1 lb shrimp, precooked
1/2 cup mayonnaise
1/3 cup celery, celery (fresh)
2 teaspoons Old Bay Seasoning
2 teaspoons lemon juice (fresh or bottled)
1/4 teaspoon Worcestershire sauce

Steps:

  • Peel and devein shrimp (if necessary); cut in half.
  • Combine well with remaining ingredients.
  • Chill mixture for 1 hour.

1 (8 ounce) package flake-style imitation crabmeat, chopped into bite-sized pieces
3 hard-boiled eggs, chopped
¼ cup green peas
¼ cup white corn kernels
2 green onions, sliced
1 tablespoon chopped fresh dill
¼ cup sour cream
¼ cup mayonnaise
salt and ground black pepper to taste
6 cooked shrimp, tails on

  • Combine 1/2 pound shrimp, crabmeat, eggs, peas, corn, green onions, and dill in a large bowl.
  • Mix sour cream and mayonnaise together in a separate bowl; stir into the bowl with the shrimp mixture. Season with salt and pepper. Garnish with tail-on shrimp.

1 (16 ounce) package dry fusilli pasta
1 pound cooked medium shrimp, peeled and deveined
1 tomato, chopped
1 green bell pepper, chopped
2 tablespoons mayonnaise
salt and pepper to taste

Steps:

  • Bring a large pot of salted water to a boil, add pasta and cook until al dente. Rinse under cold water and drain.
  • In a large bowl combine shrimp, tomato, green pepper, mayonnaise and salt and pepper to taste. Mix well. Add pasta and toss to coat. Chill for approximately one hour and serve.

Sarasota's Simple Shrimp Salad Sandwich image

Basic, quick and easy and the perfect light summer time sandwich. Now fresh shrimp is great, however, I used a previously frozen shrimp, but uncooked and I loved to serve this on a nice whole wheat sandwich bun which to me add lots of flavor. Top with a fresh tomato slice and lettuce. I prefer to use a butter, Bibb, or Boston type of lettuce.

1 lb shrimp, I used extra large
1 teaspoon Old Bay Seasoning
2 medium celery ribs, cut lengthwise and then diced fine (more or less to taste, I happen to love celery in mine)
1 small onion, fine diced
1/4 cup mayonnaise (I really prefer Hellmanns or Dukes not Miracle Whip)
2 scallions, white and green parts fine chopped (optional)
1/2 lemon, fresh squeezed (about 1 teaspoon is all you need)
1/2 teaspoon lemon zest
1 1/2 teaspoons fresh parsley, fine chopped
1/4-1/2 teaspoon Old Bay Seasoning (to taste)
salt
pepper
6 whole wheat sandwich buns
6 tomatoes, slices
6 lettuce leaves

Steps:

  • Shrimp -- Bring a medium pot of water and bay seasoning to a medium boil. Heat should be medium / high. Add the shrimp and bring back up to a boil. Remove from the heat and let the shrimp to continue to cook 1-2 minutes until they just turn pink and begin to curl. You don't want to overcook them. Remove from the water and set on a baking sheet or pan and spread out and let to cool. Once slightly cooled, peel and rough chop.
  • Salad -- In a medium size bowl, add the shrimp, and squeeze the lemon over the top. Add the onion, celery, parsley, mayo and mix well. If you are adding in the scallions, add them at this time as well. Season with a pinch of the Old Bay, start slow, you can always add more; then salt and pepper to taste. Mix well to combine. Continue to season with any additional salt, pepper or Old Bay until you get the taste you want.
  • Sandwich -- I like to toast my sandwich rolls, but it is not necessary. I just like the added flavor. No butter, No oil, just toasted. Then top with the shrimp salad,lettuce and tomato. I also like to lightly salt and pepper the tomato slice, finish with the top sandwich roll.
  • Serve -- Fries, chips, a pickle or a fresh fruit salad. Just ENJOY!

1 1/2 lbs medium shrimp, pre-cooked (or cook yourself)
3 stalks celery, finely minced
2 tablespoons parsley, finely minced (if you don't have fresh, leave out)
1 -1 1/2 tablespoon creole seasoning (can use Old Bay seasoning)
1 teaspoon black pepper, fresh ground
3/4 cup reduced-fat mayonnaise (no Miracle Whip, please)
1 cup frozen peas (do not cook, just rinse to separate)
4 medium-large beef tomatoes (garden fresh are best)
salt
parsley (optional)
curly lettuce leaf (optional)

Steps:

  • Remove 16 shrimp and set aside.
  • Coarsely chop rest of shrimp. Mix with the next six ingredients and refrigerate. Start with 1 tbls creole seasoning and taste before adding more. The flavor increases some with standing.
  • To Make Tomato Bowls:.
  • Decide which sides of the tomato will lay flatter. Cut off thin strip to help this happen.
  • Cut off top and empty insides.
  • Lightly salt insides and turn upside down to drain. Leave like this about fiftheen minutes. Do not rinse.
  • Stand upright. Cut in half from top to bottom making sure that the stripped side will now be the bottom.
  • Line 4 plates with lettuce leaves. Fill each tomato half.
  • Place two halves on a plate. Top each half with two whole shrimp and sprinkle with parsley.
  • Yum, yum -- enjoy!

This is a classic summertime dish in my family - great on hot summer days. We usually had this with sliced tomatoes (eat them raw with salt and pepper) and sliced cucumbers in vinegar with pepper. I don't use mayonnaise enough to have gotten used to fat free mayo, but if you're used to it, please feel free to substitute. I usually cook the pasta in a pot with a lid, then mix the salad in the cooking pot to save cleanup time. Cook time is just for the pasta; prep time does not include chilling.

1/2 cup onion, minced
3/4 cup celery, chopped
