CLASSIC MEATLOAF

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 cup dried breadcrumbs
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment.
  • Combine the meatloaf mix, breadcrumbs, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large mixing bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf about 9 inches by 5 inches. Bake the meatloaf for 30 minutes.
  • Stir the brown sugar together with the remaining 1/4 cup ketchup and 1 teaspoon Worcestershire in a small bowl for the glaze. Brush the top and sides of the meatloaf all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

2 pound(s) hamburger
1 - whole onion, chopped
1 pound(s) shredded, mozzarella cheese
1 - bell pepper, diced (optional)
1 tablespoon(s) italian seasoning
- salt & pepper to taste
1-2 can(s) cream of mushroom soup
2 - eggs

Steps:

  • Take all ingredients except soup and mix in a large bowl.form into a loaf and transfer to a glass casserole dish or loaf pan with plenty of room for juices.
  • Place meatloaf in oven and cook for approx.. 1 hr or until juices run clear, when juices run clear drain off some of the juice, then take the mushroom soup and spoon over the meatloaf and return to the oven for 15-20 minutes or until the soup is heated through.
  • Remove the meatloaf from the oven stir to mix the remaining juices and soup together to make a nice rich gravy, slice the meatloaf and serve, spoon gravy over meat.

2 pounds lean ground beef
20 saltine crackers, crumbled
1 large egg, lightly beaten
1/2 cup ketchup
1 tablespoon yellow mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
Slices of white bread, lettuce and tomato, for making sandwiches, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
  • For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing

SHEILA'S COUNTRY KITCHEN MEATLOAF

2 lb ground beef
1 cup oatmeal
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic salt
1 cup tomato juice (plus additional for topping)
2 eggs
1 pkg dry onion soup mix
1/2 cup Kraft Shredded Cheddar Cheese
4 slices bacon

Steps:

  • Mix all ingredients except cheese & bacon.
  • Shape into 2 meatloaf pans, make well the length of each loaf & fill with cheese. Pull meatloaf up over the cheese & seal. Cover with tomato juice. Place 2 strips of bacon on each loaf.
  • Bake at 350°F for 45 minutes-1 hour.

1 onion, finely chopped
2 garlic cloves, minced
2 large eggs
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon Tabasco sauce or hot sauce
1/2 cup milk, buttermilk or low-fat plain yogurt (yogurt preferred)
3 pounds ground meat: use meatloaf mix (beef, veal, pork) or 50% beef & pork
2/3 cups crushed saltines (about 16) or 2/3rds cup oatmeal or 1 1/2 cups fresh breadcrumbs (oatmeal preferred)
1/3 cup minced parsley, optional

3/4 cup 2% milk
2/3 cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
1/2 teaspoon rubbed sage
1-1/2 pounds ground beef
1/4 cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
1/2 teaspoon Worcestershire sauce

Steps:

  • Cut two 25x3-in. strips of heavy-duty foil; crisscross so they resemble an X. Place strips on bottom and up sides of a 5-qt. slow cooker. Coat strips with cooking spray., Combine the first 6 ingredients. Crumble beef over mixture and mix lightly but thoroughly. Shape into a round loaf; place in center of strips in slow cooker. Cook, covered, on low 5-6 hours or until a thermometer reads at least 160°. , In a small bowl, whisk ketchup, brown sugar, mustard and Worcestershire sauce. Spoon over meat loaf. Cook until heated through, about 15 minutes longer. Using foil strips as handles, remove meat loaf to a platter. Let stand 10-15 minutes before slicing.

This meatloaf recipe has been in my 3-ring binder of recipes clipped and pasted from magazines for a long time. I think it may originally have been from Good Housekeeping magazine. Anyway, it's one of the best meatloafs I've ever had and I'm posting it on Zaar for safekeeping!Leftovers make GREAT meatloaf sandwiches!

1 tablespoon cooking oil
1 medium onion, diced
1 stalk celery, diced
3 slices white bread or 3 slices whole wheat bread
2 lbs lean ground beef
1 medium carrot, shredded
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 egg (can use an egg substitute such as Eggbeaters)
1 (8 ounce) can tomato sauce
1 tablespoon light brown sugar
1 tablespoon cider vinegar
1 tablespoon prepared yellow mustard

Steps:

  • In medium frying pan over medium heat, saute onion and celery until tender, about 10 minutes, stirring occasionally.
  • Into large bowl, tear bread into small pieces.
  • Add onion mixture, ground beef, carrot,salt,pepper,egg, and 1/2 of tomato sauce and mix well with a spoon.
  • Turn mixture into a meatloaf pan( I use one with an insert that lets any grease drip to the bottom of the pan) and shape into a loaf.
  • If not using a meatloaf pan, in a 12" by 8" baking dish, shape mixture into a 8" by 4" loaf.
  • In a small bowl, mix the brown sugar, vinegar, mustard, and remaining tomato sauce.
  • Spoon mixture evenly over meatloaf in pan.
  • Bake at 350 degrees for 1 1/2 hours.
  • Serve meatloaf warm or cover and refrigerate to serve cold later.

2 slices day old white bread, torn into small pieces or 1/2 cup plain breadcrumbs, preferably homemade
1 yellow onion, finely chopped (3/4 cup)
1 medium carrot, finely chopped (3/4 cup)
1 rib celery, finely chopped (1/2 cup)
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh thyme
3 tablespoons Worcestershire sauce
1/4 cup low-sodium chicken broth
3/4 cup ketchup
2 pounds 85% lean ground chuck
1 large egg, lightly beaten
1 tablespoon light brown sugar

Steps:

  • Preheat oven to 350 degrees. Tear bread into pieces; pulse in a food processor to make fine crumbs (or use plain breadcrumbs) set aside.
  • Cook the Vegetables:Pulse vegetables in food processor until finely chopped (or do so by hand). Heat olive oil in a large skillet over medium-high. Add vegetables, thyme, and 1 teaspoon kosher salt to skillet; cook, stirring occasionally, until vegetables have softened, about 8 minutes. Stir in Worcestershire sauce, broth, and 1/4 cup ketchup. Remove from heat; let cool completely.
  • Prep the Meat and Glaze: In a small bowl, stir together remaining 1/2 cup ketchup and the brown sugar for glaze; set aside. In a large bowl, combine vegetable mixture with ground chuck, egg, 1/2 cup breadcrumbs, 2 teaspoons salt, and 1/2 teaspoon freshly ground pepper. Mix with your hands until well combined.
  • Bake and Let Cool:On a rimmed baking sheet, form meat mixture into a loaf that's 10 inches long, 4 inches wide, and 2 inches high, packing firmly to prevent cracking. Coat top and sides with glaze. Bake until top is caramelized and a thermometer inserted into thickest part registers 165 degrees, 55 to 65 minutes. (If top is browning too quickly, tent with foil.) Let cool at least 25 minutes, then serve with comforting sides, like mashed potatoes. and sauteed broccolini.

2 eggs
1 onion (diced)
¼ cup ketchup
salt and pepper (to taste)
1 cup quick oats
½ cup Italian breadcrumbs
10.75 ounce tomato soup (divided, 1 can)
2 Tablespoons Worcestershire sauce
2 Tablespoons brown sugar
1 Tablespoon olive oil
1 pound fresh green beans
non stick cooking spray

Steps:

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl, combine ground beef, eggs, onion, ketchup, salt and pepper, oats, bread crumbs, and half the can of soup.
  • Spray a baking sheet with nonstick cooking spray.
  • Form meatloaf mixture into 12 patties and place on baking sheet.
  • In a small mixing bowl, whisk together remaining soup, Worcestershire sauce and brown sugar.
  • Spoon some of the soup mixture on top of each meatloaf patty.
  • Toss green beans in olive oil until evenly coated and spread out on baking sheet between meatloaf.
  • Bake for 25-30 minutes, or until meatloaf is cooked through and green beans are soft.
