This is a traditional South African recipe, which comes from the great culinary tradition of the Cape Malays -- originally brought in as slaves in the 17th century. 1 cup long grain white rice
1/2 teaspoon salt
1 1/2 teaspoons ground turmeric
3 tablespoons white sugar
1/2 teaspoon ground cinnamon
1/2 cup dark seedless raisins
1 tablespoon butter
2 1/2 cups water

Steps:

  • In a saucepan, combine the rice, salt, turmeric, sugar, cinnamon, raisins, butter and water. Bring to a boil uncovered.
  • When it comes to a boil, reduce the heat to low, cover and let it simmer for 20 to 30 minutes, or until rice is fluffy and water has been absorbed.
  • Remove from the heat and fluff with a fork. Keep warm until serving time.

4 cups water or 4 cups stock
2 1/2 cups long-grain rice
1 teaspoon turmeric
1 cinnamon stick
1/2 teaspoon ground cinnamon
1 -2 tablespoon sugar, white or brown
salt and pepper, to taste
1/2 cup raisins (sultanas are best)
butter (optional)

Steps:

  • Add the water or stock to a large saucepan and bring to a boil over medium heat. Add the remaining ingredients and return to a boil. Reduce heat to low, cover tightly and simmer for 15 minutes.
  • Remove from heat and set aside, covered, for another 5-10 minutes. Discard cinnamon stick, fluff with a fork and serve hot.
  • Optional, Stir 1-2 tablespoons of butter into the cooked rice at the end.

2 tablespoons canola oil
1 teaspoon fresh grated ginger
1/2 teaspoon ground ginger
2 tablespoons brown sugar
1/2 tablespoon turmeric
1/4 teaspoon cinnamon
1/4 teaspoon curry powder
2 cups white basmati rice
3 1/2 cups low sodium vegetable broth or 3 1/2 cups water
1 teaspoon salt
1/2 cup raisins

Steps:

  • Heat oil in a pot over medium heat.
  • Add the fresh and ground ginger, sugar, turmeric, cinnamon and curry powder.
  • Sauté until fragrant, about 2 minutes.
  • Stir in the rice and cook 2 minutes, then add the vegetable broth, salt and raisins. Bring to a boil.
  • Reduce heat and simmer, loosely covered, until rice is completely cooked - about 15 minutes. Add water if necessary to prevent sticking.
  • Remove pot from heat, cover, and allow to stand for 5 minutes.

4 cups boiling water
2 tablespoons brown sugar
1 teaspoon salt

1 cinnamon stick
