  • Combine the spinach, cranberries, walnuts, vinaigrette, and Romano cheese in a large bowl; toss until spinach is evenly coated. Serve immediately.

I'm always on the lookout for new spinach salads, and I particularly like this one. It can be prepared ahead of time and it travels well, too!

1/2 to 3/4 pound fresh spinach
1/2 medium cucumber, thinly sliced
1/2 cup thinly sliced radishes
1/4 cup thinly sliced green onion
2 hard-boiled large eggs, sliced
3/4 cup Ranch-style salad dressing
5 slices bacon, crisply fried and crumbled
1/2 cup Spanish peanuts

Steps:

  • Remove and discard spinach stems. Rinse leaves well; drain and pat dry. Tear spinach into bite-sized pieces and arrange evenly in salad bowl. Evenly layer cucumber slices, radish, green onion and eggs. Spread dressing over top. Cover; chill up to 24 hours. Just before serving, sprinkle with bacon and peanuts.

1 hard-boiled large egg, chopped

8 ounces spinach leaves
1/2 head lettuce
1/2 cup pitted kalamata olive
1/4 cup crumbled feta cheese
your favorite salad dressing

Steps:

  • Snip spinach and lettuce leaves.
  • Snip olives.
  • Cut off a hunk of cheese, and cut into crumbles.
  • Add olives and cheese to lettuce in a large serving bowl.
  • Toss lightly then drizzle favorite dressing or let each diner add at the table.
  • Options: use Swiss chard instead of spinach. Try Romaine, red leaf or other specialty lettuces.
  • Other olives could be substituted for the Kalamata (but not recommended---this was SO good with the Kalamata).

1 bunch fresh baby spinach leaves (about 300g)
1 cup alfalfa sprout
cherry tomatoes (optional) or sliced red skinned apple (optional)
2 medium lemons
4 sprigs of fresh mint
2 teaspoons sugar
2 tablespoons lemon juice
1/4 cup spiced vinegar
fresh ground black pepper

Steps:

  • Place spinach leaves on a platter.
  • Mix through the tomatoes or apple slices if using.
  • Top with the alfalfa sprouts.
  • Pour over the dressing or serve on the side.
  • TO MAKE DRESSING:.
  • With a sharp knife remove lemon rind taking as little pith (the white part) as possible.
  • With the motor running, and using a metal blade, drop the lemon rind & mint down the tube.
  • When lemon and mint are finely chopped add the sugar, lemon juice, vinegar & pepper.
  • Process until well mixed.

I love spinach salad but I live alone and hate to make a full recipe since any leftovers get way too wilted. I came up with this recipe by modifying a Betty Crocker cookbook version. You can definitely play around with the amounts of the ingredients. I don't actually measure out the lemon juice - I squeeze some into the oil, and drizzle a little more over the finished salad if it's not lemony enough. This makes a good sized bowl for one person, and if you want seconds it's so easy to make some more. You can also double/triple the ingredients for company!

1 teaspoon lemon juice
1 clove garlic, minced (I use one of those frozen cubes)
1 slice cooked bacon, cut up

fresh spinach (I use the pre-washed bagged kind)

  • Heat olive oil, lemon juice, garlic, and bacon in a small saucepan until hot.
  • Remove from heat and add desired serving size of spinach leaves.

1 1/4 lbs chicken breasts, thinly sliced
1 tablespoon vegetable oil
2 medium carrots, sliced
1 red bell pepper, chopped
1 (10 ounce) package Baby Spinach
1/2 cup chopped green onion
1/2 cup chopped fresh cilantro
1/3 cup creamy peanut butter
1/4 cup water
3 tablespoons rice wine vinegar
2 tablespoons vegetable oil
1 tablespoon soy sauce
2 teaspoons sugar or 2 teaspoons honey
1 1/2 teaspoons minced garlic
1/4 teaspoon salt
hot sauce (optional) or red pepper flakes (optional)

Steps:

  • In a large skillet or wok, stir fry the chicken pieces in oil until juices run clear.
  • remove and keep warm.
  • In the same pan, stir fry the carrots and bell pepper until crisp-tender.
  • In a large serving bowl, toss the spinach, green onions, and cilantro; set aside.
  • In a blender, combine the dressing ingredients and process until well blended.
  • Add chicken, carrots, bell pepper, and dressing to the spinach bowl and toss to coat evenly.
  • Serve immediately.
