1 pound ground beef
1 (15 ounce) can sweet corn, drained
1 cup mild, chunky salsa
¼ cup sliced black olives
3 ½ cups cooked egg noodles
1 (15.25 ounce) can kidney beans, drained and rinsed
¼ cup taco sauce
1 (1.25 ounce) package taco seasoning mix
½ cup tomato sauce

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a skillet over medium heat, cook the ground beef until evenly brown; drain.
  • In a 9x13 inch baking dish combine the beef, corn, salsa, olives, cooked noodles, beans, taco sauce, seasoning mix and tomato sauce.
  • Bake in the preheated oven for 1/2 hour, or until cooked through.

3 cups uncooked whole wheat spiral pasta
1 pound lean ground beef (90% lean)
1 small onion, chopped
2 cans (14-1/2 ounces each) no-salt-added diced tomatoes, undrained
1 can (15 ounces) black beans, rinsed and drained
1 cup frozen corn, thawed
1 cup chunky salsa
1 can (4 ounces) chopped green chilies
1 can (2-1/4 ounces) sliced ripe olives, drained
3 tablespoons taco seasoning
1/2 cup reduced-fat sour cream
Crushed tortilla chips, optional

Steps:

  • Cook pasta according to package directions; drain. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain., Stir in the pasta, tomatoes, beans, corn, salsa, green chilies, olives and taco seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until heated through. Serve with sour cream and chips if desired.

6 ounces dry extra-wide egg noodles, uncooked
1 pound ground chuck beef (80% lean)
2 cups frozen Southwest mixed vegetables (corn, black beans, red peppers)
1 (10 ounce) can Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
1 (10 ounce) can red enchilada sauce
1 ¼ cups water
1 ¼ cups shredded Mexican blend cheese
¼ cup thinly sliced green onions
1 teaspoon Sour cream

Steps:

  • Preheat oven to 400 degrees F. Spray 13x9-inch glass baking dish with cooking spray. Place uncooked noodles in baking dish.
  • Heat large skillet over medium-high heat. Add beef; cook 5 to 7 minutes or until crumbled and no longer pink. Drain. Add vegetables, undrained tomatoes, enchilada sauce and water to skillet; stir. Bring to a boil. Pour mixture over noodles.
  • Cover dish tightly with foil; bake 15 minutes. Stir; sprinkle with cheese and cover with foil. Bake 10 minutes more or until noodles are tender. Sprinkle with green onions. Serve with sour cream, if desired.

12 ounces extra-lean ground beef
2 cloves garlic, minced
1 can (15 oz) Progresso™ black beans, rinsed and drained
1 can (14.5 oz) Muir Glen™ no-salt-added diced tomatoes, undrained
3/4 cup Muir Glen™ organic salsa
1 teaspoon dried oregano, crushed
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/2 cup shredded reduced-fat Colby and Monterey Jack cheese (2 ounces)
1/3 cup light sour cream
3 tablespoons sliced green onions
2 teaspoons coarsely chopped fresh cilantro
1/2 teaspoon finely shredded lime peel

Steps:

  • Preheat oven to 350°F. In a large saucepan, cook pasta according to package directions; drain. Return pasta to hot saucepan; set aside.
  • Meanwhile, in a large skillet, cook meat and garlic until meat is browned, stirring to break up meat as it cooks. Drain off fat.
  • Stir the cooked meat into pasta in saucepan. Stir in beans, undrained tomatoes, salsa, oregano, cumin, and chili powder. Transfer mixture to a 1 1/2- to 2-quart casserole or baking dish.
  • Bake, covered, about 30 minutes or until heated through. Uncover and sprinkle with cheese. Bake, uncovered, about 3 minutes more or until cheese is melted.
  • In a small bowl, stir together sour cream, 2 tablespoons of the green onions, the cilantro, and lime peel. To serve, top each serving with a spoonful of the sour cream mixture. Sprinkle with the remaining green onions.
