SHRIMP SCAMPI PIZZA
Reinvent the classic pasta dish in pizza form. Top pizza dough with tender shrimp, two cheeses and a lemony, garlic-infused butter sauce. Sprinkle with an extra pinch of crushed red pepper for an added kick of heat.

- Set an inverted baking sheet on a rack in the center of the oven and preheat the oven to 450 degrees F. Invert another baking sheet and place a piece of parchment on top and set aside.
- Melt the butter in a small saucepan over medium heat. Stir in the garlic and crushed red pepper flakes, and cook until fragrant, about 2 minutes. Pour in the wine and reduce until the alcohol smell is no longer present and the sauce is golden, 4 to 5 minutes. Remove the pan from the heat and stir in the lemon zest. Season with salt and pepper and set aside.
- Dust the parchment paper on top of the inverted baking sheet with flour. On a lightly floured work surface, roll out and stretch the dough into a 12-inch circle then place it on the paper. Scatter the shrimp evenly over the dough leaving a 1/2 inch border all around. Spoon the butter sauce over the shrimp, and use a pastry brush to spread the sauce to the edges. Finish by sprinkling the mozzarella cheese over the top, staying within the border.
- Place the sheet pan with the pizza on top of the preheated inverted baking sheet and bake until the dough is crisp and the shrimp are cooked through, 12 to 14 minutes. Sprinkle the pizza with the parsley and freshly grated Parmesan, slice into wedges and serve immediately.

Steps:
- garlic shallot butter:.
- melt 1 T butter in a nonstick pan over medium high heat.
- add shallot, garlic and thyme.
- cook, stirring, till mixture is reduced to about 1/2 cup (toward end of reduction, reduce heat to low and stir frequently).
- remove the pan from burner, quickly and thoroughly whisk in remaining 4 T butter.
- roasted garlic:.
- preheat oven to 325.
- coat the coarsely chopped garlic with oil.
- spread the pieces of garlic over the surface of a glass casserole or sheet pan.
- roast in the preheated oven for 25-30 minutes, until the edges of the garlic begin to brown.
- remove the garlic from the oven.
- scrape up the garlic and redistribute it in a single layer to provde even browning.
- return the garlic to oven for another 15 minutes.
- remove from the oven when it is uniformly golden brown. set aside.
- to make pizza:.
- preheat oven to 425.
- prepare dough.
- use a large spoon to spread garlic shallot butter over surface of the crust, within the rim.
- spread mozzarella over the butter sauce.
- evenly distribute the onions and roasted garlic over the cheese.
- place shrimp, skin side up evenly over the cheese and toppings.
- transfer pizza to preheated oven, bake till crust is crispy and golden and the cheese at the center is bubbly, about 15 minutes.
- the shrimp should be opaque and cooked through.
- when pizza is fully cooked, carefully remove from the oven, sprinkle oregano and parsley over the cheese.
- slice and serve.

SHRIMP SCAMPI PIZZA
I love a good garlicky pizza! I love that this has the sauce poured on top before baking. It really keeps the shrimp from drying out and enhances the garlic flavor.

- For dough:.
- Dissolve yeast and sugar in water and let stand 10 minutes.
- Add oil and salt.
- With dough hook mix onlow, adding flour slowly until sot ball forms.
- Knead with machine for 3-4 minutes.
- Knead by hand on lightly floured surface to a smooth ball.
- Place dough in a greased bowl (use olive oil).
- Cover and let stand until almost doubled.
- While dough is rising, place garlic on a baking sheet, and drizzle 1 tablespoon oil on each bulb.
- Roast at 375 degree oven until entire bulb is soft (20 minutes).
- Let cool.
- Remove cloves from the husks.
- Mash garlic into a paste.
- Punch down the the dough.
- Stretch to fit a well-oiled 15 inch round deep pizza pan.
- Let rise 30 minutes.
- Preheat oven to 425 degrees.
- Brush pizza with olive oil.
- Spread with garlci paste and sprinkle with grated cheese.
- Bake 20 minutes.
- Remove from oven.
- While dough is cooking, heat 2 tablespoons oil in frying pan.
- Add shrimp and cook 2 minutes.
- Remove shrimp.
- Add garlic and pepper to pan and cook 30 seconds.
- Add wine.
- Simmer until wine is reduced to about 1 tablespoon.
- Remove from heat.
- Whisk in butter 1 tablespoon at a time.
- Add parsley.
- Arrange shrimp on top of pizza.
- Pour sauce over shrimp.
- Bake 10-15 minutes, until bottom is light brown.
- Let it set for 5 minutes before cutting.

TUSCAN KALE PESTO PIZZA WITH SHRIMP SCAMPI

- For the Tuscan kale pesto: Place the entire dressed salad--including the hazelnuts, raisins and shaved pecorino--in a food processor and process to a fine paste. With the motor running, stream in the olive oil until the paste loosens into a pesto. Use immediately or store in an airtight container for up to 2 days before using. (Makes 2 1/2 cups; see Cook's Note.)
- For the shrimp scampi: Heat the butter and olive oil in a 12-inch skillet over medium-high heat. Sprinkle the shrimp with 2 teaspoons salt; add to the hot pan, along with the garlic. Cook until the shrimp are just starting to turn pink, 3 minutes. Add the wine and chile paste, and bring to a boil; boil until the shrimp are cooked through and the wine is reduced by half, about 4 minutes. Remove from heat and stir in the lemon juice and lemon zest. Season with more salt if needed.
- For the pizza: Preheat the oven to 450 degrees F. Line two baking sheets with foil.
- Place the flatbreads, bottom-side up, on the prepared baking sheets; brush each with 1 tablespoon of the oil. Transfer to the oven and toast until just beginning to brown and get crispy. Let cool for 5 minutes.
- Turn the flatbreads over, spread 1/4 cup kale pesto over each and then sprinkle each with 1/3 cup of the fontina. Place back in the oven for another 5 minutes, until the top edges have browned slightly and the cheese is melted. Remove from the oven and top with 6 to 8 pieces of shrimp per pizza. Spoon over some scampi sauce.
- Cut the pizzas into smaller pieces and serve immediately.
- In a large bowl, combine the kale and 1/2 teaspoon salt. Massage the salt into the kale and let sit for 10 to 15 minutes. In another bowl, combine the raisins, 1/4 cup of the vinegar and 1/4 cup hot water. Rehydrate the raisins for at least 15 minutes. Drain when ready to serve.
- Combine anchovies, grated pecorino, shallots, honey and the remaining 1/4 cup vinegar in a blender. Blend on high speed until smooth. With the motor running, slowly add in the oil. Pour the dressing over the salad at least 15 minutes before serving to help further tenderize the kale.
- When ready to serve, add the toasted hazelnuts and plumped golden raisins to the salad, and garnish with shaved pecorino.

- 1. In a small saucepan, melt 1/4 cup butter over med heat, add garlic and cook for just a few minutes, making sure not to burn. Remove from heat and add seasonings. Let cool then stir in the cheese. ( This will be used to spread on dough before cheese.) Forgot to get a picture of it finished.
- 2. For the shrimp : In a medium skillet, melt the butter over medium high heat, when frothy add the garlic and stir, then add the shrimp & seasonings. Cook until shrimp is done, about 3 minutes, turning and shaking pan often. Once shrimp is cooked, stir in the dry sherry. Set aside to cool, then cut each shrimp in half.
- 3. Preheat oven to 450 degree F. Lightly grease your pizza pan and sprinkle lightly with corn meal. Pat out the crust with greased fingers ( I use olive oil. ) Once you have the crust spread out and have made an edge. Place in oven for about 3 - 5 minutes.
- 4. Remove crust and brush crust evenly with the garlic butter mixture you made in the first step. Sprinkle evenly with cheese. Using my fingers I spread the shrimp evenly over the cheese. Using fingers or spatula, evenly sprinkle the pizza with the juices left from the shrimp. Sprinkle evenly with the green onions.
- 5. Place your oven rack in the lowest position. Place pizza in oven and bake for 18 - 20 minutes or until crust is brown and cheese is bubbly.
- 6. I remove the pizza from the pan and cut into serving sized pieces. Sprinkle with some fresh Italian parsley, red pepper flakes and some kosher salt, if prefer. Delicious!
