APPLE - PECAN QUICKBREAD image

Yield 1 loaf

Number Of Ingredients 10

2 large eggs
heaping 1/2 cup sugar
1 1/2 cups grated peeled apples, with juice (about two apples)
1 1/2 cups whole wheat flour
2 tsp. baking powder
1 tsp. baking soda
2 tsp. ground cinnamon
scant 1/2 tsp. salt
5 tbsp. vegetable oil
1/2 cup coarsely chopped pecans

Steps:

  • Preheat oven to 350. Beat sugar and eggs in large bowl. Stir in apples. Let stand for ten minutes. Meanwhile, whisk together flour, baking powder, baking soda, cinnamon and salt. Stir oil and pecans into apple mixture. Add the flour mixture and stir until just combined. Do not overmix; the batter should not be smooth. Pour into greased bread pan and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean. Let cool before removing from pan.
