2-1/2 pounds potatoes, peeled and cooked
1 cup sour cream
Salt and pepper to taste
2 pounds ground beef
1/2 cup chopped onion
1 medium sweet red pepper, chopped
1 teaspoon garlic salt
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (16 ounces) whole kernel corn, drained
1/2 cup milk
2 tablespoons butter, melted
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. For additional browning, place under broiler for a few minutes. Sprinkle with parsley if desired.

4 russet potatoes
3 carrots
3 stalks celery
½ yellow onion
2 cups chopped mushrooms
1 tablespoon flour
1 teaspoon fresh thyme
1 teaspoon fresh sage
4 cloves garlic
2 cups vegetable broth
⅓ cup red wine
salt, to taste
pepper, to taste
soy milk, or rice milk, as needed
vegan butter, as needed
1 tablespoon tomato paste

Steps:

  • Peel, chop, and boil the potatoes for 10-15 minutes until soft.
  • Meanwhile, chop the carrots, celery, and onion, sauté in vegan butter or oil for a few minutes.
  • Add the mushrooms, and cook until the edges begin to darken. Add the garlic, and season with salt and pepper.
  • Add the tomato paste, flour, thyme, and sage.
  • Slowly add the veggie broth and wine, stirring continuously. Let simmer for a few minutes to thicken.
  • Mash the potatoes and add the soy milk and vegan butter. Add more if needed until smooth. Season with salt and pepper to taste.
  • Lay the veggie filling into a baking dish, the spread the mashed potatoes over top. At this time you can get creative with designs and patterns for the top. The rougher the surface, the crispier it will turn out.
  • Spray the surface with cooking oil. Broil for 10-15 minutes, or until the top is crispy.

1 1/2 pounds russet potatoes
1/4 cup half-and-half
2 ounces unsalted butter
3/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 egg yolk
2 tablespoons canola oil
1 cup chopped onion
2 carrots, peeled and diced small
2 cloves garlic, minced
1 1/2 pounds ground lamb
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 tablespoons all-purpose flour
2 teaspoons tomato paste
1 cup chicken broth
1 teaspoon Worcestershire sauce
2 teaspoons freshly chopped rosemary leaves
1 teaspoon freshly chopped thyme leaves
1/2 cup fresh or frozen corn kernels
1/2 cup fresh or frozen English peas

Steps:

  • Peel the potatoes and cut into 1/2-inch dice. Place in a medium saucepan and cover with cold water. Set over high heat, cover and bring to a boil. Once boiling, uncover, decrease the heat to maintain a simmer and cook until tender and easily crushed with tongs, approximately 10 to 15 minutes. Place the half-and-half and butter into a microwave-safe container and heat in the microwave until warmed through, about 35 seconds. Drain the potatoes in a colander and then return to the saucepan. Mash the potatoes and then add the half and half, butter, salt and pepper and continue to mash until smooth. Stir in the yolk until well combined.
  • Preheat the oven to 400 degrees F.
  • While the potatoes are cooking, prepare the filling. Place the canola oil into a 12-inch saute pan and set over medium high heat. Once the oil shimmers, add the onion and carrots and saute just until they begin to take on color, approximately 3 to 4 minutes. Add the garlic and stir to combine. Add the lamb, salt and pepper and cook until browned and cooked through, approximately 3 minutes. Sprinkle the meat with the flour and toss to coat, continuing to cook for another minute. Add the tomato paste, chicken broth, Worcestershire, rosemary, thyme, and stir to combine. Bring to a boil, reduce the heat to low, cover and simmer slowly 10 to 12 minutes or until the sauce is thickened slightly.
  • Add the corn and peas to the lamb mixture and spread evenly into an 11 by 7-inch glass baking dish. Top with the mashed potatoes, starting around the edges to create a seal to prevent the mixture from bubbling up and smooth with a rubber spatula. Place on a parchment lined half sheet pan on the middle rack of the oven and bake for 25 minutes or just until the potatoes begin to brown. Remove to a cooling rack for at least 15 minutes before serving.

2 tablespoons olive oil
3 lb ground lamb
salt, to taste
pepper, to taste
1 large onion, chopped
3 large carrots
6 cloves garlic, grated

2 tablespoons tomato paste
2 tablespoons worcestershire sauce
1 cup red wine
1 cup chicken stock
3 lb yukon gold potato, cubed
¼ cup unsalted butter, 1/2 stick
4 large egg yolks
1 cup sour cream
1 cup grated parmesan cheese

Steps:

  • Preheat the oven to 425°F (220˚C).
  • Heat the oil in a large pan over medium-high heat until shimmering. Add the ground lamb, season with salt and pepper, and fry for 5 minutes, until cooked through.
  • Add the onion, carrots, garlic, thyme, and rosemary, stir, and cook for about 10 minutes, or until the veggies are softened and the meat is well-browned.
  • Add the tomato paste and Worcestershire sauce and stir to incorporate. Cook for 1-2 minutes, stirring constantly, until the liquid evaporates and the meat is aromatic.
  • Pour in the red wine and reduce until almost completely evaporated.
  • Add the chicken stock, bring to a boil, and cook the meat until the stock has evaporated, 5 minutes.
  • Meanwhile, cook the potatoes in a large pot of boiling salted water until tender. Drain, then return to the hot pan over low heat to dry out a bit.
  • Transfer the potatoes to a large bowl and mash until smooth.
  • Add salt, the butter, egg yolks, sour cream, and Parmesan cheese. Fold until well combined.
  • Transfer the potatoes to a piping bag or zip-top bag fitted with a star tip.
  • Spoon the lamb mixture into a large baking dish. Pipe the golden mashed potatoes over the lamb.

Having these ingredients on hand, I winged this one night and it was delicious! I used simple homemade gravy and mashed potatoes which is reflected in the last 8 items in the ingredient list, but by all means if you have left-overs or premade gravy and mashers, use them instead! The italian cheese (finely shredded mozz, provolone etc) I had on hand and thought it would add a little extra oomph to the potatoes and I was right! These were the yummiest mashers I have ever made and I think they made the dish.

2 lbs ground meat, beef, pork, lamb, turkey, any combo
1 medium onion, chopped
6 garlic cloves, 3 of them minced
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon black pepper
6 ounces mushrooms, sliced
1 tablespoon rosemary, minced (optional)
8 ounces frozen mixed vegetables
2 tablespoons butter
2 tablespoons flour
1 (14 ounce) can beef broth
2 lbs potatoes, diced (yukon golds are awesome)
2 ounces cream cheese
1/2 cup sour cream
1/4-1/2 buttermilk
4 ounces Italian cheese blend
2 -4 ounces shredded cheddar cheese, to taste

Steps:

  • If you are making homemade mashed potatoes, start them boiling or steaming with 3 cloves of garlic while you prepare meat mixture.
  • Saute onions and minced garlic in oil over medium heat, season with a pinch of salt and pepper for about 3 minutes.
  • Add ground meat and saute until almost done then add mushroom, rosemary and worchestershire and continue cooking til meat is done. Season to taste with salt and pepper.
  • Add mixed vegetables and cook until thawed, then drain and add to baking dish. I used a 9x13 corningware casserole dish.
  • In same saute pan, melt butter over medium heat then whisk in flour until combined. (You want a light golden roux.) Then whisk in beef broth and cook continually whisking til gravy thickens, about 5 minutes. Taste and season accordingly, stir into meat mixture.
  • Mash cooked potatoes with cream cheese and sour cream. I used my kitchenaid stand mixer for ease and consistency, but not necessary. Slowly add buttermilk until you reach desired consistency. Salt and pepper to taste. Stir in italian cheese.
  • Spread potatoes over meat mixture, sprinkle shredded cheese on top. Cover with foil and bake at 350 for 25 minutes.
