Marinated Strawberries image

Aged balsamic vinegar is sweeter and less acidic than the regular version. You can find it in specialty stores or from mail-order gourmet retailers. It costs a little more, but its worth the splurge.

Number Of Ingredients 6

4 c strawberries, fresh whole
2 Tbsp aged balsamic vinegar
2 Tbsp mint, fresh finely shredded
1 Tbsp lemon juice
1 Tbsp truvia or other sweetner
3 c frozen yogurt, low-fat or fat-free

Steps:

  • 1. Remove stems from strawberries; halve or, if large, quarter berries lengthwise. Combine strawberries, balsamic vinegar, mint, and lemon juice in a medium bowl.
  • 2. Add up to 1T sweetner to taste preference.
  • 3. Cover and marinated in refrigerator at least 20 minutes or for up to 4 hours.
  • 4. To serve, spoon the strawberry mixture over scoops of frozen yogurt.
