3 tablespoons EVOO
4 scallions, white parts finely chopped and green parts thinly sliced on an angle
1 Fresno chile, finely chopped, or 1 1/2 teaspoons ground red pepper
Juice of 1/2 lemon
Kosher salt and freshly ground black pepper
16 jumbo shrimp, tails on and deveined
16 thin slices prosciutto

Steps:

  • Heat a grill or grill pan to medium.
  • Combine the EVOO, scallion whites, chile and lemon juice in a medium bowl and season with salt and pepper. Add the shrimp and toss to coat. Wrap each shrimp with a slice of prosciutto and thread onto a skewer.
  • Grill the shrimp until firm and opaque, about 3 minutes per side. Transfer to a serving platter and garnish with the scallion greens and another squeeze of lemon juice.

35 to 40 (6-inch) wooden skewers
1 tablespoon olive oil
2 teaspoons smoked paprika
1 1/2 teaspoons black pepper, freshly ground
1 pound peeled and deveined shrimp, about 35 to 40 large shrimp
6 ounces prosciutto, sliced very thin

Steps:

  • Place the skewers in water and let them soak for at least 30 minutes. Heat the broiler to high and arrange a rack at the top, about 3 inches from the heat source. Combine the oil, paprika, and pepper in a medium bowl. Add the shrimp and toss until evenly coated. Starting at the thicker headend, skewer each shrimp through its center until the skewer emerges at the thinner tail end. Tearing the prosciutto as needed, wrap each shrimp in a piece large enough to just cover its surface. Place on a baking sheet. Broil until the shrimp are opaque and the prosciutto is crisp, about 3 to 4 minutes.

20 large frozen peeled deveined shrimp, thawed
1 tablespoon chopped fresh basil
1 teaspoon extra-virgin olive oil
1/2 teaspoon lemon zest
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
1/8 teaspoon fresh ground black pepper
10 very thin slices prosciutto (about 4 ounces total)
cooking spray
8 lemon wedges, for serving

Steps:

  • Preheat broiler.
  • In a medium bowl, combine the shrimp, basil, olive oil, zest, salt, red pepper flakes and black pepper. Mix well and set aside.
  • Lay the prosciutto slices on a large work surface and cut prosciutto in half lengthwise so you have 20 pieces. Wrap the prosciutto around each shrimp, leaving the tail hanging out, and thread on an 8-inch skewer. Repeat with remaining shrimp for a total of 4 skewers with 5 shrimp each.
  • Place the skewers on a broiling pan lightly coated with cooking spray. Broil the shrimp 2 minutes on each side. Serve hot with lemon wedges.
