BLENDED CHERRY MOJITOS

Number Of Ingredients 10

1 pound bag frozen pitted cherries
2 cups crushed ice, plus extra to serve
1/2 cup packed fresh mint leaves
1/3 cup fresh lime juice (about 3 limes)
1 cup citrus flavored rum
1 2/3 cups Lime Simple Syrup, recipe follows
Lime wedges and fresh cherries, for garnish
2 cups sugar
1 cup water
3 limes, zested

Steps:

  • Place the frozen cherries, crushed ice, mint leaves, lime juice, rum, and simple syrup in a blender. Blend until smooth.
  • Pour the mixture into chilled glasses and top with crushed ice. Garnish with lime wedges and cherries.
  • Lime Simple Syrup
  • In a small saucepan, combine the sugar, water, and lime zest over medium heat. Bring to a boil, reduce heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool for 20 minutes. Strain before using.
  • Yield: 1 2/3 cups

1 cup water
1 cup granulated white sugar
1½ cups pitted fresh cherries ((reserve a few for garnish))
20 (or more) fresh mint leaves
2 to 3 medium limes
8 ounces white rum
chilled club soda
ice cubes ((optional))

Steps:

  • (Do this a couple of hours ahead of time- or longer- so that it has time to chill). > Boil water, add sugar and stir until dissolved. Let cool, then chill in the refrigerator until it has a chance to get very cold.
  • In a blender or food processor, blend the chilled simple syrup and cherries. Pour through a strainer, discard the cherry pulp and keep the sweetened cherry juice.
  • Place 4 to 5 mint leaves in the bottom of 4 to 6 tall glasses. Squeeze half a lime into each glass. Add 2 ounces of rum to each glass. Use a muddler (or the handle of a wooden spoon) to smash the mint leaves, lime juice and rum together. Divide the sweetened cherry juice between the four glasses. Top each drink off with chilled club soda. Stir, garnish with fresh cherries and serve. Add an ice cube or two, if desired.

2/3 cup fresh lemon juice (from about 3 lemons)
3 pounds frozen pitted sour cherries, partially thawed with juices
1 cup fresh basil leaves, plus more for serving
2 to 3 cups vodka
6 cups sparkling water

Steps:

  • Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar is dissolved, 3 minutes. Remove from heat; let cool 15 minutes. Syrup can be refrigerated for up to 1 month.
  • Combine lemon juice, fruit, and basil in a bowl. Add syrup; mash lightly to release juices. Refrigerate at least 1 day and up to 4 days.
  • Combine fruit mixture and vodka in a pitcher or punch bowl; ladle about 1/3 cup into each glass. Fill with ice. Top with sparkling water, garnish with more basil, and serve.

BING CHERRY MOJITOS

Like other mojitos, this contains sparkling water for effervescence and lime juice but also includes plump cherries and cherry vodka.

1 1/4 cups sugar
1 1/4 cups freshly squeezed lime juice (about 9 limes)
3 pounds Bing cherries
18 ounces best-quality black cherry or plain vodka
1 bottle sparkling water (750 mL)

Steps:

  • Bring sugar and 1 1/4 cups water to a boil in a small saucepan, stirring until sugar has dissolved. Remove from heat; let cool completely. (Makes about 2 cups syrup.) Syrup can be refrigerated in an airtight container up to 1 month.
  • Put lime juice into a medium nonreactive bowl. Halve and pit cherries; add to lime juice. Stir in syrup. Refrigerate at least 1 hour (up to overnight).
  • Stir cherry mixture and vodka in a large serving bowl. Fill 12 glasses with ice. Spoon 1/2 cup cherry-vodka mixture into each glass. Top off with sparkling water. Serve immediately.
