Spiced with Harissa, serrano chilies,black olives and cumin topped with feta cheese and almonds. A delightful warm weather salad. This is a recipe I put together for ZWT-7, Africa.

1/4 cup extra virgin olive oil
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon harissa (or other hot sauce)
1/2 teaspoon serrano chili (seeded, chopped fine)
1/2 teaspoon cumin (kamoun)
1/2 teaspoon paprika (tahmira)
salt & freshly ground black pepper
3 -4 cups watermelon (rine removed, chunked,chilled)
1/2 red onion (sliced thin)
2 tablespoons parsley (fresh-chopped)
2 tablespoons mint (fresh- chopped)
1/4 cup black olives (Moroccan olives, pitted-or other oil cured black olives, coarsely chopped)
2 ounces feta cheese (crumbled about 1/2 c.)
3 tablespoons almonds (slivered-optional)

Steps:

  • In a small bowl, whisk the oil,lemon juice,spices and salt/pepper, allow to set in refrigerator at least 1 hour.
  • Arrange watermelon chunks on individual serving plates, sprinkle with onion,parsley,mint,olives and feta, drizzle dressing on top.
  • Top with almonds if desired.

2 tablespoons agave syrup
Juice of 2 limes
Pinch cayenne pepper
Pinch kosher salt
3 cups cantaloupe balls (scooped with a melon baller; about 1 melon)
3 cups honeydew balls (scooped with a melon baller; about 1 melon)
1/4 cup loosely packed fresh mint leaves

Steps:

  • Add the agave, lime juice, cayenne pepper and salt to a large bowl and whisk to combine. Add the cantaloupe and honeydew to the bowl along with the mint leaves and toss to coat with the dressing. Serve as is, or for a more intense flavor, refrigerate for a few hours and up to overnight and toss again before serving.

1 1/2 pounds large shrimp, peeled and deveined
6 tablespoons extra-virgin olive oil
2 teaspoons finely grated peeled ginger
2 teaspoons finely chopped lemongrass
1 lime, zest finely grated plus 2 limes, juiced
1/8 teaspoon hot sauce (recommended: Tabasco)
Salt and freshly ground white pepper
1 ripe honeydew melon
1 ripe, small round red watermelon
1 tablespoon finely chopped purple-basil leaves, plus additional small leaves
1 tablespoon finely chopped cilantro leaves, plus additional small leaves

Steps:

  • Bring a pot of salted water to a boil. Turn off heat and add shrimp and cook for 3 to 5 minutes. Drain. When cool enough to handle, slice each shrimp in half lengthwise.
  • In a small bowl, whisk together the olive oil, ginger, lemongrass, lime zest and juice, and hot sauce. Season with salt and pepper. Set aside.
  • Halve the honeydew and watermelon, cut away from rind, and remove the seeds. Slice the melons into 1/8-inch-thick pieces. Remove the watermelon seeds (it's okay if the slices don't stay intact). Using a cake ring or a glass whose mouth is slightly smaller than a 14 to 16-ounce martini glass or champagne coupe, cut out 16 slices from the watermelon, and 16 slices from the honeydew. Save the best-looking 4 watermelon slices.
  • Set out 4 (8 to 12-ounce) martini glasses or Champagne coupes.
  • Layer 2 slices of watermelon and honeydew in each glass, lightly sprinkling each melon layer with the lemongrass dressing, chopped basil, chopped cilantro, salt, and pepper. (You may need to trim the melon slices so they fit neatly into the glasses, which should be half-full at this point.) Divide the shrimp among the glasses, arranging them in concentric circles. Season the shrimp with the dressing, basil, cilantro, salt, and pepper. Add another layer of melon in the reverse order: honeydew, then watermelon, seasoning as before. Top each salad with a reserved watermelon slice, and sprinkle lightly with the dressing, basil, cilantro, salt, and pepper. Garnish with 1 basil and 1 cilantro leaf. Refrigerate for at least 1 hour before serving (the melon and shrimp taste best when well chilled).

1/2 cantaloupe, halved lengthwise, seeded and cut into half-moons, rinds removed
1/2 small seedless watermelon, cut into wedges, rinds removed
4 dried pequin chiles
1/4 teaspoon flaky sea salt
1 cup baby arugula
2 teaspoons extra-virgin olive oil
1 teaspoon lime juice

Steps:

  • Shingle the cantaloupe half-moons and watermelon wedges on a platter. Crush the chiles and sprinkle them over the melons. Season with the salt. Scatter with the arugula. Drizzle the olive oil and lime juice over the top.

3 garlic cloves, minced or pureed
2 tablespoons brown sugar
1/4 cup lime juice
3 serrano chiles, stems removed and thinly sliced with seeds
1 teaspoon grated lime zest
1/2 cup slivered blanched almonds or pine nuts, toasted
6 cups assorted melon cubes, in 1/2inch cubes, each variety separated
1/4 cup fresh cilantro leaves for garnish

Steps:

  • Mix garlic, brown sugar, lime juice, chiles and lime zest in a medium bowl. Roughly chop almonds and add to garlic mixture.
  • To serve, arrange each variety of melon cubes in alternating rows on a platter or in individual bowls. Spoon dressing over melon and garnish with cilantro. Serve chilled.

Spicy Watermelon Salad With Pineapple and Lime image

Refreshing, sweet and spicy, this salad is the edible equivalent of a crisp beer on a hot summer's day. It pushes the watermelon-feta-mint combination to new heights with a Mexican-inspired flavor profile of lime, jalapeño and cilantro. It's also easy to prepare, requiring little more than a knife, a bowl and a whisk. Enjoy it as soon as it's assembled, as the salty dressing draws the juice out of the fruit fairly quickly and the salad can lose its fresh crunch. A sprinkle of Tajín, a chile-lime Mexican spice blend, is optional, but adds a touch of smoke.

2 tablespoons apple cider vinegar
1 teaspoon fresh lime zest, plus 2 tablespoons juice
1 tablespoon honey
1 jalapeño, thinly sliced
Kosher salt and black pepper
1/4 cup finely chopped red onion
1 1/4 pounds fresh watermelon, chilled
1 1/4 pounds fresh pineapple, chilled
4 ounces feta, crumbled (about 2/3 cup)
1 packed cup small cilantro sprigs, or 1/3 packed cup torn fresh mint
Tajín, for sprinkling (optional)

Steps:

  • In a large bowl, stir together oil, vinegar, lime zest and juice, honey and jalapeño. Season generously with salt and pepper. Add the red onion and toss to coat. Let marinate, 10 minutes.
  • While the onions marinate, chop the watermelon and the pineapple into 1-inch cubes, discarding any seeds. Add watermelon and pineapple to the vinaigrette and toss to coat; season to taste. Refrigerate until serving.
  • When ready to serve, add feta and herbs to salad and toss to coat. Sprinkle with Tajin, if using, and serve immediately.
