SUPER EASY PENNE ALLA VODKA

This Penne Alla Vodka is creamy, cheesy, and sweetly flavored with tomatoes and vodka. It's also incredibly easy to prepare!

1 tablespoon olive oil
1 tablespoon unsalted butter
1/2 medium yellow onion (finely chopped)
2 garlic cloves (minced)
1/4 cup vodka
28 oz canned puréed San Marzano tomatoes
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese
1 lb penne pasta
2 basil leaves (chopped (for garnish))
Salt and pepper to taste

Steps:

  • In a large skillet, add 1 tablespoon olive oil and 1 tablespoon unsalted butter. Bring the butter and oil to medium-high heat.
  • Then add 1/2 medium chopped yellow onion and 2 minced garlic cloves into the pan. Stir the garlic and onion until the onion becomes translucent.
  • Then bring the heat to high and pour in 1/4 cup of vodka and let it cook out for about 1-2 minutes while stirring.
  • Now add 28 oz of canned puréed San Marzano tomatoes and 1 cup heavy whipping cream. Let the sauce simmer over low heat for about 3-4 minutes.
  • In the meantime, cook 1 pound of penne pasta in a pot of salted boiling water. Once the pasta is cooked al dente, drain it, but don't rinse.
  • Turn the heat off and remove the sauce from the cooktop. Then stir in 1/2 cup of grated Parmesan cheese and add the cooked penne. Season with salt and pepper to taste.
  • Then garnish with chopped basil and a little extra grated Parmesan cheese.

3 tablespoons butter
2 garlic cloves, minced
4 ounces thinly sliced prosciutto, cut into strips
1 can (28 ounces) whole plum tomatoes, drained and chopped
1/4 cup vodka
1/2 teaspoon salt
1/2 teaspoon crushed red pepper flakes
1/2 cup heavy whipping cream
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions., Meanwhile, in a large skillet, heat butter over medium-high heat. Add garlic; cook and stir 1 minute. Add prosciutto; cook 2 minutes longer. 1 pound penne
3 cloves garlic, minced
1 whole medium onion, chopped finely
3 tablespoons butter
2 tablespoons olive oil
1 cup vodka
One 14-ounce can tomato puree or tomato sauce
1 cup heavy cream
1 generous pinch red pepper flakes, plus more if needed
1/4 to 1/2 teaspoon salt
Freshly ground black pepper
Grated Parmesan, for serving

Steps:

  • Cook the pasta according to package directions.
  • Saute the garlic and onions in 2 tablespoons butter and the olive oil in a saucepan over medium heat until soft. Pour in the vodka, being careful if your stove has an open flame (remove the pan from the heat before adding). Cook and reduce for 2 to 3 minutes, then pour in the tomato puree. Stir the mixture until it's thoroughly combined, then reduce the heat to low. Pour in the heavy cream. Stir to combine, then turn heat to the lowest simmer possible. Sprinkle in the red pepper flakes and add salt and pepper to taste. Finally, stir in the remaining 1 tablespoon butter. Pour the drained pasta into the sauce and toss to combine. Sprinkle on the Parmesan, then sprinkle on more red pepper flakes if desired.

1 cup finely chopped onion
2 tablespoons garlic-infused oil
1 28-ounce can plum tomatoes or 3 cups finely chopped fresh tomatoes
2 tablespoons heavy cream
2 pounds penne rigate
1/2 cup vodka
4 tablespoons butter
Grated Parmesan cheese, for serving

Steps:

  • Bring a large pot of lightly salted water to a boil. Place a large sauté pan over medium-low heat, and add onion, oil and a sprinkling of salt. Sauté onion until soft and beginning to caramelize, about 10 minutes.
  • Add tomatoes and their juices, and simmer for 15 to 20 minutes. Add heavy cream, and remove from heat.
  • Add pasta to boiling water and cook until al dente. Drain pasta and return to cooking pot. Add vodka, butter and salt to taste. Gently mix penne until butter is melted. Add tomato mixture, and mix until pasta is coated.
  • To serve, transfer pasta and sauce to a large warmed bowl. Pass Parmesan cheese for guests to serve themselves.

1/2 cup vodka
1 (15 ounce) can tomato puree
1/8-1/2 teaspoon crushed red pepper flakes (depending how spicy you like things) or 1/8-1/2 teaspoon sambal oelek (depending how spicy you like things)
1/2 cup heavy cream

3/4-1 lb penne, cooked (again, depending on how "saucy" you like your pasta)

Steps:

  • Saute the onion in the combined butter and olive oil until translucent.

1 pound dry penne rigate
3 tablespoons extra virgin olive oil
8 large garlic cloves, finely chopped (about 1/4 cup)
1/4 teaspoon kosher salt, plus more for pasta water
1/4 teaspoon crushed red pepper flakes
1/8 teaspoon freshly ground black pepper
3/4 cup vodka
1 (14.5-ounce) can crushed tomatoes
2 tablespoons unsalted butter
2/3 cup heavy cream
1/4 cup grated Pecorino Romano cheese, plus more for serving
1/4 cup finely chopped basil leaves (about 15 large leaves)
2 tablespoons finely chopped parsley

Steps:

  • Cook the pasta: Fill a large pot of water (about 4 quarts) and salt it generously. Set it over high heat and bring it to a boil. Add the pasta and cook until al dente, following package instructions. Drain the pasta into a colander set in the sink.
  • Meanwhile, start the vodka sauce: Heat a large sauté pan over medium-low heat. Add the olive oil and once it's hot, add the garlic, salt, red pepper flakes, and black pepper. Cook until soft, stirring frequently with a wooden spoon, about 4 minutes. Pull the pan off the heat and add the vodka. You're doing this off the heat to avoid a flare-up, especially if you have a gas stove. Return the pan back to the heat, now medium-high, and cook the alcohol off, about 2 minutes. The vodka should be reduced by half.
  • Add the crushed tomatoes: Pour in the crushed tomatoes and simmer for 5 minutes until the raw tomato flavor cooks off.
  • Add the heavy cream: Reduce the heat to medium-low and stir in the butter and heavy cream. When the butter has melted, take the pan off heat and blend the sauce with an immersion blender until smooth. You may need to transfer the sauce into a narrower container to do this. You could use a blender instead. Transfer the sauce back into the pan and simmer until slightly thickened, about 3 minutes. Taste and adjust seasoning with salt and black pepper.
  • Toss the pasta in the sauce: Add the drained pasta into the sauce. Sprinkle in 1/4 cup Pecorino, the basil, and parsley. Stir the pasta in the vodka sauce until evenly coated. Serve with more cheese sprinkled on top. Refrigerate leftovers in an airtight container for up to 3 days. Reheat it on the stovetop over low heat with a splash of water or cream.
