adding a bit more bread crumbs to stiffen it up).
  • To prepare chipotle mayonnaise, combine mayonnaise and 1 teaspoon chipotle in a small bowl; set aside. If you want it smoother, give it a whirl in the food processor.
  • Heat canola oil in a large nonstick skillet over medium-high heat. Add patties to pan, and cook 4 minutes on each side or until thoroughly heated. Toast buns. Place patties on bottom halves of buns; top each patty with 1 tablespoon mayonnaise, 1 lettuce leaf, and top half of bun.

3/4 lb. ground beef 85% lean
3/4 lb. ground pork
2 chopped chipotles (canned)
1 egg
2 Tbsp chopped fresh cilantro
2 Tbsp brown sugar
1 tsp adobo sauce
1/2 tsp ground cumin
salt & pepper to taste
4 slices chihuahua cheese
4 kaiser buns

Steps:

  • Prepare medium hot fire for direct grilling. In a large bowl combine beef, pork, chipotles, egg, cilantro, brown sugar, adobo sauce, cumin, salt & pepper. Mix gently & shape into four patties. Place patties on prepared grill, cook 5 minutes per side, top each burger witth cheese, place buns cut side down on outer edge of grill to toast, about 2 minutes. To serve spread cut sides of buns with chipotle mayonnaise (see note). Top burgers with lettuce, tomato, avacado or onion if desired. Chipotle mayo-1/2 cup mayo 1 tsp adobo sauce(from canned chipotles)

1 1/2 tablespoons olive oil
1/3 cup onion, chopped
1/3 cup red bell pepper, chopped
1/3 cup black beans, drained and rinsed
1 1/4 teaspoons cumin
1 lb ground chicken breast
2 1/2 chipotle peppers in adobo seasoning, minced
5 hamburger buns
2 avocados
5 lettuce leaves (optional)

Steps:

  • Heat olive oil in saute pan over medium heat. Add onions and saute for 2 minutes, peppers and saute for 3 more minutes. Add black beans, chipotle and cumin, cook for an additional 2-3 minutes. Place aside to cool. Combine chicken and vegetable mixture to form into a patty, season both sides with pepper.
  • Shape into 5 patties. Can be individually frozen at this point, let thaw for 1 day in refrigerator before sauteing.
  • Saute patties in small amount of olive oil about 4 minutes / side or until done. Place burger on bun and top with avocado slices and lettuce.
  • **Chipotle pepper in adobo sauce- comes in a small can in the International foods aisle of the grocery. Fish out needed peppers with a little sauce, chop and add to recipe. Freeze the rest of the can contents in a freezer ziplock bag. Whenever you need some, you can just break off a chunk and add it to your recipe (like chili, tacos, etc).
