CREAMY ARTICHOKE AND SPINACH DIP - PAULA DEEN image

8 c fresh spinach
1 clove garlic, minced
zest of 1 lemon
2 (14 oz) cans of artichoke hearts; coarsely chopped
6 oz (about 1 1/2 c) Parmesan, divided
3/4 c sour cream
3/4 c mayonnaise
1 T bottled cayenne pepper sauce
kosher salt and freshly ground pepper
Suggested: pita chips for dipping

Steps:

  • Preheat oven to 375. Spray 1 1/2 qt casserole dish with cooking spray; set aside. Blanch spinach. Squeeze out excess water. In a medium bowl, mix together spinach, garlic and lemon zest. Add artichoke hearts, 1 c Parmesan, sour cream, mayonnaise and cayenne pepper sauce. Mix. Place into prepared casserole dish. Bake for 30 minutes. In the last 5 minutes add the remaining 1/2 c of Parmesan to the top. Serve hot or cold along with pita chips.
