Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Place apples in a large bowl. Stir in brown sugar and golden raisins; set aside. Place puff pastry on baking sheet. Roll lightly with a rolling pin. Arrange apple filling down the middle of the pastry lengthwise. Fold the pastry lengthwise around the mixture. Seal edges of pastry by using a bit of water on your fingers, and rubbing the pastry edges together. Whisk egg and milk together, and brush onto top of pastry.
- Bake in preheated oven for 35 to 40 minutes, or until golden brown.

Steps:
- Preheat oven to 350 degrees.
- Line cookie sheet with parchment paper; set aside.
- In a small bowl combine 2 tablespoons and 1/2 teaspoon cinnamon; set aside for topping.
- Stack layers of dough brushing each layer with butter before topping with next layer.
- Brush top layer with butter.
- Combine apples, raisins, brown sugar and 1 teaspoon cinnamon in a mixing bowl.
- Spoon filling down the left longside of phyllo rectangle.
- Fold top edge down and bottom edge up by about 2 inches to cover filling.
- Roll dough up along long side to enclose filling.
- Brush log with butter and sprinkle with cinnamon sugar mixture.
- Place log on prepared cookie sheet.
- Bake for 30 minutes or until golden and puffed.
- Serve warm with vanilla bean ice cream.

Steps:
- Soak raisins in rum in a small bowl for 30 minutes.
- Preheat oven to 350F and lightly grease a large baking sheet with short sides (such as a jelly roll pan).
- Have your phyllo laid out and covered with a slightly damp towel so it does not dry out.
- Mix sliced apples, raisin mixture, lemon juice, sugar, cinnamon.
- Clear a nice big flat work surface and line with a long sheet of waxed paper to work on (tape it to the counter) (work so the long sides are facing you).
- Lay a sheet of phyllo onto the wax paper and brush with some of the melted butter.
- Sprinkle about 2 tablespoons of the bread crumbs evenly over the butter.
- Place another shet of phyllo on top and repeat 3 times, so that you have 1 more sheet of phyllo left.
- Place the remaining phyllo on top,and this time take your apple mixture and place it in a mound on one of the longer sides of the dough, leaving a border along the edge.
- Untape your wax paper and then use it to carefully roll up the other side of the dough over the filling, folding in the ends and carefully place onto the baking sheet, seams down (remove the wax paper once you have your strudel safely in position on your pan).
- Combine egg and water and brush over the strudel, then sprinkle with nuts.
- Bkae in the middle of the oven for about 30 minutes, or until golden.
- Allow to cool slightly before serving, then dust to taste with powdered sugar.

- Preheat oven to 350°. Place raisins, water and extract in a large microwave-save bowl; microwave, uncovered, on high for 1-1/2 minutes. Let stand 5 minutes. Drain. Add apples, 1/3 cup sugar, flour and cinnamon; toss to combine., In a small bowl, mix melted butter and oil; remove 2 teaspoons mixture for brushing top. Place 1 sheet of phyllo dough on a work surface; brush lightly with some of the butter mixture. (Keep remaining remaining phyllo covered with a damp towel to prevent it from drying out.) Layer with 7 additional phyllo sheets, brushing each layer with some of the butter mixture. Spread apple mixture over phyllo to within 2 in. of 1 long side., Fold the short edges over filling. Roll up jelly-roll style, starting from the side with a 2-in. border. Transfer to a baking sheet coated with cooking spray. Brush with reserved butter mixture; sprinkle with remaining sugar. With a sharp knife, cut diagonal slits in top of strudel., Bake until golden brown, 35-40 minutes. Cool on a wire rack. If desired, dust with confectioners' sugar before serving.

PUFF PASTRY APPLE AND RAISIN STRUDEL
Steps:
- Position an oven rack in the center of the oven and preheat to 375 degrees F.
- In a medium bowl, toss the sliced apples with the lemon juice until the apples are thoroughly coated. Add the raisins, 1/4 cup sugar, and the 2 tablespoons cold cubed butter and toss well. Set aside.
- Lightly dust the counter or work surface with flour. Lay the puff pastry on top and dust the rolling pin with additional flour. Gently roll the puff pastry to 1/8-inch thickness.
- Spread the apple and raisin mixture over the bottom half of the puff pastry square leaving about 1-inch of space along the side edges. Fold the top half of the puff pastry over and pinch to seal the edges together.
- Brush the entire strudel with the melted butter and then sprinkle with cinnamon and remaining sugar. Using a serrated knife, make 3 diagonal slits across the top of the strudel.
- Place the strudel on a parchment lined baking sheet and bake for 40 minutes, rotating halfway through cooking, until the pastry is puffed and golden brown.

- 1. Mix raisins and rum in a small bowl. Place the bowl in a sink filled with a couple inches of hot water; soak for 15-20 minutes.
- 2. Drain any excess rum from raisins. Mix raisins, apples, brown sugar, cinnamon and nutmeg in a large bowl.
- 3. Preheat oven to 400 degrees. Lay out two large pieces of parchment paper for working and baking on. Gently unfold the puff pastry and place one on each piece of parchment paper. Using a rolling pin gently roll the folds and creases in the pastry to smooth the dough. Divide the apple mixture evenly between the two sheets spreading up through the center of the dough.
- 4. Using a pizza cutter cut the dough in strips about 1/2 to 3/4 inch wide being careful to line up the cut as close as possible on both sides of the apple mixture. Gently (using the parchment paper) move the cut puff pastry to baking sheets keeping the parchment paper on the baking sheets.
- 5. Fold each strip across at a little bit of a downward angle starting with either the left or the right. So you will go left, right, left, right. As you go along moisten the far outer one inch of the strips that that you fold in second (or in this case the right) lightly with water. Using paper towels soak up any excess juice around the edges of the strudel.
- 6. In a small bowl beat egg and milk. Using a pastry brush lightly coat the tops and sides of the strudel. Bake for 35-40 minutes or until golden brown.
- 7. In medium bowl whisk together powdered sugar, milk, ground cinnamon and vanilla. Drizzle over fully cooled apple pastry.
APPLE STRUDEL
Steps:
- Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
- Pour rum over raisins and microwave on high for 25 seconds to plump raisins (let sit 10 minutes).
- In a large bowl, combine the apples, lemon juice, cinnamon, sugar, and plumped raisins.
- In a medium bowl, whisk together the oil and egg whites, being sure to mix them well.
- Place 1 sheet of phyllo on work surface and lightly brush with the oil-egg white mixture. Sprinkle 1 tablespoon each of sugar, panko, and almonds, then top with another layer of phyllo and repeat the process four times. Place the last sheet of phyllo on top of the sugar mixture and brush it with the with oil-egg white mixture, but do not top with more sugar, panko, and almonds.
- Place the apple mixture on the lower 1/3 of the phyllo stack, being sure to leave a 2-inch border. Gently lift the bottom edge of the phyllo stack to cover the filling, then fold the side edges over. Continue to roll the stack away from you, until the filling is completely sealed in and the seam is on the bottom.
- Transfer to the lined baking sheet, brush the top with the oil-egg white mixture and sprinkle with 1 more tablespoon of sugar. Place in oven and bake for 30 minutes. Let cool before serving.
