Number Of Ingredients 8

1 cup all-purpose flour
1/2 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper
6 tablespoons cold butter
1 cup finely shredded cheddar cheese
1/4 cup sesame seeds, toasted
6 to 7-1/2 teaspoons ice water, divided
1/2 teaspoon soy sauce

Steps:

  • In a small bowl, whisk flour, salt and cayenne; cut in butter until mixture resembles coarse crumbs. Stir in cheese and sesame seeds. Combine 3 teaspoons water and soy sauce; stir into dry ingredients with a fork. Stir in enough remaining water until dough forms a ball. Wrap in plastic; refrigerate 1 hour or until firm., Preheat oven to 400°. On a floured surface, roll dough into a 14x11-in. rectangle. Cut into 2x1-in. strips. Place on lightly greased baking sheets. Bake 12-15 minutes or until golden brown. Remove to wire racks to cool.

This is a variation of Sausage Stars/Sausage Cup recipes that use wanton wrappers and ranch dressing. My version uses Tostitos Scoops (bowl shaped corn chips) and cream cheese for some of the ranch dressing. I made these for Christmas Eve and Super Bowl Sunday, and they were a huge hit on both occasions! You can make the filling in advance and refrigerate until you are ready to assemble and bake. If I am taking these to a party, I fill the shells before I leave home and bake when I arrive at the party. They are also great with regular ranch dressing, but we prefer parmesan peppercorn flavor.

1 lb ground sausage, country style
1/2 cup peppercorn ranch dressing
4 ounces cream cheese
2 cups sharp cheddar cheese, shredded
1 (10 ounce) bag Tostitos Scoops

Steps:

  • Preheat Oven to 375.
  • Brown sausage and drain well on paper towels.
  • Return sausage to skillet and stir in cream cheese until melted.
  • Remove from heat and cool slightly.
  • Stir in ranch dressing and sharp cheddar cheese.
  • Fill scoops with sausage-cheese mixture. Arrange the filled scoops on a cookie sheet or baking pan. For less greasy cups, bake on a wire rack set on top of the cookie sheet.
  • Bake 8 to 12 minutes, or until cheese is melted and bubbly.

320g puff pastry sheet
mugful of grated cheese (we mixed 60g cheddar with 25g parmesan)
flour , for dusting
2 tbsp milk
toppings of your choice (optional) - we used poppy seeds, dried oregano and sesame seeds

Steps:

  • Unroll the pastry and sprinkle most of the cheese over one half of the sheet. Fold the pastry in half to cover the cheese and seal it in.
  • Dust your rolling pin and work surface with a little flour and put your pastry sheet on it. Roll it out until doubled in size.
  • Heat oven to 200C/180C fan/gas 6 and line two baking sheets with baking parchment.
  • Using cookie cutters, cut the pastry into shapes and put them on the prepared baking sheets. (Put the cutters on the dough close together so that less pastry is wasted. You can fold the trimmings back on themselves and re-roll to cut out more shapes.)
  • Brush the shapes with milk and add a pinch of cheese and a sprinkling of your chosen topping, if using.
  • Bake in the oven for 10-12 mins or until risen and golden, then transfer to a serving plate. Will keep in an airtight container for 3 days.

This is a very popular crunchy snack in my house - a batch will disappear within ten minutes! I often make a variety of shapes (stars, hearts, sticks - good for dipping). Feel free to add any spices you like to the mixture - it only gets better with experimentation! I've even sauted some chopped garlic and added it to the mixture with the spice - especially good with rosemary added.

Number Of Ingredients 9

150 g plain flour
50 g cold butter, cubed
85 g cheddar cheese, finely grated (or a mixture of several cheeses, Parmesan is a good addition)
1 beef stock cube, crumbled
1 egg, seperated
1/4 teaspoon cayenne pepper
1 teaspoon dried herbs (rosemary or oregano are good, in my experience)
1 pinch salt
and a pinch of any other spices or herbs, you want to add

Steps:

  • 1. Preheat the oven to 200C, or 180C fan assisted. Grease and flour two large baking trays.
  • 2. In a large mixing bowl, stir together the flour, salt, herbs and spices. Crumble in the stock cube and stir well until evenly distributed.
  • 3. Rub in the butter until the mixture resembles breadcrumbs.
  • 4. Stir in the cheese until well distributed (I find using two forks to pull apart the clumps of grated cheese is a good method).
  • 5. Mix in the egg yolk with your fingers, working the mixture to a dense dough. You may need to add a splash or two of water to achieve the correct consistency - the mixture should not be sticky, but should not leave crumbs in the bowl.
  • 6. Roll out the dough on a lightly floured surface to a thickness of around 5mm - this isn't too vital, but will affect cooking times.
  • 7. With a star-shaped cutter, stamp out as many shapes as you can from the dough and place, slightly spaced, on the baking sheets. Re-roll the dough and repeat until you have too little left to work with.
  • 8. Brush each star with a little egg white and bake in the preheated oven for around ten minutes until golden.
  • 9. Remove and cool on wire trays.
