GRILLED EGGPLANT SLICES image

Number Of Ingredients 4

Three 3-lb. eggplants, sliced lengthwise 3/8-inch thick
½ c olive oil
2 cloves garlic, peeled and chopped fine
balsamic vinegar

Steps:

  • Brush the slices with oil mixture and grill until both sides are golden brown, about 8 minutes each side. Transfer the eggplant to a sheet tray and sprinkle with the vinegar while still hot. Serve at room temperature. Omit the vinegar and use for eggplant Parmigiana.
