The traditional 7 layer dip can be rather fattening, so here is a fresher, lighter alternative. It requires a tad more work, but I assure you it is worth it! I always have people asking for this recipe.

1 (8 ounce) container fat-free sour cream
2 cloves garlic, minced
1 fresh jalapeno pepper, finely diced
1 tablespoon chopped fresh cilantro
1 (1 ounce) packet taco seasoning
5 dashes hot pepper sauce
1 lemon, juiced
2 avocados - peeled, pitted, and mashed
3 cups shredded lettuce
1 (15 ounce) can black beans, rinsed and drained
2 (11 ounce) cans Mexican-style corn, drained
1 cup chunky salsa
1 cup shredded Mexican cheese blend
1 (2.25 ounce) can sliced black olives, drained
¼ cup sliced green onions
1 Roma (plum) tomato, chopped

Steps:

  • Mix together the sour cream, garlic, jalapeno pepper, cilantro, taco seasoning, hot pepper sauce, and 1/2 of the lemon juice in a bowl until well blended.
  • In another bowl, mash the avocado with the remaining lemon juice; set aside.
  • Spread the shredded lettuce over a 12-inch serving platter.
  • Layer the black beans evenly on top, followed by the Mexican-style corn.
  • Spread the prepared sour cream mixture over the corn.
  • Gently spread the avocado mixture on top of the sour cream.
  • Pour the salsa evenly over the avocado mixture.
  • Sprinkle the Mexican cheese blend, olives, green onions, and tomato on top.

A delicious, healthy, easy-to-make dip that is wonderful with baked tortilla chips.

1 (15 ounce) can black beans, rinsed and drained
1 ½ tablespoons water, or more if needed
1 tablespoon freshly squeezed lemon juice
1 clove garlic, minced
1 teaspoon ground cumin, or more to taste
1 teaspoon chili powder, or more to taste
1 teaspoon onion powder, or more to taste
½ teaspoon salt

Steps:

  • Combine beans, water, lemon juice, garlic, cumin, chili powder, onion powder, and salt in a food processor; process until thick and smooth, adding more water if needed to reach desired thickness.
  • Chill for at least 1 hour before serving.

I love the challenge of slimming down fattening foods. I have to admit, I LOVE my butter, cream, and other fats...so its tough for me to get recipe to taste EXACTLY as good as the original...but its fun to try to get them close. Better yet, I feel great after eating them - refreshing. This one is my take on Black Bean Dip, I hope you like it as much as I do.

1 (15 ounce) can black beans, rinsed and drained
1/2 cup cilantro, cleaned, stems removed
2 chipotle peppers, canned in Adobo sauce
1 teaspoon adobo sauce
1/2 cup fat free sour cream
1 teaspoon cumin
salt, to taste
pepper, to taste

Steps:

  • Place all ingredients in a blender or mini food processor. Blend until smooth. Season to your taste.
  • The Chipotle Peppers & Adobo sauce add a nice smoky flavor with a little bit of heat. Add more if you prefer additional heat.
  • Serve with fresh cut cucumbers, bell pepper strips, carrots, celery, broccoli, etc.
  • You could also spread this on a whole wheat tortilla, add vegetables and make a sandwich wrap.
