1 (17.5 ounce) package frozen puff pastry, thawed
1 tablespoon Dijon mustard
1 tablespoon butter
1 onion, chopped
2 cloves garlic, chopped
2 cups chopped fresh broccoli
1 ½ cups heavy cream
3 eggs
1 teaspoon salt
½ teaspoon nutmeg
½ teaspoon ground black pepper
½ teaspoon Italian seasoning
1 (8 ounce) round Brie cheese, sliced

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie dish with cooking spray.
  • Line the prepared pie dish with puff pastry, covering base and sides. Trim excess pastry. Brush bottom with Dijon mustard.
  • Melt butter in a saucepan over medium heat. Add chopped onions and cook until tender, about 5 minutes. Add garlic and cook 1 minute more. Mix in broccoli; cook 3 more minutes.
  • Whisk heavy cream, eggs, salt, nutmeg, black pepper, and Italian seasoning in a bowl.
  • Layer broccoli mixture over the puff pastry and top with Brie cheese slices. Pour in egg mixture.
  • Bake in the preheated oven until set and golden, about 30 minutes.

This is so simple and basic and really quite delicious. It's sort of a cross between a quiche and a frittata; it can be made ahead and re-heated; it's good hot or at room temperature. And, it lends itself to all sorts of variations -- other vegetables, other cheeses, ham or bacon or crab.

4 eggs
1 cup half-and-half cream
1 cup swiss cheese, grated
2 cups broccoli florets
1/2 teaspoon sea salt
1/4 teaspoon garlic powder
1/8 teaspoon nutmeg
1/8 teaspoon white pepper

Steps:

  • Pre-heat the oven to 350 degrees F.
  • Blanch the broccoli, saving the stems for soup (If you are using frozen broccoli, thaw it).
  • Beat eggs and cream, then add the cheese and mix well.
  • Stir in the broccoli, salt, garlic powder (Whole Foods has an excellent organic variety), and pepper.
  • Pour into a nine inch quiche pan and bake for about 30 - 35 minutes or until a knife inserted in the center comes out clean.

This recipe always goes over really good at gatherings. It is a finger food also. I originally found the recipe on the net but changed the cheese.

1 (1 lb) bag frozen cut up broccoli
1 (8 ounce) piece mozzarella cheese (whole milk if you can get it)
5 eggs
1 frozen deep dish pie shell
salt and pepper
grated parmesan cheese

Steps:

  • Thaw broccoli in Microwave 2 minutes.
  • Cut up cheese in little cubes.
  • Beat all eggs and add the broccoli, cheese, salt and pepper.
  • Pour into pie crust.
  • Add parmesan cheese on top.
  • Bake at 350 degees for about 30 minutes until the top in nice and brown.
  • Can also use Cheddar Cheese in place of the Mozzerella.

2 cups cooked broccoli - chopped
1 cup cheddar cheese - shredded
5 eggs
1 1/2 cups milk
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. garlic powder
1/4 cup grated Romano cheese or Parmesan cheese
5 - 6 slices sliced white bread
2 -3 tablespoons of butter or margarine

Steps:

  • Preheat Oven 350 degrees: Butter a 9 inch pie plate. Press the bread into the plate and bake it until it becomes slightly golden; approximately 10 - 11 minutes; remove from oven and let cool slightly before adding the quiche batter. While the bread is baking prepare the quiche. In a large bowl place the broccoli, cheddar cheese, Romano cheese, salt and pepper, and the butter. Beat the milk with the eggs and add to the bowl. Toss the mixture and pour into the baking dish. Top the quiche with a little more grated Romano cheese. Bake 35 - 40 minutes. Let cool for at least 20 -25 minutes before serving.
