I love this! Fast, easy, simple. It is not overly sweet or heavy like most cake frostings. My co-worker asks for a bowl of just this frosting for her birthday. She dips vanilla wafers or Oreo cookies into it.

1 (8 ounce) box sugar-free instant pudding mix
1 (12 ounce) container frozen whipped topping, thawed
2 tablespoons milk

Steps:

  • Pick your favorite flavor of sugar free instant pudding mix.
  • YOU MUST DO THIS! Take 2 tablespoons of milk and dissolve the pudding mix into it before adding the Cool Whip by folding it in gently. (This will get rid of any graininess). WARNING! If you over mix this, the frosting will become grainy or sticky!
  • Fold into the thawed whip topping.
  • Spread on cake or dip cookies, fruit or spoon now and eat!
  • Keep leftovers refrigerated.
  • My aunt has added drained pineapple or mandarin oranges and coconut into the frosting after step 2 (they are folded into the Cool Whip with the pudding/milk mixture).

OK so if you are HUGE carrot cake fan this will not completely satisfy you but it was seriously yummy and shoot 5 minutes from mixing to eating you just can't beat. I found this recipe on The World According To Eggface. I have not tried this recipe, but I'm posting it for safe keeping.

1 egg, beaten
3 tablespoons milk (I used Vanilla Soy)
2 tablespoons sugar free torani syrup (I used Sugar Free Vanilla)
2 tablespoons no sugar added strained carrot baby food
2 tablespoons canola oil
3 tablespoons multigrain pancake mix (I use this)
1 teaspoon cinnamon
1 tablespoon pecans, chopped
1 tablespoon raisins
1 scoop vanilla protein powder
1 pinch salt
cream cheese
ricotta cheese
sugar free torani syrup or sugar-free maple syrup
pecans

Steps:

  • In a measuring cup or microwave safe mug, Mix egg, milk, syrup, carrot and oil and combine thoroughly. In a separate bowl, mix pancake mix, cinnamon, nuts, raisins, protein powder and salt. Tip dry into wet and stir till combined. Nuke in microwave for 2 minutes. Let it sit for three or so minutes (it pulls away from the sides) before tipping the cake onto a plate. Yields 4-5 slices. Top with Cream Cheese Frosting.
  • Cream Cheese Frosting: Equal parts Cream Cheese, softened and Ricotta Cheese sweetened with Sugar Free Torani Syrup or Sugar Free Maple Syrup to taste. Mix in a few chopped pecans.

This is amazingly good! It's perfect for a special occasion (like Valentine's Day) or when you just have to have something sweet and yummy in a hurry. There's no baking or complicated stuff so you can literally put this on the table within a few minutes. I top mine with strawberry topping but you can use any flavor you like. It can be made with sugar, splenda or even stevia. You can used regular or reduced fat cream cheese. I use reduced and splenda. It will actually serve up to 4 adults if you really want to share it.

10 vanilla wafer cookies (or chocolate ones)
1 (8 ounce) package reduced-fat cream cheese
1/4 cup half-and-half (or milk)
1 teaspoon vanilla extract
1/4-1/3 cup sugar (or 1/4 to 1/2 cup splenda or 1/8 cup steevia)
1 (12 ounce) can solo brand strawberry pie filling

Steps:

  • You want to use a 1 quart casserole dish. For special occasions I use a heart shaped one. Whatever dish you choose should be about 5 or six inches across and have short sides.
  • Using your hands, crumble up the cookies into the dish. Crumble them pretty finely and spread them out evenly.
  • In a small bowl, combine the cream cheese, half and half, vanilla and your sweetener of choice (use the smaller amount of sweetener, taste and add more if you want it sweeter). Using a fork, mix everything up until smooth and well combined. Spread this carefully over top of the cookie crumbs.
  • Spread strawberry filling over the top and serve or you can chill to serve later. Try not to eat it before dessert.

Let the cake sit for three or so minutes (it pulls away from the sides) before tipping it onto a plate. Yields 4-5 slices. You can serve it warm or I love these cakes when they cool I think they taste even more chocolatey.
  • Top with Sugar Free Chocolate Syrup, Sugar Free Whipped Topping and Crushed Sugar Free Candy Canes, Chocolate Mint Candies or grated Sugar Free Andes Mint Chocolate.

1 cup soya flour or 1 cup besan flour
3/4 cup maize cornflour (100% corn)
2 teaspoons gluten free baking powder
1 teaspoon bicarbonate of soda
2 teaspoons mixed spice
1 cup firmly packed brown sugar
1 1/2 cups grated carrots (about two medium carrots)
1 cup chopped walnuts
1/2 cup light olive oil
1/2 cup sour cream
3 eggs, lightly beaten
125 g cream cheese, chopped
1 teaspoon finely grated orange rind
1 1/2 cups icing sugar

Steps:

  • CARROT CAKE: Preheat the oven to moderately slow (160c).
  • Grease a deep 20cm round cake tin, line the base and sides with baking paper.
  • Sift flours, baking powder, bicarbonate soda and spice into a large bowl.
  • Stir in the sugar, carrot and walnuts.
  • Stir in the combined oil, cream and eggs until smooth.
  • Pour the mixture into prepared cake tin and bake in a moderately slow oven for about one hour.
  • Stand the cake for 10 minutes before turning onto a wire cake rack to cool.
  • Top cake with Orange Frosting.
  • ORANGE FROSTING: Beat the cheese and the rind in a small bowl with an electric mixer until light and fluffy.
  • Gradually beat in the sifted icing sugar until smooth.

Made in a coffee mug that you cook in the microwave! I got this from my nextdoor neighboor who found it on an internet forward. its delicous! It can be a little dry, try topping or swirling with chocolate syrup?

4 tablespoons cake flour (plain flour, not self-rising)
4 tablespoons sugar
2 tablespoons baking cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (you can add more or less)
1 dash vanilla

Steps:

  • Add dry ingredients to a coffee mug and mix well.
  • Add the egg and mix thoroughly.
  • Pour in the milk and oil and mix well.
  • Add the chocolate chips and vanilla essence, mix again.
  • Put your mug in the microwave and cook for 3 minuter at 1000 watts.
  • The cake will rise over the top of the mug, but don't be alarmed!
  • Allow to cool a little and you can tip onto a plate if you want.
