Combine the ingredients for brioche with a burger bun recipe to make a deliciously sweet, soft, light dough. It could also be shaped into hot dog rolls

200ml whole milk , plus extra for brushing
50g unsalted butter
500g plain flour , plus extra for dusting
1 tbsp caster sugar
7g sachet fast-action dried yeast
1 egg , beaten
sesame seeds (optional)

Steps:

  • Put the milk, butter and 100ml water in a pan and gently heat until the butter is melted. Set aside to cool until just warm.
  • Tip the flour, sugar, yeast and 1 tsp salt into a large bowl and gradually work in the milk mixture, then the egg, until you have a smooth dough. Tip the dough onto a floured surface or into a stand mixer fitted with a dough hook and knead until elastic and shiny. Divide into 12 (about 80g each) pieces and roll into tight balls. Transfer to baking trays lined with baking parchment, leaving plenty of space between them, and put in a warm place to prove for 30-45 mins.
  • Heat oven to 200C/180C fan/gas 6. Press the rolls down gently using your hands, then brush over some milk and scatter over the sesame seeds, if you like (or, dust with some flour). Bake for 10-12 mins until risen and lightly golden. Leave to cool completely, then serve. Make up to two days ahead and keep in an airtight container.

I was researching the traditional recipes of the hamburger buns and this is my own version that came out as a result. They often contain sugar and in the first time when I used it they felt too sweet and so this recipe doesn't have any. Yeast loves milk and so it's excellent food for for it instead of sugar. This makes the recipe as a slightly lighter version of the buns and it still has the soft and fluffy texture for the hamburgers. 150 milliliter(s) milk, room temperature, or 150 ml of water + 15 grams of skim milk powder
150 milliliter(s) water
25 gram(s) fresh yest or 8 grams of dry yeast
1 - egg
1 teaspoon(s) salt
30 gram(s) butter, melted
900 milliliter(s) wheat flour; 585 grams
GLAZE:
1 - egg
DECORATION:
- edible seeds; sesame, poppy, etc.

Steps:

  • 1. Crumble the yeast into a bowl with a room temperature mix of milk and water. If you're using dry yeast, make it slightly warmer. 2. Add the egg, salt and melted butter.
  • 1. Mix and knead in the flour until the dough is smooth and glutenous. The ready dough is moist and stretchy, and can detach from the bowl with a pull. 2. Cover the bowl with a cloth and allow it to leaven in room temperature for about 1-2 hours until it's doubled in size.
  • 1. Lightly dust the working surface with flour. Gently make a stick out of the dough and cut it into nine (3×3) pieces of the same size. First roll them into balls and put them onto a baking sheet lined with baking paper. 2. Cover the buns again with a cloth and let them leaven for an hour.
  • 1. Heat the oven to 200°C and on put a steel dish of water on the bottom of the oven. Its steam will keep the buns moist and and guarantee a better leavening while they are being baked. 2. Glaze the buns with an egg. Sprinkle on the edible seeds if desired. 3. Bake the buns for about 15-20 minutes. The buns may be served once they have cooled a bit, or toasted from the center cutting. Add some delicious fillings. They may also be eaten as they are, with only butter.

550 g all-purpose flour
6 g salt
8 g active dry yeast
30 g sugar
40 g vegetable oil
330 g warm water

Steps:

  • Mix sugar with 250 g. of water. Add yeast and put the mixture in a warm place to activate the yeast for 10 minutes.
  • Seive the flour. Add the salt and the oil to the flour. Mix well untill the oil is fully incorperated in the flour.
  • Add the water yeast sugar mixture to the flour mixture. Mix well untill a ball is formed. Add the rest of the water slowly. Add untill the dough is soft enough but not sticky. Kneed the dough well (8 minutes by hand).
  • Make a ball out of the dough. put it in an oil greased container and cover the cointainer with cling film. let it rise for 1 hour or until it doubles in size.
  • punch the dough down. cut it into pieces 100 g. each. make each piece into a ball.
  • place the balls in burger molds or large muffin molds. let them rise again for 1 hour.
  • bake in a preheated oven at 220°C for 11 to 13 minutes or until golden brown in color.
  • cool on a rack completely before placing in closed container.
