6 skinless, boneless chicken breast halves
salt and ground black pepper to taste
2 tablespoons olive oil
1 (15 ounce) jar mild picante salsa
1 (14 ounce) can chicken broth

Steps:

  • Season chicken breasts all over with salt and black pepper.
  • Heat oil in a large skillet over medium-high heat. Cook chicken breasts in hot oil until browned, 4 to 6 minutes per side. Pour salsa and chicken broth over chicken, bring mixture to a boil, reduce heat to medium-low, and simmer for 15 minutes. Turn chicken over, stir salsa mixture, and continue to simmer until chicken is tender and sauce is slightly thickened, about 15 minutes more. An instant-read thermometer inserted into the center of the chicken should read at least 165 degrees F (74 degrees C).

1/4 cup soy sauce
1/2 cup Chinese wine or 1/2 cup dry sherry
2 star anise

1 bunch bok choy or 1 bunch chinese greens, trimmed and halved

Steps:

  • Place the ginger, sesame oil, soy sauce, cooking wine or sherry, star anise, cinnamon stick and sugar in a frying pan over high heat and bring to a boil.
  • Add the chicken and cook for 6-7 minutes on each side or until cooked through.
  • Add the greens to the pan and cook for 2 minutes or until tender.
  • Place chicken and greens on serving plates and spoon over pan juices as sauce.
  • Serve with steamed rice.

This fast but fabulous chicken dish pairs Thai-inspired flavors with French technique. Boneless, skinless chicken breasts have weeknight appeal, largely because they cook so quickly, but that also means they can dry out and become tough if you're not careful. Here, the chicken is gently cooked for about 10 minutes, then simmered in a ginger-scented coconut sauce studded with green beans and corn, resulting in tender and juicy chicken. Slicing the breasts before serving allows the sauce to coat each piece, adding more moisture and flavor. If you want more heat, sprinkle thinly sliced serrano chile over the top before serving. The best part is the entire meal comes together in about a half-hour: If you're quick, you can get all the vegetable prep done while the chicken cooks.

4 boneless, skinless chicken breasts (6 to 8 ounces each)
Kosher salt
2 tablespoons neutral oil, such as vegetable, canola or grapeseed oil
1 large shallot, peeled and thinly sliced into rings
1 large or 2 small garlic cloves, finely grated
1 (2-inch) piece fresh ginger, finely grated (about 1 1/2 tablespoons)
1 small serrano chile or jalapeño, finely chopped, or more to taste
1/2 cup chicken stock
1 (14-ounce) can unsweetened, full-fat coconut milk
6 ounces green beans, trimmed and halved crosswise
1 ear fresh corn, kernels removed, or 1 cup frozen corn kernels
1/4 cup chopped fresh cilantro, plus more for garnish
2 limes (1 zested and juiced; 1 cut into wedges)
Fish sauce (optional)
Jasmine rice, for serving

Steps:

  • Season chicken breasts on both sides with salt. In a large (12-inch) lidded skillet, heat the oil over medium-low. Add the chicken, turn to coat with the oil, cover and cook until the thickest part feels springy to the touch, 4 to 5 minutes per side. (For best results, try not to let the chicken brown, and do not overcook; you'll be cooking it more later.) Set the chicken aside on a warm plate, leaving any liquid in the skillet, and cover the chicken with foil.
  • Heat the skillet over medium. Add shallot and cook until softened, 2 to 3 minutes. Add garlic, ginger and chile, and cook for 1 minute. Add stock, raise heat to high and cook, scraping the bottom of the skillet with a wooden spoon, until thick and syrupy, about 1 minute.
  • Add the coconut milk and 1/2 teaspoon salt and bring to a boil. Stir in green beans and corn, and lower heat to medium-high for a steady simmer. Cover and cook until beans are crisp-tender but still bright, and coconut milk is slightly reduced, 3 to 4 minutes.
  • Add chopped cilantro and grated zest of the lime (saving a bit for the top), then season to taste with fish sauce, if using, and salt. Return chicken to the sauce, turning to coat, cover and cook until warmed and cooked through, 2 to 3 minutes. Add 1 tablespoon of the lime juice.
  • Slice each chicken breast. Serve over jasmine rice, then spoon the vegetables and sauce on top. Sprinkle with remaining lime zest, and garnish with tomatoes and cilantro leaves. Serve with lime wedges.

2 tablespoons butter
2 dried red chilies (such as Guajillo or New Mexican Red)
2 cloves garlic, chopped
1 small onion, chopped
2 corn tortillas
1 1/2 cups chicken stock
1 teaspoon sea salt
1/2 cup shredded monterey jack cheese
1/2 cup fresh cilantro stem

Steps:

  • Preheat oven to 350º.
  • Heat olive oil in frying pan and brown chicken breasts on both sides.
  • Remove from pan and place in oven proof baking dish.
  • Open dried chiles, remove and discard seeds and stem.
  • (Seeds are removed to prevent burning) Cut chiles into pieces.
  • Melt butter in frying pan.
  • Lightly sauté chiles in butter.
  • Add chopped onions and garlic.
  • Tear tortillas into pieces and add to pan.
  • (The tortillas help to thicken sauce.) Sauté until ingredients are lightly browned.
  • Add chicken stock and salt and simmer until ingredients are soft.
  • Remove from heat and cool sauce to room temperature.
  • Transfer cooled sauce to blender and blend until smooth.
  • Pour sauce over chicken breasts.
  • Bake at 350º for 20-25 minutes or until chicken is done.
  • Remove from oven, top with shredded jack cheese and garnish with sprigs of cilantro.
  • Bake a few additional minutes to melt cheese if necessary.

This is a super easy to make "all in one-pot" dinner. The flavors are wonderful. The recipe calls for a whole chicken but I have also made it with boneless breasts and thighs.

1 tablespoon vegetable oil
1/3 cup soy sauce
1/3 cup brown sugar
1/2 cup water
1 tablespoon catsup
1/4 cup dry sherry or 1/4 cup apple juice

1 clove garlic (crushed)
1 green onion (sliced diagonally, small pieces)
2 tablespoons cornstarch

Steps:

  • Rinse the chicken and remove"the goodies" from the inside, pat dry with papertowels.
  • Heat the oil in a large dutch oven or soup pan.
  • Brown the chicken on all sides.
  • Mix soy sauce, brown sugar, 1/2 c water, catsup, sherry, red pepper, garlic and green onion together.
  • Pour mixture over chicken.
  • Cover and simmer 45 minutes.
  • Remove the chicken to a serving platter.
  • Dissolve the 2 T of cornstarch in 1 T of water.
  • Add to the sauce in the pan, over low heat, to thicken.
  • Pour sauce over chicken.
  • We serve this with rice and pour the sauce over the rice as well.

SLOW-SIMMERED CHICKEN VINDALOO



Slow-Simmered Chicken Vindaloo image

This is my take on chicken vindaloo, a traditional Indian curry dish. I've tried a number of other vindaloo recipes, but they're never spicy or soupy enough for my liking. I chose chicken, but you could easily substitute pork, beef, or various root vegetables. Many vindaloo recipes will add chunks of potatoes in addition to the meat. Serve with a long-grain white rice and naan (an Indian flat bread).

¼ cup white wine vinegar
1 tablespoon minced fresh ginger root
2 teaspoons garam masala
2 teaspoons mustard powder
2 teaspoons cayenne pepper
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground coriander
1 teaspoon white sugar
¼ teaspoon ground cinnamon
1 ½ medium red onions, chopped
4 cloves garlic, peeled and crushed
¼ cup butter
2 pounds skinless, boneless chicken breast, cut in bite-sized pieces
3 medium tomatoes, chopped
5 fresh bird's eye chiles, minced
½ cup tomato sauce
1 pinch red pepper flakes, or to taste
salt and ground black pepper to taste
¼ cup chicken broth, or more as needed

Steps:

  • Mix vinegar, ginger, garam masala, mustard powder, cayenne pepper, cumin, turmeric, coriander, sugar, and cinnamon together until a paste forms. Set aside.
  • Process red onions and garlic in a food processor until minced.
  • Melt butter in a large frying pan over medium heat. Add onion-garlic mixture and saute until translucent, 5 to 7 minutes, stirring constantly so the garlic doesn't burn. Add chicken and cook, stirring occasionally, for 4 to 5 minutes.
  • Add tomatoes, chile peppers, and tomato sauce. Stir in the reserved spice paste and bring to a boil. Lower heat and simmer, stirring occasionally, for 1 1/2 to 2 hours, adding pepper flakes, salt, and pepper while cooking. Stir in chicken broth as needed if vindaloo gets too dry.

3 pounds chicken pieces, bone-in and skin on
Kosher salt
Freshly ground black pepper
3 tablespoons vegetable oil
2 medium onions, medium dice
4 cloves garlic, peeled and roughly chopped
2 (12-ounce) bottles good-quality ale
3 ounces tomato paste (about 1/2 small can)
1 (14.5-ounce) can crushed tomatoes
1/2 pound carrots (about 6 small carrots), peeled and chopped into 3/4 to 1-inch pieces
5 sprigs fresh thyme
8 ounces pitted dried plums

Steps:

  • Trim excess fat from chicken parts and cut breasts in half so that all the pieces will cook in roughly the same amount of time. Season the chicken generously with salt and pepper. Heat vegetable oil in a large, oven-proof pot (such as a Dutch oven) over medium-high heat. Brown chicken on all sides, about 5 minutes per side, then set aside on a plate and reserve. Add the onions and garlic and cook a couple minutes to sweat them down a little. Add the ale and deglaze the bottom of the pot. Add the tomato paste and canned tomatoes and stir well until tomato paste is dissolved. Add carrots, thyme, and plums. Return the chicken to the pot along with any reserved juices. Gently submerge the chicken pieces by nestling them into liquid (this will cook them evenly without drying them out).
  • Return to medium heat and bring to a simmer. Reduce heat to low, cover, and continue to simmer on low for 1 1/2 hours until chicken is cooked through and starting to fall off the bone.

1 cup ketchup
2 to 3 tablespoons whole-grain mustard
1/4 cup Worcestershire sauce
1/2 cup packed dark brown sugar
1 (12-ounce) bottle dark ale
1 tablespoon hot sauce, about 8 dashes
2 pounds chicken pieces, bone-in and skin-on
Kosher salt and freshly ground black pepper
3 tablespoons vegetable oil
Preheat oven to 400 degrees F.
5 tablespoons olive oil, plus extra for garnish
12 cloves garlic, thinly sliced
6 (28-ounce) cans chopped tomatoes
2 1/2 teaspoons sugar
Kosher salt

Steps:

  • In a large heavy bottomed saucepot over medium-high heat, combine the Basic Tomato Sauce, ketchup, mustard, Worcestershire, sugar, ale, and hot sauce and bring to a simmer. Simmer until reduced by half and thickened, about 20 minutes.
  • Meanwhile, season the chicken pieces with salt and black pepper. Heat a large oven proof skillet over high heat and add the vegetable oil. Sear the chicken pieces on all sides until well-browned, about 3 minutes per side.
  • Add the prepared BBQ sauce making sure to cover all the chicken pieces. Add 1 cup of water if more liquid is needed to cover. Place the skillet into the oven and bake until the chicken easily falls off the bone and the sauce is slightly thickened and caramelized on top, about 25 to 30 minutes. Serve hot or serve cold as leftovers.
  • In a large heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat.
  • Add the garlic and cook until fragrant but not browned, 1 to 2 minutes. Add the tomatoes, bring to a simmer, and cook until thickened slightly, about 15 minutes. Stir in sugar, and season with salt, to taste.
  • Let extra sauce cool completely and then seal in airtight containers. Refrigerate for up 1 week and freeze for up to 1 month.

1 1/2 lbs chicken, cut up (if preferred you may use all breast etc, can go up to 2 pounds of chicken)
1 large onion, sliced
1/4 cup lime juice 1/2 teaspoon thyme (2-3 limes, or Old Sour)
salt and pepper
2 tablespoons cooking oil

Steps:

  • In a large skillet heat oil; add chicken and onion. Squeeze the juice from 2-3 limes over chicken or substitute Old Sour if a spicier flavour preferred. Add thyme. Simmer chicken 30-40 minutes until fork tender and no longer red. Add salt and pepper to taste and serve immediately.
  • Note: if you use all breast meat, it might take less time. Likewise, if you use more chicken, it might take more time. Keep an eye on it.

1 (3 lb) broiler-fryer chickens, cut in pieces
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/4 teaspoon dried thyme
1/2 cup chicken broth
1/2 cup dry white wine (or more broth)
1 1/2 tablespoons flour
1/2 lb medium egg noodles
parsley

Steps:

  • Melt butter in vegetable oil in a large skillet. Brown chicken on all sides.
  • Add 1 tsp salt, pepper, oregano, thyme, broth and wine. Cover and cook 30 min or until chicken is tender. Remove chicken and set aside.
  • Bring to a boil. Mix flour with 2 tbsp cold water until smooth; stir into boiling sauce and cook 1 minute, stirring constantly.
  • Cook egg noodles in 4 qt boiling salted water. When cooked, drain and pour noodles into a serving dish. Top with chicken and sauce. Garnish with parsley.

This chicken simmers in a spicy sweet sauce flavored with soy sauce, garlic, and crushed red pepper. It was given to me by a member of the club where I worked.

1 whole fryer
1 tbsp. oil
1/3 cup soy sauce, regular or low salt
1/3 cup brown sugar
1/2 cup water
1 tbsp. catsup
1/4 cup dry sherry or apple juice
1/2 to 3/4 tsp. crushed red pepper, optonal
1 garlic clove, pressed
1 green onion, sliced
2 tbsp. cornstarch
1 tbsp. water
2 tsp. toasted sesame seeds

Steps:

  • 1. Heat oil in Dutch oven. Brown chicken on all sides. Mix together soy sauce, brown sugar, water, catsup, sherry, red pepper garlic, and green onion. Pour mixture over chicken.
  • 2. Cover and simmer 35 to 45 minutes. Remove chicken to platter, draining juices back into pan.
  • 3. Skim fat from sauce. Blend together cornstarch and water,stir into sauce. Cook, stirring constantly til thickened. Spoon some sauce over chicken. Sprinkle with sesame seeds. Serve chicken with remaining sauce. Sesame seeds need to be toasted to develop their nut-like flavor. Toast sesame seeds in a shallow pan at 350 degrees for 10 minutes, stirring frequently.
  • 4. My friend altered the recipe to read: 1/2 cup soy sauce instead of 1/3 cup 1/2 cup brown sugar instead of 1/3 cup 3/4 cup water, instead of 1/2 cup 1 1/2 Tbsp. catsup instead of 1 Tbsp 3/8 cup dry sherry or apple juice instead of 1/4 cup Just her preference, I guess.
  • 5. Microwave directions: Place chicken in 3 quart casserole. Pour soy sauce mixture over chicken. Cover and microwave on high for 5 minutes. Microwave on medium for 15 minutes. Turn chicken. Cover and microwave on medium 15 to 20 minutes. Remove chicken to platter. Blend cornstarch and water and stir into sauce. Microwave on high 1 to 2 minutes til thickened.

1 teaspoon whole black peppercorns
1 medium quartered red onion
2 ribs celery, cut into thirds
9 ounces baby carrots
9 ounces baby turnips
1 pound small potatoes, such as Yukon Gold, red, or purple
Freshly ground black pepper
2 tablespoons fresh chopped dill

Steps:

  • Remove giblets from the chicken, and season generously with salt. Place in a large pot. Add bay leaves, peppercorns, onion, celery, carrots and turnips (with some of the greens left intact), and potatoes. Fill pot with water until ingredients are 1 inch below the surface, and bring water to a boil.
  • Reduce heat to low and simmer, skimming foam from the surface, until chicken is cooked through and the vegetables are tender, about 45 minutes. Season to taste with salt and pepper. Stir in dill.
  • Transfer chicken to a cutting board and let rest 5 minutes. Transfer vegetables to a large serving dish. Carve chicken and arrange with vegetables. Serve immediately, ladling broth over each serving.

Spicy Chocolate Milk-Simmered Chicken image

1 cup chocolate milk
2 tablespoons chili powder
2 jalapeños, stemmed and split lengthwise
2 1/2 teaspoons kosher salt
4 chicken breasts
2 teaspoons olive oil
2 cloves garlic, minced

Steps:

  • In a saucepan, combine the chocolate milk, chili powder, jalapeños, 2 teaspoons of the salt, and the chicken thighs. Bring the mixture to a boil over high heat, turn the heat to low, and simmer for 35 to 40 minutes, or until the chicken is very tender.
  • While the chicken is cooking, add the oil to a large sauté pan over high heat. When the oil just starts to smoke, add the zucchini and the remaining 1⁄2 teaspoon salt, and sauté for 5 to 7 minutes, stirring occasionally, until the zucchini is caramelized and soft, though not so soft that it's turning to mush. Add the garlic and cook for another minute, until the garlic starts to caramelize a little. Serve

I found this recipe from Ragu in a magazine. It's a great warm meal for a wintry cold day. It's easy to make and uses ingredients you probably already have.

1 lb boneless chicken breast, cut into 1-inch pieces
2 garlic cloves, minced
2 tablespoons olive oil
4 medium potatoes, cut 1/2-inch cubes (about 4 cups)
1 medium red bell pepper, diced
1 (27 2/3 ounce) jar pasta sauce
1 lb fresh cut green beans or 1 lb frozen green beans
1 teaspoon dried basil
salt and pepper

Steps:

  • In a 12" skillet, saute chicken and garlic in olive oil until chicken is lightly browned.
  • Added potatoes and peppers; continue to cook about 5 minutes, stirring occasionally.
  • Add sauce, basil, green beans, salt and pepper; bring to boil.
  • Reduce heat to medium; cover and simmer for 35 minutes or until chicken is thoroughly cooked and potatoes are tender.
  • Stir occasionally.

1 whole chicken, cut into pieces
1 Tbsp oil for frying
1/2 c chicken broth
1/3 c soy or tamari sauce
1/4 c sherry
1/3 c brown sugar, coconut sugar or 1 tbsp honey
1 Tbsp catsup
1 clove garlic, pressed
1/2 tsp crushed red pepper flakes
2 green onions, sliced
2 Tbsp corn starch
1 Tbsp water
2 tsp sesame seeds, toasted

Steps:

  • 1. Heat the oil in a large skillet. Brown chicken on all sides.
  • 2. In a bowl, mix together next 8 ingredients (not the corn starch, water or sesame seeds) and pour over the chicken pieces in the skillet. Cover and simmer 35-45 minutes, turning the pieces after about 20 minutes.
  • 3. Remove chicken to platter. Skim any fat from the juices in the pan and set it to simmering. Blend together the cornstarch and water. Add to the pan, whisking and cooking until thick. Spoon sauce over chicken and sprinkle with sesame seeds. Serve extra sauce on the side.

1/4 cup(s) lime juice (2-3 limes), or old sour if zest is desired
1/2 teaspoon(s) thyme
- salt and pepper, to taste
2 tablespoon(s) cooking oil

Steps:

  • In a large skillet heat oil and add chicken and onion. Squeeze the juice from 2-3 limes over chicken or substitute Old Sour if a spicier flavor is preferred.
  • Add thyme. Simmer chicken 30-40 minutes until fork tender and no longer red.
  • Add salt and pepper to taste and serve immediately.
  • Note: Most Bahamians also soak the chicken pieces in lime juice the day prior to preparing for a fuller flavor.
