CINCINNATI SKYLINE CHILI
I was served this dish at a friend's home when we lived in West Virginia. She was from Ohio. I love this dish and serve it often. Note: End result should have consistency of spaghetti sauce.

Steps:
- Brown beef and onion in a large skillet over medium high heat. Place browned mixture in a large pot and stir in the tomato sauce, garlic, Worcestershire sauce, cinnamon, vinegar, chili powder, cayenne pepper, salt and pepper. Simmer, uncovered, over low heat for 1 1/2 hours.
- When meat mixture has about 20 minutes cooking time left, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and set aside.
- Serve meat mixture over cooked spaghetti topped with cheese, beans, olives and chopped onion.

CINCINNATI "SKYLINE" CHILI

- 1. 1.Add beef and water to a 4-quart pot. Bring to a simmer while stirring until the ground beef is in very small pieces. Simmer for 30 minutes and add all the rest of the ingredients. 2.Simmer on low, uncovered, for 3 hours. Add water as needed if the chili becomes to thick. 3.Refrigerated the chili overnight, and the next day remove the layer of fat from top before reheating and serving. CINCINNATI STYLE CHILI (SKYLINE) (GLUTEN-FREE)
Recipe is from my grandmother. It's all part of a family tradition. Every year on Thanksgiving, our entire extended family gets together at a state park and stay in cabins; usually in West Virginia, Kentucky, or Indiana. Instead of turkey on Thanksgiving day, we all have Cincinnati Chili. Although this recipe calls for ground beef, it can be made with ground turkey instead. If you've ever had Skyline Chili or Goldstar from Cincinnati, this recipe is a little different. It has a kick behind it that Skyline and Goldstar don't have.

Steps:
- Combine all ingredients in crock pot or large pot.
- Cook on low-medium for 2-3 hours. (Can leave in crock pot unattended on low for 6-8 hours).
- Remove bay leaves.
- Serve on bed of spaghetti topped with cheddar cheese. Optional toppings: beans, onions.

- Directions: In a Dutch oven over medium-high heat, heat oil until shimmering. Add onions and cook until soft and browned around edges, about 8 minutes. Add garlic, tomato paste, chili powder, oregano, cinnamon, cocoa powder, salt, pepper, and allspice and cook until fragrant, about 1 minute. Add chicken broth, tomato sauce, vinegar, and sugar; stir until combined. Add beef. Crumble the meat with the edge of a wooden spoon to break apart into tiny pieces so no clumps remain. Bring to boil, reduce heat to medium-low, and simmer until chili is deep brown and slightly thickened, 15 to 20 minutes. Season with salt. (Chili can be refrigerated in airtight container for up to 3 days or frozen for up to 2 months.) Boil, grill, or microwave the hot dogs until warmed through-out. Serve hot dogs in steamed buns, top with desired amount of chili, mustard, onion and cheese.
CINCINNATI CHILI - A SKYLINE CHILI COPYCAT RECIPE
Cincinnati Chili is a unique blend of spices and ground beef, cooked without beans, and typically served atop a pile of spaghetti noodles with a heap of shredded cheese to finish it off. This is a copycat of the famous Skyline Chili recipe!

- In a large Dutch oven, whisk together water and tomato paste.
- Add the raw ground beef to the mixture by breaking it apart and crumbling it with your fingers.
- Add in all of the other ingredients, and stir to combine. Bring it to a boil and reduce the heat to a low simmer, cover the pot and let simmer for 2 hours, stirring occasionally.
- Remove the chili from the stove, and cool. Transfer the covered pot to the refrigerator, and chill overnight.
- The next day, skim the grease from the top of the chili, before warming it to serve.
CINCINNATI SKYLINE CHILI

- Boil beef in water for 30 minutes. Add all other ingredients. Bring to boil. Reduce heat and simmer uncovered for 3 hours. Serve over spaghetti with cheddar cheese and onions. Beans if desired.
