6 ounces smoked salmon, chopped
¼ cup capers, or to taste
2 tablespoons chopped green onion
1 ½ teaspoons chopped fresh dill
¼ cup heavy whipping cream
3 dashes Worcestershire sauce
3 drops hot pepper sauce
1 squeeze fresh lemon juice

Steps:

  • Process cream cheese in a food processor to soften completely; add salmon, capers, green onion, dill, cream, Worcestershire sauce, hot pepper sauce, and lemon juice. Process the mixture again until creamy and smooth.

1 package (8 ounces) cream cheese, softened
4 teaspoons prepared horseradish
4 teaspoons finely chopped green onions
Crackers, if desired

Steps:

  • Place salmon, cream cheese and horseradish in food processor. Cover and process 30 to 60 seconds or until smooth. Stir in green onions.
  • Spoon salmon mixture into serving bowl; serve with crackers. Serve immediately, or cover and refrigerate up to 3 days.

12 ounces cream cheese, at room temperature
1/3 cup sour cream
1 tablespoon fresh lemon juice
6 dashes Tabasco sauce
3 scallions, white and green parts, thinly sliced
3 tablespoons capers, rinsed and drained
8 ounces smoked salmon, coarsely chopped
3 tablespoons chopped fresh dill or 1 tablespoon dried dill
fresh ground black pepper
fresh dill, for garnish
crackers or breadstick, for serving

Steps:

  • Puree the cream cheese, sour cream, lemon juice and tabasco in a food processor.
  • Add the scallions, capers, salmon, chopped dill and pepper, and pulse to blend.
  • Garnish with the dill and serve chilled or at room temperature with crackers.

1 tablespoon freshly squeezed lemon juice
1 tablespoon minced fresh dill
1 teaspoon prepared horseradish, drained
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/4 pound (4 ounces) smoked salmon, minced

Steps:

  • Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt, and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites or crackers.
  • If you can find it, I prefer Norwegian salmon; it's drier and less salty than other smoked salmon.

3 tablespoons lemon juice
3 tablespoons milk

  • Beat cream cheese, lemon juice, milk and dill weed til well combined.
  • Crumble or shred salmon and add to cheese mix.
  • Mix until blended and desired consistency. More mixing breaks up salmon more- less keeps it chunkier.
  • Chop green onions and garnish the top of spread with them or mix inches.
  • Serve well chilled with crackers, toast points or sliced/cubed bread.

Serve on sourdough bread, accompanied by a chilled white wine or fruity beer. I also liked it on buttery crackers. Spread can be made a day ahead and refrigerated in a covered container.

2 tablespoons plain fat-free Greek yogurt
