Easy Smoked Salmon Pasta image

A really quick, easy sauce for 'pasta asciutta,' which means 'dry pasta.' It's not a dish over-loaded with sauce, but one that appreciates the simple smokiness of good smoked salmon. Serve sprinkled with some Parmesan or garnished with some parsley. This is not a creamy, thick sauce. Just one that really brings out the simple, yet fantastic flavors of smoked salmon. Enjoy!

1 (8 ounce) package linguine pasta
1 tablespoon butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
1 ounce smoked salmon, cut into small pieces
1 tablespoon reduced-fat cream cheese
3 tablespoons milk

Steps:

  • Fill a large pot with lightly-salted water and bring to a rolling boil. Stir the linguine into the water and return to a boil. Cook uncovered until the pasta has cooked through but is still firm to the bite, about 11 minutes; drain, reserving 2 tablespoons of the water.
  • Melt the butter with the olive oil in a saucepan over medium-low heat; when the mixture begins to bubble, add the shallots and cook until softened. Stir the salmon, cream cheese, and milk into the shallot mixture. Mix the reserved water from the pasta into the mixture. Transfer to a large bowl and toss with the pasta to serve.

5 ounces smoked salmon, cut into small pieces
1 onion, chopped
1 clove crushed garlic
2 cups sliced fresh mushrooms
¾ cup prepared basil pesto sauce
3 tablespoons tomato paste
2 tablespoons olive oil
1 tablespoon chopped fresh basil
¼ cup water
8 ounces spaghetti

Steps:

  • Cook pasta in a large pot of boiling water until al dente.
  • In a skillet, heat olive oil over medium heat. Add onion, mushrooms, and garlic until onion is transparent and mushrooms are tender. Stir in tomato paste, pesto sauce, fresh basil, water, and smoked salmon; cook gently for 5 to10 minutes, or until desired consistency is achieved.
  • Drain pasta. Serve sauce over noodles.

Smoked Salmon Pasta with Fresh Tomatoes, Basil and Goat Cheese Recipe image

4 ounces New England smoked salmon*
1 1/2 tablespoon extra virgin olive oil
1 slice local smokehouse bacon, chopped into 1/4 - 1/2 inch pieces
1/2 cup sliced leek
1 medium tomato, diced into 1/3 inch cubes
1/2 cup dry white wine, such as Sauvignon Blanc
1 1/2 tablespoon capers, rinsed
1 tablespoon butter or butter substitute (we use Earth Balance as a butter replacement)
Zest of 1 lemon
2 teaspoons coarsely ground pepper or to taste
1 cup torn or chopped fresh basil leaves
1/2 cup (approximately 3 - 4 ounces) local soft goat cheese in 1/2 inch pieces
Sea salt or kosher salt to taste
4 ounces thin spaghetti or linguini

Steps:

  • Heat olive oil in a large sauté pan over medium heat, add bacon and cook until lightly brown. Add leeks and cook until soft. Add wine, turn to high and boil until most of the wine has evaporated. Add tomatoes and butter and lower heat. Add salmon, lemon zest, crushed pepper and capers and turn off heart when warmed. Cook pasta in 2 quarts rapidly boiling salted water until al dente (usually less time than instructions on the box). Drain the pasta and add to sauté pan. Turn heat to high and mix sauce with pasta; remove pan from heat. Add cheese and basil off heat, toss and serve immediately. Vinaigrette with fresh greens and a dry white wine nicely finish this meal
