Good for a hearty breakfast, lunch or dinner. A little like German rouladen, this comfort food is from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.

3 lbs ham slices (2 large ones, about 3/8-inch thick)
1 teaspoon dry mustard (Coleman's preferred)
2 teaspoons vinegar
2 apples, peeled and sliced thinly
1/2 cup brown sugar
1 tablespoon butter

Steps:

  • Remove bone from ham.
  • Mix mustard and vinegar together; spread thinly on ham.
  • Spread apples in two layers on ham; sprinkle well with brown sugar.
  • Roll ham the long way and pin with metal skewers or tie with string.
  • Place in baking pan and dot with butter.
  • Bake at 350F for 25 to 30 minutes.
  • Baste several times while baking.
  • Allow 1/4 to 1/3 pound per serving.

3 1/2 cups cored peeled and thickly sliced cooking apples
1/4 cup seedless raisin
1/4 cup Splenda granular
1 1/2 teaspoons apple pie spice
2 tablespoons unsweetened apple juice
1 tablespoon reduced-calorie margarine

Steps:

  • Spray a slow cooker container with butter-flavored cooking spray.
  • Combine apples and raisins in crock. Add Splenda, apple pie spice, and apple juice. Mix well to combine. Dot top with margarine.
  • Cover and cook on LOW for 4-6 hours.

4 McIntosh apples
3 tablespoons fresh lemon juice
1/4 cup firmly packed light brown sugar
1/2 stick (1/4 cup) unsalted butter, cut into bits
2 tablespoons light rum
four 3-inch cinnamon sticks
apple or mint leaves for garnish if desired

Steps:

  • Preheat the oven to 450°F. Peel and core the apples, leaving them whole. Slice the apples horizontally into even 1/4-inch-thick slices, reassemble the slices to form whole apple shapes, and brush the apples with the lemon juice. Put the apples in a pie plate, fill the cavities with some of the brown sugar, butter, and rum, and sprinkle the apples with the remaining brown sugar, butter, and rum. Bake the apples in the middle of the oven, basting frequently, for 25 minutes. Reduce the temperature to 350°F., insert the cinnamon sticks in the cavities of the apples, and bake the apples, basting frequently, for 20 minutes more, or until they are tender and browned well and the juices are thick and syrupy. Divide the apples among 4 plates, spoon the syrup over them, and garnish the apples with the apple or mint leaves.

6 apples, cored and chopped
1 tablespoon butter, cut into small pieces
1/2 teaspoon cinnamon
1/4 cup brown sugar or 1/4 cup honey
1/8 teaspoon nutmeg
1/2 cup rolled oats
1/2 teaspoon salt
1/4 cup raisins or 1/4 cup other small dried fruit
1/4 cup apple juice

Steps:

  • Preheat oven to 350 degrees.
  • Spray a large baking pan with cooking spray.
  • In a large bowl combine all ingredients, mixing well.
  • Transfer to baking pan and bake 45 minutes or til a golden crust forms.
  • Serve warm.

4 cups of peeled, sliced apples - use apples that cook up well, like Granny Smith, Fuji or Golden Delicious
3 Tbsp sugar
A sprinkle of cinnamon
1 Tbsp maple syrup

Steps:

  • As you slice up the apples, check for their flavor. If they don't taste good raw, believe me, they aren't going to taste good cooked. Put apple slices in a glass bowl. Sprinkle on top the 3 Tbsp of sugar. Add a light sprinkle of cinnamon. Bake in microwave oven for 5 minutes on high heat. Adjust the time for your microwave and how many apples you are doing. Ours has a powerful high setting so 4 cups of apples only takes 5 minutes. If you use more apples, you will probably need to cook it a little longer. I suggest starting with 5 minutes and testing for doneness with a fork. If it needs more cooking time, give it more. When done, remove and mix so the sugar coats well all the apple pieces. Add maple syrup to taste, about 1 Tbsp. Delicious as a side dish or as a dessert with whipped cream on top, or with vanilla ice cream on the side.
