2 tablespoons butter
1/2 cup slivered or sliced almonds
2 cups white rice
1 orange, zested
1 lemon, zested
1 quart chicken stock
6 tablespoons extra-virgin olive oil, divided
2 pounds beef tenderloin or sirloin tips, bite size pieces
Salt
Freshly ground black pepper
1 1/2 pounds mushroom caps, cremini or white, brushed clean and halved
6 clove garlic, finely chopped
1/2 cup dry Spanish sherry
1 cup beef stock

Steps:

  • Heat a sauce pot over medium heat, add butter to the pot and melt. Add almonds and toast 3 to 4 minutes. Add rice and the zest of an orange and a lemon then turn the rice to coat, cook 1 minute. Add stock and bring to boil, reduce to simmer, cover and cook 17 to 18 minutes.
  • While rice cooks, heat a large skillet over medium-high heat with 3 tablespoons olive oil, 3 turns of the pan. Pat meat dry. When oil ripples and begins to smoke, add the beef and brown 3 minutes on each side. Remove when evenly deep brown and reserve on plate.
  • Add remaining olive oil to skillet, 3 turns, heat until oil ripples then add mushrooms and brown 7 to 8 minutes. Add garlic after 5 to 6 minutes. Season mushrooms with salt and pepper cook a few minutes more. Add sherry, reduce 1 minute, add beef stock and beef tips and their juices to pan. Reduce heat and cook 3 to 4 minutes more. Turn off heat.
  • Fluff rice with fork and serve with the beef and mushrooms.

Mini Beef Wellingtons with Morel Mushrooms, Sherry and Thyme image

One 17.3-ounce package frozen puff pastry, thawed
All-purpose flour, for dusting
1 ounce dried morels or porcini mushrooms
2 tablespoons vegetable oil, for cooking
Kosher salt
Freshly ground black pepper
Four 6-ounce pieces beef tenderloin
4 small shallots, peeled and finely chopped
2 tablespoons unsalted butter
1 pound fresh chestnut or crimini mushrooms, cleaned and finely chopped
1/4 cup medium-sweet sherry, optional
1 bunch thyme, leaves only
1 large egg, lightly beaten
1 cup heavy cream

Steps:

  • Roll out the puff pastry on a well-floured work surface until about 14-inches square and 1/8-inch thick. Trim the edges, if necessary, and cut the puff pastry into 4 squares. You may need to roll the puff pastry larger or smaller depending on the size of the meat. Put them in a single layer onto one or two baking sheets and into the refrigerator to firm up.
  • Rinse the dried mushrooms in cold water, put them into a small bowl and cover them with hot water. Let soak for 20 minutes.
  • Heat 2 tablespoons oil in a medium skillet over medium-high heat. When the pan is very hot, season the meat with salt and pepper and sear on each side for 1 minute per side. Set aside.
  • Turn the heat down to medium, add the shallots to the pan and cook until they are soft, 4 to 5 minutes. Add the butter and fresh mushrooms and cook for another 2 to 3 minutes. Drain the dried mushrooms and chop them finely. Add them to the pan along with the sherry, if using. Turn the heat up a bit and cook until the mushrooms are almost dry, 3 to 4 minutes. Add the thyme and season with salt and pepper. Cook for 1 more minute, take the pan off the heat and set aside.
  • Preheat the oven to 400 degrees F.
  • Remove the pastry from the refrigerator. Put a large tablespoon of the mushroom mixture in the center of a pastry square and spread it out to the same size as the meat. Place a piece of tenderloin on top and brush some egg wash around the edges of the pastry. Fold up the corners and sides of the pastry so they meet and overlap slightly in the middle. Turn it over so the seams are down and shape it into a neat package with your hands. Repeat with the other three squares. If the pastry has gotten soft, put the packages back in the refrigerator for 5 to 10 minutes to firm up. This will make sure the pastry does not just melt into a gooey mess in the oven before it has a chance to puff up. Save the remaining mushroom mixture for the sauce.
  • When you are ready to bake, cut a design into the top of each package with a paring knife. Brush them all over with egg wash. Bake for 14 minutes for medium rare or adjust the time shorter or longer according to how you like your meat cooked.
  • While the Wellingtons are baking, reheat the mushroom mixture. Add the cream and cook on high for 2 minutes. Taste and adjust the seasoning. Remove from the heat, cover and keep warm.
  • When the Wellingtons are ready, remove them from the oven and serve with the sauce and a big glass of hearty red wine.

2 lbs stew meat
2 (10 1/2 ounce) cans condensed golden mushroom soup
2 tablespoons Lipton Onion Soup Mix
3/4 cup red wine (or Sherry)
1 tablespoon margarine
1/4-1/2 cup canned beef broth (depending on if you choose to use the wine or not)
1/4 teaspoon basil
1/4 teaspoon thyme
1/2-1 lb sliced fresh mushrooms (put in last hour of cooking)
1 lb kluski noodles, cooked, drained and buttered (or Reame's frozen noodles)

Steps:

  • Mix all ingrendients together in a covered casserole dish (except for the mushrooms that you will need to add the last hour of cooking).
  • Bake in a preheated 325 degree oven for 3 hours.
  • Add sliced, fresh mushrooms during last hour of cooking.
  • Serve over prepared Kluski or Reame's noodles.
  • 2ND OPTION: Instead of baking in an oven, you can also prepare this in a Crock Pot and cook on LOW for 8 hours (adding the mushrooms during the last hour.) Serve over prepared noodles, as per recipe, when done.
  • NOTE: To make the gravy a bit thicker, take 1 tablespoons flour and mix with 1 tablespoons water, then add in when you add the mushrooms and be sure to stir well.

1/2 cup parsley leaves, a couple of handfuls
8 cloves garlic, cracked away from skins
1 pound chorizo sausage, casings removed
1/4 cup extra-virgin olive oil
1 1/2 pounds tenderloin or sirloin of beef, well trimmed, cut into bite sized pieces
Coarse salt and pepper
24 medium to large mushroom caps
1 cup dry sherry

Steps:

  • Preheat a grill pan over medium high heat.
  • Place parsley and garlic in food processor and chop.
  • Heat a large, heavy skillet over high heat.
  • Cut chorizo on an angle in 1/2-inch slices. Grill 2 minutes on each side. Transfer to a serving dish.
  • To the hot skillet, add about 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Add meat and sear the pieces on all sides to caramelize it evenly. Add half of the garlic and parsley mixture to the pan. Turn to coat the meat. Season meat with salt and pepper. Add 1/2 cup sherry and turn the meat in the wine as it deglazes the pan. Transfer to a serving dish and cover with loose foil to keep warm. Return pan to heat.
  • Repeat the same process with the mushrooms: add extra-virgin olive oil to the pan, 2 tablespoons or 2 turns of the pan. Add mushrooms, cook 3 or 4 minutes to char edges and soften, add parsley and garlic, then salt and pepper, then sherry. Reduce sherry while scraping up pan drippings and remove to serving dish.

ROASTED BEEF TENDERLOIN WITH SHERRY VINAIGRETTE AND WATERCRESS

  • Preheat oven to 500°F. Rub 1 tablespoon olive oil into beef, then rub in kosher salt and ground mixed peppercorns. Place beef on small rimmed baking sheet. Roast 10 minutes. Reduce heat to 450°F and roast until thermometer inserted into thickest part of meat registers 125°F for medium-rare, about 15 minutes longer. Let meat stand 5 minutes (internal temperature of meat will increase 5 to 10 degrees).
  • Meanwhile, whisk remaining 5 tablespoons olive oil, vinegar, and mustard in small bowl to blend. Stir in shallots and season vinaigrette to taste with salt and pepper.
  • Arrange watercress on small platter. Cut meat into 1/2-inch-thick slices; arrange overlapping slices atop watercress. Drizzle any accumulated juices over meat. Spoon half of vinaigrette down center of meat and over watercress. Serve, passing remaining vinaigrette separately.

Beef short ribs are pretty much foolproof, and as long as two things happen, you are in for some very fine eats. First, the beef must be really well browned - I'm talking deep, dark, crusty, and caramelized. The other key step is easier. To paraphrase an expression, 'stick a fork in them, they're done.' Just braise them until they're fork-tender. After browning properly, the only way to mess these up is to undercook them, so don't.

4 slices bacon, cut into 1/2-inch pieces
3 ½ pounds beef short ribs
salt and ground black pepper to taste
6 sprigs fresh thyme, leaves stripped
1 bay leaf
1 onion, diced
3 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup dry sherry
1 quart beef broth

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Transfer crisped bacon with a slotted spoon to a Dutch oven. Retain bacon drippings in the skillet.
  • Generously season short ribs with salt and pepper.
  • Heat bacon drippings in the same skillet over high heat. Cook short ribs in hot bacon fat until browned and caramelized on all sides, 3 to 5 minutes per side. Transfer ribs to the Dutch oven, reserving drippings in the skillet. Add thyme and bay leaf to the ribs mixture.
  • Reduce heat under the same skillet to medium. Cook and stir onion in the skillet until soft and golden, 5 to 10 minutes. Add garlic; cook and stir until fragrant, about 30 seconds.
  • Whisk flour into onion mixture and stir until the mixture becomes paste-like and light golden brown, 1 to 3 minutes.
  • Pour sherry into onion mixture; cook until thick and hot, about 2 minutes. Pour onion-sherry mixture into Dutch oven; add beef broth and salt to taste. Bring ribs mixture to a simmer and cover the Dutch oven with a lid.
  • Transfer Dutch oven to the preheated oven and cook until short ribs are fork tender, about 2 hours. Remove ribs to a serving dish, reserving sauce in the pot.
  • Set Dutch oven high heat and boil sauce until reduced and slightly thickened, about 10 minutes. Spoon reduced sauce over ribs.

3 Tbsp cold water
1/2 tsp garlic salt
1 tsp dried oregano
Dash of black pepper
Dash of paprika
1 Tbsp all-purpose flour
1 egg, slightly beaten
1/4 cup seasoned bread crumbs
2 Tbsp butter
TOPPING:
1 cup spaghetti sauce
3/4 cup grated Kraft Cheddar Cheese
2 Tbsp Kraft Grated Parmesan Cheese
1 Tbsp dried Italian herbs

Steps:

  • Preheat oven to 400°F. Spray a shallow baking dish sparingly with cooking spray. Set aside. In large bowl, combine ground beef or ground turkey, cold water, garlic salt, oregano, pepper and paprika. Mix, blend well.

Sherry Cream Sauce
3 tablespoons butter
4 cloves garlic, minced
1/4 cup all-purpose flour
2 cups beef broth
1/2 cup dry sherry
1 cup heavy whipping cream

  • Sprinkle fillets evenly with 1 tsp. salt and pepper. In a large skillet, melt butter over medium high heat. Add fillets, in batches, and sear, 1 to 1 1/2 minutes on each side. Remove fillets from skillet, reserving pan drippings, and place on a baking sheet. Cover and chill 1 hour. Add mushrooms and shallot to pan drippings: cook over medium high heat 3 minutes. Add sherry, cream, parsley and remaining salt: cook, stirring frequently, until all liquid is absorbed (about 12 to 14 minutes). Remove from heat and let cool. Cover and chill until ready to assemble Wellingtons. Preheat oven to 425º. Line 2 rimmed baking sheets with parchment paper. On a lightly floured surface, roll 1 puff pastry sheet to a 12x10 inch rectangle. Cut in half lengthwise. Spoon 1 heaping tablespoon mushroom filling in center of each pastry. Top each with a chilled fillet. Brush edges of pastry with beaten egg. Wrap 2 opposite sides of pastry over each fillet, overlapping them: seal seam with beaten egg. Wrap remaining 2 sides of pastry over fillet, and seal with beaten egg. Seal any gaps with beaten egg and press pastry around fillet to enclose completely. Repeat procedure with remaining puff pastry, mushroom filling, and fillets. Decorate fillets as desired with remaining puff pastry dough. Place fillets, seam side down, on prepared pan. Brush entire surface of pastry with beaten egg. Bake 20 to 22 minutes or until pastry is golden brown. Serve immediately with Sherry Cream Sauce. In a medium skillet, melt butter over medium heat. Add garlic and cook 3 minutes. Add flour and cook, stirring constantly, for 2 minutes. Stir in broth and sherry; bring to a boil, reduce heat, and simmer 10 minutes. Stir in cream, and simmer 20 minutes, or until thickened.
